Going to the gym tonight, and skipping the family carb-fest. BIL is coming up for Mother's Day, and they always have spaghetti and garlic bread (no salad or veggie in sight, just carbs and more carbs).

DH asked what I wanted to do, and I told him to go over with the kiddos and I would go to the gym and work out, grab something LC and then head to MIL's to socialize. Problem solved!

just checking in real quick girls. computer has been on the fritz. one minute i'm on the next i'm getting knocked off.

i ran for 25 straight minutes today outside. i am so proud of myself. i totally wanted to give up but i gave it my all. it was so hard, but I did it.

i been sticking to IF. it's been really working out for me. i'm not starving all time anymore. its been wonderful. thanks girls for showing me an easier way of life. you girls ROCK!!!!.

So I'm making the fried cheesecake bites. So far, so good!!! I'm tweaking as I go along, and they're lookin better and better!

ETA: O.....M....F.....G..... these are.... almost indescribable. Like, hmmm.... IDK, I think I've died and gone to LCD heaven!!! Deep fried doughnutty goodness on the outside and melty yummy cheesecakey inside!! As soon as I get done, I'll post everything I did in full

Cheesecake Bites?..... That's .... RIOT!

Haha, like my title? Like that's right, but instead that's RIOT?
What, you don't think it's funny? Well, screw ya, I know FF does!!!

So here it is:

Batter:
1 egg, beaten
1/4 cup melted butter
2 tablespoons Splenda (or equivalent liquid)
2 scoops of Vanilla Whey Powder

Heat about 1/2 inch of oil in a skillet. In a seperate bowl, melt the butter (about 30 seconds in the microwave). Add the egg and beat it in. Add the splenda and whey powder, and mix it in until the batter lumpy.

Filling:
5 ounces of cream cheese
3 tablespoons of Vanilla Davinci's (Or whatever flavor you want )

Soften the cream cheese (about 30 seconds in the microwave) and add in the Davinci's one tablespoon at a time, stirring in between. After it's all mixed it, put the container in the freezer to let the cream cheese firm back up. When it's firm again, spoon out a lump about the size of a tablespoon. Plunk it down into the bowl of batter, and cover it with batter. I used a spoon to, well, SPOON the batter over the cream cheese! Pick up the battered lump and place it in the skillet of oil. It will brown very quickly, in a matter of seconds. Flip it over and let the other side brown. Let me stop and say that if the batter slides off anywhere, spoon a little more over the exposed cream cheese, otherwise it'll ooze out. Once both sides are done, put it onto a plate and sprinkle a little granular Splenda and cinnamon on top. Then lather, rinse, REPEAT! Let me also say that I had to do these one at a time, I'm sure those of you who can actually cook can do several at once! Um, let's see... I also had to stop a couple times and put the cream cheese back in the freezer for a minute or two to get firm again. I got 8 HUGE cheesecake bites from this recipe. I'm gonna attach some pics and here is the best nutritional info I could get from Fitday.
OMG, the cals and fat are OFF THE HOOK!

entire recipe, with liquid splenda:
cals: 1205
fat: 99
carb:9
fiber: 1
Net carbs: 8
protein 63

This is easily at least 3 servings. I ate 2 and I'm stuffed. They are very rich.

Now, in a perfect world, I could be LindaSue or Cleo, and my cheesecakes bites would look perfect, and they'd be all prettyful and perfectly round and set up in an elaborate dish. But let's get real people... it's ME! I'm lucky to find a clean plate to throw them on!

I totally have to keep reminding myself that I didn't just cheat! LOL. I'm stuffed.... ugh. I had heroin wings and then 2 cheesecake thingies and OMG, I keep feeling like I cheated. Probably because when I do cheat, I stuff myself. Normally on LC, I don't do that, but I had to try out my creation!

I got mine at WalMart. I had to buy a HUGE jar, though. Like 5 pounds. That's why I've been trying to find ways to use it up!

Also, I go to bed every night setting my alarm for 5:00 a.m , and EVERY morning i roll over and throw that alarm across the room. i wake up the poor baby doing it and than i have to get up anyways to take care of him. baby doesn't do to well on the treadmill

well girlies, i just caught up. i've missed you and was only away for like two days. my computer hates me right now. it does not want to stay connected to the internet for mmore than two minutes. we have some one coming out next week to look at it

riot- i think i'm going to try a cheesecake recipe for next week. does anyone have a recipe that they tried and proved worth it. riot or should i call you RIGHT, THOSE CHEESECAKE BITES LOOKED DELISH!!!!!!

UGH! I had no plans whatsoever to be up this early. I wanted to sleep in until at least 9, but DD apparently had other plans, so she got me up at 7:45.

Zraik, that's actually very inspiring to know that your treadmill has been dying for 6 months! Mine's been acting up for a few, but I have absolutely NO $ to be buying new one anytime soon, so I keep praying it'll hold out at least through the summer.

I have made this cheesecake a few times before. A Cheesecake Factory Cheesecake It's REALLY good. It took me a couple times to get the hang of the crust, but the actual cheesecake was delish!

Well, I guess I should go get in the shower and get ready. I'll be back later this afternoon!

Good morning ladies, i'm off next to finish reading the fast 5 book, then cleaning, then maybe shopping. Gonna try and hold my window open later than 2:30 today but we shall see. I am avoiding a wedding that is in my home town today cuz i just don't wanna go, i know, bad attitude, but this is my first day home in a week being w/the kids and then of course tomorrow is out the door again. So i'm staying put. Besides the rest of my family is not going either, so i would have to drive a 1-1/2 hrs down by myself then home again. Let's see if i can come up w/anymore cons...lol

Thanx for the cheesecake recipe Riot, i'm gonna make that for tomorrow along w/cucumber salad. Just will ahve to bring a few oopsied for the burgers and i think i will be OP all day! Yay, just won't be doing IF cuz we are going to a brunch, so it will be 2 days on 1 off, 2 days on 1 off this week..
