Hi Lovely Ladies!

Well, I weighed at curves today and I am now 141 I was 139 yesterdayNot sure what is up with that. Didn't eat much sodium yesterday. Stilll trying to stay around 1400 low carb calories hoping that will bring about some change.

Diana you will make it to onederland I just know it you are so determined this time!!!!

I am so sorry you got ill Christina! I hope you are feeling better soon!!

Chris- I am sure it is just water (or poop ) weight. It will be gone in a day or two....

I ended up having "pizza in a bowl" for dinner last night. I made hubby pizza, and I put some sauce, pepperoni, 4 chuncks of pinneapple (he like pepperoni and pineapple so that's what we had laying around), and topped with a lot of moz cheese, and nuked it, and it was GREAT.

I think I am going to have BBQ tonight....I have some ham lunch meat, and I will chop it up, use LC BBQ sause (Smokin' Joe Jones, off of Amazon) and make egg salad (with hard boiled eggs, mayo, relish, kinda like potato salad, but with hard boiled whites for the potato). I will probably do some SF jello too, just to round out the BBQ feeling

Good afternoon!! I am just sooo glad it's the weekend!!

You guys have been busy without me!

i think i did GREAT today.. the company had a cookout for us today and they had a cornhole tournament going. With all the food and desserts, i didn't give in!! i had 1 hmbr w/o bun and put toppings on it plus a chunk of cheese and water.. i'm proud of myself for sticking with it!!

Chris - maybe the 1lb gain is in MUSCLE?!!! i'd be positive and think on that side!! you'll get it though i have faith in you because you are a go-getter!!

Christina - sorry to hear you weren't feeling well last night. not giving yourself an ulcer from all the worrying are ya???!! i sure hope not!! take care of yourself!!

Lady C - that recipe looks delisious! i love ckn and shrimp and they are great combos together! i may have to try that one!

Di - where are ya? don't see ya online and you only posted real early today? what's up w/that???!! the bark i made last night came out GREAT!! it's in freezer now and i think i may grab a piece! i'll try those cinnamon pork rinds later (i still hven't caught back on the craze of pork rinds)

I had a lazy then busy afternoon! I went to TJ Maxx after work and bought some of this sf syrup called Artisan. It's got Splenda in it and boy do they have some awesome flavors! I bought a tiramisu and a coffee to match! I had to right away go home and make some. It was delicious!! The other flavors they had were very similar to Davinci's but the are cheaper than D's. Here they cost 4.99 for a big bottle.
I also bought a pomegranate flavor too. Next time I would like to try there butter toffee.

But the coffee flavors are really awesome. Chocolate caramel, oh now I can't remember! But in there coffees, they have a lot of decafe too.

Anyway, so I go home make me some thing to eat and then I fell asleep on the sofa!! I didn't want to because I had things to do in the house. But I thought what the heck!
I just woke up and got my house cleaned before DH comes home.

Anyway's yes I missed alot!!

Hi Chrissy, I think that it's just water. Don't worry about that, I bet that gain will be off in a day! Just keep drinking water and watch your salt intake like you're doing. But still you're going great!!! I know you'll get to where you want to be too!!!

Oh you must try cooking some cauliflower and adding that to your egg salad. It is so good too! I did a recipe that LindaSue had for a faux potatoe salad and she added red onions, well let me post it and you can see it for yourself.

OMG I just worked out...and I feel soo fat! I used to be a dancer so I was doing the New York City Ballet workout, which is mostly stretches, and I am so big that I couldn't do many of them (as in, my fat got in the way!!). And I can't do a single push-up

I am so motivated to get this weight off of me!!! I want to get back in to ballet and on pointe again sooooo badly that I dream about it!

Here you go Tiff!!
I used red onion instead and it gave it a good flavor.

HELEN'S "POTATO" SALAD
16 ounce bag frozen cauliflower
4 hard boiled eggs, chopped
2 stalks celery, chopped
3 green onions
3 tablespoons yellow mustard
1/2 cup mayonnaise
2 tablespoons dill pickle relish, optional
1/8 teaspoon celery seed, optional
1/4 teaspoon pepper, or to taste
1/2 teaspoon salt, or to taste
Pinch dill, optional

Cook the cauliflower until soft, but not mushy; drain well. Cool, then cut in small pieces. Mix the mustard with the mayonnaise, then mix all ingredients into the cauliflower. Chill at least 2 hours.

Makes 6-8 servings
Do not freeze

Per 1/6 recipe: 215 Calories; 19g Fat; 7g Protein; 6g Carbohydrate; 2g Dietary Fiber; 4g Net Carbs
Per 1/8 recipe: 161 Calories; 14g Fat; 5g Protein; 5g Carbohydrate; 2g Dietary Fiber; 3g Net Carbs

Yeah, thats why I only had 4 chuncks of pineapple, I looked at the Atkins carb book and saw the carbs count (I think it is 10 carbs for 1/2 cup...don't quote me though). So I just got 4 chunks of it to get the sweet taste

And I can't eat cauliflower I am allergic, how retarted is that! When I eat it I get bad headaches, stomach ache, and diarrhea....weird.....so the doc said to avoid it b/c I probably have an intolerance or allergy to something about it (??)

Wow, the faux potato salad sounds great. I'm going to have to try it.

Yes, I finally got it to work. The problem was the other picture wasn't a jpg. No problem now.

Just waiting for DH to get home which should be another 1/2 hr.

Here's a dessert you might want to try out. It's a sugar free Italian Bounet or
Almond Cocoa pudding:

[COLOR="Purple"]Prep Time: 20 minutes
Cook Time: 40 minutes
Ingredients:

* 3 eggs
* 2 egg yolks (could probably just use 4 eggs, there would be a fairly minor texture change)
* 1 and 1/4 cup heavy cream
* Zest of one lemon
* 1 teaspoon vanilla
* 1 teaspoon almond extract
* 2 Tablespoons Da Vinci Sugar-Free Amaretto Syrup, or espresso, or coffee
* pinch salt
* Artificial sweetener equal to 1 to 1 1/4 cup sugar (depending how sweet you like things)
* 1 and 1/2 cup almond meal
* 1/4 cup unsweetened cocoa powder

Preparation:
Butter a Pyrex (glass) or metal loaf pan, or pudding mold. Preheat oven to 350 F and prepare a larger pan (such as a 11X13 casserole dish) for a "Bain Marie" - you will be putting hot water in the larger dish and the loaf pan in that. I like to put a washcloth or dish cloth in the water under the loaf pan as well.

1. Put lemon zest and flavorings in the cream, including the sweetener if it's in liquid form.
2. Beat/whisk eggs and egg yolks until light in color.

3. Combine all ingredients.
4. Pour into prepared loaf pan.
5. Put larger pan in over and add hot water and cloth. Put loaf pan inside.

Bake for about 30 minutes until knife in center comes out clean, or nearly so. Open oven door and let cool slowly.

When fully cool, you can unmold it if you like, or serve from the pan. We like it unmolded and glazed with a thin chocolate ganache, but you could just drizzle it over individual slices.

Nutritional Information:Each of 12 slices contains 2 grams effective carbohydrate plus 2 grams fiber, 5 grams protein, and 193 calories.

I know it sounds like a lot of work but it's worth it in the end. Enjoy!!!!

Tiff, I know how you feel but you can't say that about yourself, you will only get discouraged. Instead, keep trying to do them everyday and then be happy about the improvement you are making. You have lost 30lbs and its o nly been a month! You should be proud of yourself, not beating yourself up. You will get there!!

I went to the movies today to see Sex and the City with my girlfriends. On the way out, one of them said "you are looking so much thinner!". I cant help but feel cynical, especially after seeing that horrible poloroid the other day and because she is 110lbs BUT I smiled and said "not quite but I am getting there" It's really hard after being fat my whole life to even fathom being "thin" so it feels like a cruel joke but I know she meant it.

Anyway ladies...I am going to try the roasted cauli tonight with my chicken and stop talking about chocolate all of you!! LOL

Menu:

B - some chicken from my whole roast last night friend in butter with one slice of fried cheese
Movie Snacks - homemade cheese crisps (Linda's micro recipe), some beef jerky and a diet coke
D - roast chicken breasts and roasted cauliflower

Didnt weigh myself today, decided to wait until my 2 weeks are up to weigh again

I thought, the word "thin" is a little too exaagerating. But you know what, that much weight made such a difference in how I looked And for you to lose 30 in a month, I'm sure you look very different! So go with it and know that your body is changing and getting very noticable.

Hi Chrissy, yep, that's my little guy, his name is Sammee. He's a Papillon and he is so sweet! I just love him and spoiled, whoo boy is he!! LOL
I had my glass of red wine and it was good!!! On the Protein Power way of eating, the Eades allow wine and low carb beer on the program. Interesting. I'm drinking the wine because I know that it helps with high cholesterol and I have to bring mine down according to my blood work!
Good excuse! Hahaha!!

Hi Jen, I can't believe I didn't give you a for passing up all that gross food that was served!!! Good for you!!! That took a lot of will not eat it and alot of knowing how awful you'd feel if you did!

Hello everyone! That "potato" salad recipe sounds amazing!

As for myself, I went a bit astray off the diet yesterday as I am suffering from a newly broken heart. I am filled with much sadness, anger, and just general heartbreak. It is so hard to focus on eating and exercising when it is a huge effort to just process my emotions.

After splurging yesterday at a german restuarant with a friend who came out with me in support, I am back on track today. Mostly because I am too depressed to want to eat so anything I put in my mouth, I am forcing there out of necessity so it might as well be low-carb.

Don't mean to be a downer, guys. I just don't know how I will continue to stay motivated on eating right and working out while feeling so sad and mourning the loss of a relationship. I am going to try, but I feel like all the joy and enthusiasm has been sucked out of me 100%.

[COLOR="Blue"]Hi Qgirl! I'm sorry about your heart being broken! That's so hard to deal with. I can understand you not being able to stay focused on low carb with what you're going through. You're not being a downer at all! You've just had something happen that is sad.
I just want to let you know that you can vent here and if you feel like pouring your heart out, feel free! We're all here to help and support you in any way we can.
Just think about your way of eating before you decide to go off plan. Maybe you can direct your engery into continuing on with lc and making yourself feel good!
Alot of times we decide to eat things we shouldn't because we think it will make us feel better, but when we step on the scale, it gets more depressing because we gain weight.

I'm not trying to lecture you or anything, but I care and I know that our emotions can have an effect on us that sometimes makes us do things we'll regret. It took a lot of strength for you to get back on track!!

Aww thanks Diana and Chris..one thing though, it was Tiff who lost 30lbs, me..just 5lbs so far But yes, exactly what I thought..too exaggerated, I wonder if I will ever picture myself in the same world as "thin" LOL. Right now though I am still feeling strong and feeling a little lighter in my step. Took my Talula (my chihuahua) for a really long walk tonight with DH and it felt nice!

In the end, I went with some frozen steamed vegetable concoction which I had to pick through (bought it ages ago) and took out the asparagus and squash and gave DH the carrots and peppers. It was NOT appetizing at all. Eww. But I ate the mushy veg because I needed it. Couldn't find that recipe for roasted cauliflower that (I thought?) Diana posted??

nevermind, I found the roasted cauliflower recipe FINALLY! lol

Here it is if anyone is curious, I will try it tomorrow!

Roasted Cauliflower -

Cut the head into florettes, coat with olive oil. Put in a baking pan (sometimes I add chopped onion and garlic as well), toss in a bit of butter and roast for about an hour at 350. Turning occasionally

Hey everyone!

Qgirl- I am sorry about your broken heart, but maybe this comes at a good time, so you can take care of YOURSELF and not think about anyone else. I know that doesn't make you feel any better...

lotpodz- Great job on walking the dog! That is such a win-win situation. I love taking my dog for a walk because it gets some of his energy out, and I get a workout without going to the gym!

And I ended up doing something totally different for dinner than I had planned! I had 2 pounds of shrimp because I planned on making the Shrimp Scampi from the Atkins Recipe Book. I decided that I wanted shrimp tonight, but hubby doesn't like shrimp, unless it is fried. Soooooo, I made fried shrimp by coating it in egg, then parmesean cheese. It was GREAT! Hubby liked it too! So it all worked out in the end.

So here was my day:

3 (1 carb ea) hotdogs with LC ketchup, mayo, and dill relish
4 Cheese crackers (just nuke cheese for 45 seconds on parchment paper, yum!)
About 15 large shrimp, fried with egg and par. Cheese.
Lots of water

YUM! Did you fry in pan or deep fryer? Dont have a deep fryer and JUST bought a ton of shrimp, would love to have this tomorrow for dinner

Yesterday...

breakfast, muffin in a minute (see my last post for adjusted recipe), 4 sausage links 2 soft boiled eggs. coffee with measured cream and liquid splenda. 2nd cup of cold brewed decaf after with usual.

lunch: green salad with the 2 leftover chicken sausages from the night before and bottled SF dressing. cup of decaf with usual

dinner: pan fried pork steak and half a steamed artichoke with melted butter.

snacks ... (and here I was bad) couple of ounces of raw nuts; ounce of camembert; atkins coconut bar.

I don't' usually eat the nuts or the atkins but usually do eat a piece of cheese for snack most days.

Needless to say I'm beside my self this morning. This relatively rapid weight gain (12 pounds in under 2 months) is NOT supposed to be happening.

I tried eating lots of fat and lots of calories ... gained, cut back, still gained. Watched my carbs like a hawk. Made adjustments. Has ANYone else gone through this?

I thought that with atkins I didn't need to watch calories except to make sure I got enough.

2 days on a fat fast showed me I'm not metabolically resistant because I dropped 4 pounds. But it came right back with friends.

grrrrr. I am so frustrated I could scream.

I am so sorry you are struggling! It isn't fair to struggle when you are so committed. I would suggest that you cut out all & any splenda....it stalled me at week 3 last time and I gave up out of frustration. I would also try to cut out the cream,nuts and LC bars and try to lower your vegetable/carb intake. Try to increase your fat intake.....not quite like the fat fast....but more of a Original Atkins Induction.

You can do this!!

I have one of those deep fryers (with the basket that you dip down into the oil). But I have done chicken this same way, in a very large skillet (pretty muck a wok). I don't see why you couldn't use a pan

Hi Tiff, your shrimp sounds really good!! I know you can do alot with the parm! It goes good with everything. There was this recipe on the recipe thread called Heroine Wings, I don't think like the drug, but like the female hero. Everyone raved about that recipe!
Takes parm and some other things. I've been meaning to try that, but too many recipes and too little time!
