![]() I found this forum quite by accident and have enjoyed reading all the posts. I am in the INDUCTION phase of the Atkins and I have been reading and reading questions that others have asked that has helped me. I registered Sunday, but it has taken me this long to get on and I am so excited. I've started Atkins several times but didn't feel successful on it because it was so slow for me. The first 2 wks I would lose about 10 lbs but after that I hardly lost a lb a wk. I exercised at Curses, but I did not have much energy. In 3 mths, I'd only lost 18 lbs. I must say I felt better and I did lose inches and my clothes fit better.I am flabbergated at some LC people have lost and continue to lose per week-5,10+ and 30 lbs in one month-WOW!!! I want that, so I hope this forum will keep me motivated and I will get pass the first 3 months. LadyChurchill, I am enjoying the stories. Keep'm coming! ![]() I'm loving the recipes. Yum YUm I was writing recipes on pieces of paper all around my computer. I decided I needed a tablet. It is really nice to meet all of you great and wonderful ladies ![]()

Welcome to our neck of the woods! LOL!! I'm glad you feel comfortable join us here! Yes Mary, has some really funny stories she posts. Keeps us laughing!! I think what you've lost is remarkable! Don't sell yourself short! Inches are a good thing too. Sometimes you have to check what you're eating to make sure there's no hidden carbs or sugar. But I think you're doing great!! I know what you mean about seeing people lose fast, but everyone is different and we can't compare ourselves to them because that's what get us frustrated. Hang in there and lose at your own pace. A lb here and there is fantastic!! Hope to see you here more often!!!

Blessed Saturday everyone!
FYI...I am one of those folks that stall if I have any alcohol. I am insulin resistant, and the alcohol changes my metabolism...in a BAD way. You'll have to see for yourself. We are having a gloriously beautiful morning right now, but things are going to deteriorate later, so I may get outside now and do my errands. DD1 has his opening day baseball game this afternoon...I hope, after 12 straight days of sun, we can eek out dry weather until 6pm today! I am going to post a yummy recipe that I made last night for Coconut Chix Patties, BBL

This is [COLOR="Red"]Linda Sue's [/COLOR]Recipe for [COLOR="red"]Coconut Crusted Chicken Patties[/COLOR]
12.5 ounce can white meat chicken, drained 1/4 c mayonnaise 1 T fresh parsley, minced 2 green onions, finely chopped 1 t Old Bay seasoning 1/4 t ground coriander 1/8 t cayenne 1/8 t pepper 1/2 t Tabasco or other hot sauce 1 egg white 1/4 c finely shredded unsweetened coconut Oil for frying In a medium bowl, break up the chicken with a fork until it is finely shredded. Stir in all the remaining ingredients, except the coconut, until well blended. Divide into 4 equal portions on a wax paper lined baking sheet. Gently shape into patties with your hands. The mixture will be very soft. Put the coconut in a small shallow dish. Carefully set one chicken patty in the coconut and gently turn over to coat both sides; place back on wax paper. Repeat with all the patties. Chill at least 1 hour. Heat the oil in a skillet over medium heat. Fry the patties 4-5 minutes per side, flipping carefully, until golden brown on each side. Makes 4 servings. Per serving: 277 Calories; 23 g Fat; 16 g Protein; 2 g Carbohydrate; 1 g Dietary Fiber; 1 g Net Carbs. |

I think its time for an attitude adjustment. 18 lbs in 3 months averages to more than a pound a week. This is FABULOUS & SAFE weight loss. We all want it "now" which is why we gained in the first place (remember that food you just had to have????) The key to permanent loss is the lifestyle change, not the winner of the speed race! Good Afternoon EVeryone! Feeling under the weather, severe sore throat and headache. Called off work yesterday and slept most of the day away.
I'm on looking for easy recipe I can swallow today!! ugh!! I was a bit off last night, I had to have something cold and since food was a bit hard to swallow, I opted for some vanilla ice cream. It soothed me, filled me and comforted me. Today I'm back on track and hoping to avoid it!! I did attempt the Ooopsie recipe yesterday, I wanted some bread. They didn't come out like that at all. Not sure what went wrong, I followed right from Cleo's site w/the help of Sailor Moon! LOL They didn't look at all thick like on the link Determined posted from LInda's site. They are thin, not eggy at all but good work in a pinch for now. Maybe I need more practice?? i toasted one for breakfast and put cream cheese on it and had a couple slices of bacon on the side. I need a bit thicker next time. Suggestions anyone?? Lisa - great job!!! that is awesome turtle or not!! ![]() Livy - that recipe looks awesome! is it very coconutty?? A special thanks to your Lisa. I had figured out the weekly weight loss to of the 18lbs. You have my permission to keep me in check-to keep it real. ![]() Jen, I read so many post about the oopsies, so I made them last night. Just like yours, they were flat but they were so light and crunchy. I didn't taste the eggs at all. I used Cleo's pictures and little friends to help me as well. I think I beat the yoke mixture too much and they were toooooo runny. But I vow to learn how to perfect them. I didn't have a cookie sheet so I used a casserole dish. I am purchasing a cookie sheet today. They were very thin and crumbled when I tried to take them up. They are so filling that I felt guilty for eating them. They are Ok for induction are they? I love, love, love them ![]() |

I am doing some cooking for DH and we are spending alot of time outside since Gas is too high to go anywhere when we dont have to. Its beautiful today again..around 75 but a chance of storms this afternoon. Oh..even with the way I ate yesterday I was up a pound... ![]() ![]() ![]() I dont know what did that...but I am thinking..excuse me if there are any men in here...but all you Women that are still having TOM..does you weight go up about your Ovu time? Just curious..I also think I drunk more yesterday maybe the reason also. So..that gives me 1 1/2 pound loss for the week. I am going to start posting my weekly weight also instead of daily.Ok..my menu goes like this B- Chicken salad (didn't eat till 11am) L- 1 boiled egg (was not hungry so skipped that) S- Either LC Meatballs with LC Barbecue Sauce or LC Meatloaf and Fresh Green Beans cooked with Salted Ham Hock in my pressure cooker. I find if I add just a little xathan gum to the yolk mixture before adding to the white they bulk a little more. Hello everyone! Yes, it's me! Hubby is doing some stuff on his computer so I thought I'd take this opportunity to hop in and see what everyone was up to.
Diana - How can I enjoy time with hubby and be good at the same time ![]() We had to run out earlier and pick up some chlorine for the pool, clean the filter and check the ph levels. I love having a pool but I think I would love it even more if I was rich and could have someone else take care of it ![]() We get a lot of ducks, sandhill cranes and bunnies around here. Naturally, I have to feed them all. I love all the wildlife. We're in a community but our house is on the lake side so we have a great view. The lake also has a fountain which lights up at night. The only thing I don't like is this deed restricted stuff. Oh, well, I'll have to live with it. At least until I find out where we're going next. We're going to wash the vehicles later. HOLY MACKERAL!!! six pages to catch up on and everyone is doing amazing... Welcome to everyone..this is a great bunch of ladies!! I have missed all so much, like my right arm is missing. finaly have some down time and WOW what great posts... Been like 4 days since I could get on here..had small surgical proceducre done and have felt like crap....but have stayed on plan even had dietary at hospital pulling bread off tray haha. Anyway doing great have not cheated once,,down two more pounds and the best news is i was able to slip into a pair of medium pants... i started skipping around like a fool, knocked over the tv haha...
Who cares right.. it's a tv.??..... Medium size pants are much better hahah Just wanted to say thank you to you all for such encouraging words and for the advice and humor...it makes it easier to stay on course... I promise to be a better contributor!! Keep up the great work everyone...We are all doing great!

Ok ladies, here's a little tidbit about our diet. Keep a positive attitude and don't let it get to you if you're not losing right away or you're not losing as much as you want. Remember, we're all different and our bodies react to foods differently. We're all here for the same reason and this is the best support system you're ever going to have.
I'm sure you've all read these but here they are again.[COLOR="Blue"]Aim for a one-pound loss per week. It's easier to keep weight off if you take it off slowly. Don't skimp on your sleep. Fatigue leads to overeating, not to mention ugly circles around your eyes. Speed up your metabolism by having a light bite every three hours, instead of eating 3 large meals a day. Don't skip meals. People who do have higher fat levels and tend to have difficulty losing weight. Meal skipping also tends to slow down your metabolism, which means your body will hang on to the fat. Eat breakfast every day. You will feel more energized and will eat less during the day. At parties and dinners out, avoid eating while you're talking, to avoid eating too much without realizing it. Eat before you go shopping for food; you will have fewer temptations. Shop the outside supermarket aisles; they are the ones that usually carry the fresh and frozen produce, and meat! Try to buy fresh food. The more processed a food item is, the less nutritious it is. Reduce salt or eliminate it from cooking completely (use herbs for flavor). Add a small sprinkle of salt at the table if you need it. If you use soy sauce, pick a low sodium kind. Don't use too many sugar substitutes. Discover the natural taste and sweetness of food without additives. Collect recipes and try new ones every week. When you eat out, ask how the food you want is prepared, and if necessary request a low carb version If possible, find diet buddies (all you need is right here), especially in your family! Cut down on caffeine (from coffee, tea, and sodas); it tends to make you hungry and cause stalls. The same goes for cigarettes: they tend to make you feel peakish, and they also make your skin age prematurely. Don't go crazy over a diet. woohooAnother busy day here. We have to mow the lawn, trim palm trees and put some weed 'n feed around. The nice thing is when we finish all that we can jump in the pool . That will be my exercise for the day. I love to swim. When I was in high school I did swimming and track. I was quite the tomboy growing up. Even at 60 I can still throw a pretty good spiral football. Guess that's why I was glad I had boys....lol.I think I'll have fillet mignon tonight. Just wanted to stop in and say heY!! Church was wonderful today..I almost felt like the sermon was for me... about forgiving ourselves and letting the Big Guy do our judging for us..Walk with the dog and off to work... Going to be a nightmare week so I tried to get food prepared this morning so hopefully not cheats. I am determined to get on this site at least once a day... I have missed it and do not feel as strong without it...so the laundry and dishes can wait lol!
todays meal breakfast :: two egg and bacon muffins lunch :tuna, lettice on oppsies snack cream cheese muffin dinner smothered pork chops (my new favorite) small salad water, water, water Hope we all have a great on plan day!!! Almost forgot... Bought a Gazelle (tony little got to me hahah) and can not wait to get it set up..so am planning on doing that for an hour each day.. something is wrong with my memory lately I forgot to ask a question in my last post...I figured I would pick all these smart brains. Last week have been experiencing strange muscle aches in legs and it seems to be when I am in the deepest purple of ketosis..has this happened to any of you? Haven't done an ounce of exercise this week, unless you count running into work late haha.. I have increased vitamens and magnesium and added some with potassium.. Do you think it could be the ketosis?
