Good morning everyone. This nice weather sure makes me want to stay on plan so I can wear summer clothes soon!
I made oopsie rolls last night and they turned out pretty good. I think i can do an even better job next time. They taste good too...much better than other low carb breads I have tried. B: scrambled eggs with hot pepperoni mixed in, coffee (5 carbs) L: burger on an oopsie roll and brocolli S: stuffed chicken D: chicken wings and salad |

Morning everyone! I dont have long to chat today due to the fact I need to get stuff ready to go to my DH uncles funeral tommorow. Just wanted to say Hi and I hope everyone is having a great LC week. Here is my supposed menu..it might change..
B-Tuna Salad made with Tuna, Egg, and 1 TBS of Mayo L-Crab Salad made the same way S-Fish if I have time to fix it or LC Meat Loaf with Cauliflower Bake Still the Same weight and off TOM as of today. Mary, there are 3 of us making the crispy cheese crust pizza tonight, let's compare notes later!
I just found a YUMMY Vodka Spaghetti sauce that only has 2 net carbs per 1/2 cup serving!! It is pretty pricey, but I am going to use it tonight with our pizza and LC chix parmesan. It is called Victoria Brand. Victoria Since 1929 A family owned business Distributed by Victoria Packing Corp. Brooklyn, NY 11236 Will report on how the family likes it later. Peace |

Brandon is taking a nap and I had a couple of hours before I have to get ready to go to the Funeral home. Diana...What are Seafood patties? I am on a Fish kick..lol I ate Tuna Salad for Breakfast and Lunch and I am going to fix my fish in a little while to have for supper. I am so sick of everything and that tasted so good to me. I got in 30 min of walking outside today..so that counts..I am SO proud of you for doing your elliptical and weights..![]() now buy me a elliptical!! LOL I want one SO bad..I already got a treadmill and a bike but cant do my bike again just yet due to my back and the way it lays back hurts me. I don't own a business, I am a teacher/admin at a private Catholic school, and I choreograph and teach dance a few evenings a week and in the summer. The business I listed was the one on the back of the great new Vodka spaghetti sauce I found with only 2 net grams of carbs! I have two cats. Sadie is the Maine Coon and Bailey is an orange tabby. We adopted them when they were about 6-7 months old. And then I have my hubby...he's a whole different breed
. Actually, I can honestly say that I have no complaints about him. The Marine Corp trained him well....... |

WOW, great postings today. Lots of good advice ,and tips. I need all the help I can get. Wooooo Hooooo, another lb. gone. I do wish I could brake the habit of daily weighing.. that is my drug of choice . lol I could have worse , and more costly habits. Would someone please post the cheese pizza crust. Christina, your family are in our thoughts ,and prayers. Diana, yes we have The True Back...My DH uses it more than I do. It works wonderful . It is worth every penny ..well dollar. It is cheaper on ebay. The faux Mashed Potatoes : use steamed cauliflower instead of potatoes. I make it just like I would mashed taters , a little milk ,and butter, salt to taste. Hi to everybody, I am horrible w/names..so if I don't mention your name just know I think ,and care about each one of you. my menu: B- 2 homemade turkey sausage, 1/2 serving of Lavish Bread , w/ SF jam. coffee L- 1/3 serving dreamfields pasta, 1/2 chicken breast cut into bite size pieces , mushrooms, onions cooked till tender , 1/4 cup Alfredo sauce. all mixed together. diet pepsi MY WORD THIS WAS GOOD..lol D- serving of Tuscan Chicken. tea This is my High Carb Day. My version of Tuscan Chicken makes 2 servings 1 can of pinto beans 1 cooked chicken breast ( I use left over grilled chicken , OR store bought rotisserie chicken ) 1 small onion 1 cup of water 1 slice of Swiss Cheese ( this is what makes a creamy sauce ) warm beans ,1 cup water, and onion together until onion is tender. then add chicken cook till throughly warmed just before serving add swiss cheese. I am also going to add left over mushrooms. Is it dinner time yet..lol. I love this dish . Its easy just throw it together. The high carb / low carb is : The Fat Burning Diet by Jay Robb it just made sense to me . it keeps your metabolism up. your body doesn't adjust to no carbs. its a way to trick your body into working harder.. this just made perfect sense to me. this has worked better for me than any diet I've every tried. Even WW , I can look at the NI on any product , and immediately tell you the points.. I got so sick of counting points that I just quit . I didn't gain all my weight back though Thank God. I am trying to lose that last 20 lbs..Trust me I will Well now that I've written you all a book..lol . I guess 2nd chapter will come later. Have A Happy LC Day, Rachel

Chris , I see where you like the turkey pepperoni. I love them microwaved for one minute. they get crispy like chips.

The muffin recipe! TUNA OR SALMON MUFFINS 2 6-ounce cans tuna or salmon, drained well 2 eggs 1/4 cup celery, chopped fine, 1 ounce 2 tablespoons onion, chopped fine, 1/2 ounce 1/4 cup green pepper, minced, 1 ounce 2 ounces cheddar cheese, shredded Salt and pepper, to taste Pinch Old Bay seasoning Mix all of the ingredients and spoon into 6 well-greased muffin cups. Bake at 350º for 30 minutes until puffed, set and lightly browned around the edges. Makes 6 servings Can be frozen Per Serving: 109 Calories; 8g Fat; 12g Protein; 1g Carbohydrate; trace Dietary Fiber; 1g Net Carbs I serve these with Tartar Sauce or Chipotle Mayo. They are also really good topped with sautéed peppers, onions and mushrooms, then a bit of the Chipotle Mayo. Click the photo to see a close-up. Here you go Rachel! I just found 2 more recipes for pizza crust!
Thin and Crispy Pizza Crust Heat oven to 450 degrees In a bowl thoroughly combine 3 eggs 3 cups shredded mozzarella cheese 1 tsp garlic powder 1 tsp basil press evenly into Pam sprayed pizza pan or cookie sheet (this makes one 16 inch pizza crust) Bake at 450 degrees until golden brown (about 10 to 15 minutes) Here is what your crust looks like after baking. It will completely lift off your cookie sheet. I patted the grease off of it, but that step is optional add toppings of your choice This one has the following toppings~ 1/4 cup low carb marinara 1 cup Mozzarella cheese 2 links Italian sausage (browned and crumbled) 1/4 cup sliced back olives After adding toppings, run the pizza under the broiler until cheese is melted and toppings are bubbly add toppings of your choice This one has the following toppings~ 1/4 cup low carb marinara 1 cup Mozzarella cheese 2 links Italian sausage (browned and crumbled) 1/4 cup sliced back olives After adding toppings, run the pizza under the broiler until cheese is melted and toppings are bubbly add toppings of your choice. I remember you posting a recipe for choc chip meringue cookies and were wondering about the carb count...did you ever get one?? I was looking at that recipe the other day and I changed it a bit for a lower count..because I only have Dixie Diner choc chunkies, I calculated only for 1/ 2 cup, and eliminated the granular splenda as its too high in carbs.. So, 3 egg whites was 1 the above choc chunkies is 4 the walnuts..8..maybe another nut is even lower?? 13 for 10-12 cookies..is not bad at all! If you were using the granular splenda, its about 24 carbs per cup (I think) so you would need to add that in as well and that ups the cookies. I dont use the granular at all so Im going by what I can remember being posted. Let me know if you got something different as Im wanting to make these too. ![]() |
