A little bit not much,( I `m sorry to say) I walk on a treadmill. I usually do that 3 times a week but not for any great amount of time, at the most 1/2-1 mile at a time...Mel

Steam squash until barely tender, mix mayo, egg, 1/2 cheese, 2 Tbl melted butter and onion. Add squash and gently mix. Microwave 5-6 minutes. Stir and then sprinkle remaining cheese over top and microwave for another 3-5 minutes until hot and let stand five minutes. Yummy!!!!

Is June 23rd the wedding? Seems to be about 127 days from now. Don't want to get out the calendar and check. You must post a wedding picture. I just love weddings! That and the day my son was born were the happiest days of my life!


Diana...two things one is I just use regular eggs for the egg creams (egglands is the brand) it does not taste eggy at all....really!
And two I wanted to make aure to tell you to add the vinegar to the hot bacon grease very SLOWLY cause it will spit like crazy. I would feel so bad if you got hurt with my recipe.

Question on vegetables

okay today is my first day on this, for breakfast i had 2 eggs scrambled with chees and mushrooms, and for a snack i had cucumbers and mayo with vinegar, should i eat the veg's with my lunch or can i also have it as my snack? also are you oppose to count the carbs or the net carbs?

You can eat the vegetables as a snack if you want as long as you don't go over the 15-20 carbs per day. I only count net carbs for veggies.

Hi everyone!
Sorry I have not been here..Welcome to all new members..

Well..I could not hardly walk this am so my DH called my orto specialists. I found out I have bad arthritis in my lower back and Hips the way my mom did. He gave me a corozone shot and told me to come back in a week and NO walking uphill on my treadmill for at least a 2 weeks and to please cut my time down to no more than 30 to 45 min a day 3 days a week. He really dont even want me to do any more than walking than needed for at least a week. He says that since my mother had it it will more than likely get worse than better. I already have it in one ankle also..me 39 and getting older by the minute!! My sister died of ALS 2 years ago and my dad died from it when I was 15 months old. So..I was worried about that. I had not been to see him in over 2 years and he said my weight was great with my BMI and told me that not to lose too much more or it may make matter worse. So..that is where I have been today. I will just have to take it easy for the next week. Also told me to stay on Atkins because it was the best for my health right now with all the protein so I am very happy about that!

Weight 139.9
B-2 eggs with 2 pieces of Sausage
L-1 hamburger with bacon on Rev Roll
S- Steak, loaded Broccoli, and Salad

I need to go cook now but will try to be on later..You all have a great afternoon. Oh Diana..you recipe looks so good and I hope you cookies came out good and make sure you post the recipe on here too G/F

Hiya Meekness And hello to all the other beautiful ladies!!! Just reading through all the posts quick.. Such great info!!! Off to another double at work seems everyone is getting the flu I feel so great I hope that nastyness stays away... Still no movement on the dreaded scale Been staying on plan (no peanut butter lol) and tom arrived, so steady as she goes!!! It sounds as if everyone is doing so well I am nearing the end of second week of induction and am feeling so great that I think I am going to stay on for a while...Anyone have any comments on this??? How long have you stayed on induction??? I am thinking of staying on it until I get bored with the food choices, however I don't know how that will happen with all the wonderful ideas!

Off to work just wanted to check in and tell all to have a great, healthy day! We are all doing great

Weesie just saw you post Your menu sounds delish!!! I don't do net carbs but I think the book says to count veggies??? Have to go back and check. I find that the net carbs gives me too much leeway and I reason with myself over them haha before I know it I am negotiating net carbs.. The first few days are the toughest...hang in there...the benefits are worth it!!!

Mel you have been doing great wow!!! It seems to go like that keep up the good work and it will come...How can it not??!!

So sorry to hear about your arthritis. My Mom and Grandma both had it too...so i know how painful it is. You are way too young to be suffering with it.

I am glad this Dr. is smarter than your other one who was pushing you off LC and trying to make you lose those ten pounds!

Hang in there things will work out...Hope you get some relief from the cortisone

Oh Christina, I am so sorry to hear about how you are feeling! I will continue to pray that God watches over you and yours and that He guides your ortho Doc in the right direction...it certainly sounds like that Doc is on your side with your fantastic health choices up to now, and in the future! Listen to the Doc...maybe you are at your ideal weight and you shouldn't struggle past a silly scale number!

Hi Backatit! You can stay on induction until you reach your goal weight from what I understand. I don't think it's a problem unless you start feeling weird then add more carbs. But you're so so well, great attitude!!!

Thanks Diana and everyone else!! I really need the prayers and encouragement now.

Yes...Backatit...that is what I did till I lost over 100 lbs on it..of course every once in a while I would have a cheat day. I am going to stay on induction and eat the induction sweets as my treats. If my 10 lbs come off it does..if it dont..I am not worried about it now!

Taking about sweets..recipe Diana!! As soon as your ready! LOL

Those meringues look yummy. Are you going to share? How do you make them? I also want to learn how to make the egg creams. They sound very tasty.

I'm really new to this forum but am enjoying it tremendously because I'm not alone. It's so nice to come in here and just get that support I need to keep on track.

Ok, before I log off, here's one more recipe. I'll be back tomorrow or sooner...lol.

Fried Ice Cream (about 3 gr carb per serving - 8 servings)

5 egg yolks
3 tsp. vanilla
8 tsp. splenda
1/4 cup water
2 cups heavy cream
2 tbsp butter
2 tsp splenda brown sugar
1 tsp ground cinnamon

Place yolks, vanilla and splenda in small bowl and mix with a mixer until well blended (about 30 seconds). Pour slowly into whipped cream, mixing with mixer after each addition. Mix well. Pour into freezer tray or any container that is freezer safe and place in freezer. Let freeze overnight.
Melt butter in small saucepan. Add in brown sugar and cinnamon. Place serving of ice cream in a bowl and drizzle some cinnamon mixture on it. Enjoy!

Chocolate chip meringue cookies

3 large egg whites
1/4 tsp cream of tarter
3/4 granular Splenda
1 cup sf chocolate chips
Optional 1 cup chopped walnuts

Bake at 200 degrees for 1 1/2 hrs or 1 3/4 hrs. Put baking rack in the middle part of the oven.

Beat egg whites on low to medium speed until foamy. Add the cream of tartar and continu to beat until the meringue holds very stiff peaks.
Add the Splenda a little at a time and continue to beat until the meringue holds very stiff peaks. Carefully fold in the sf chocolate chips and walnuts.

(you can test it by putting some meringue between your thumb and index finger togther, stiff peaks will form)

You can use either a piping bag or a medium size ice cream scooper. (That's what I used) and place them on a cookie sheet lined with parchment paper.
You can also put them close to each other, they don't spread.

Bake per the above time and temp. The meringues are done when they are pale in clor and fairly crisp. Turn off oven and open the door a crack and let them dry in the oven, either over night of if you're impatient like I am, pop one in your mouth!!

Makes about 10 to 12 cookies

I doubled my recipe and about 2 dozen

Only thing is, I can't figure out the carb count. I have Mastercook ver 9, but don't know how to use it.
