thank you, I take my cooking seriously! I have never spent as much time in the kitchen as I have since starting low carb last month - brekkie, lunch and dinner from scratch.
You know last night, when I totally buggered it all up completely and had some carbalicious crumbed cod & homemade chips (good old British comfort food, I've grown up in Scotland) it was the first time I didn't take a photo of my dinner cos it looked so......uncolourful and unappealing.

Lesson learned, back to day 1 of induction

Tonight's dinner was homemade Thai fishcakes made with cod/crabmeat and a trio of dips - tartar sauce, chilli/lime/coconut mayo and mint mayo

LC_Monkee - the strawberry/blueberry cake was made with an almond flour base, not an oopsie roll (which I don't like either) I'm not a huge fan of almond flour but the next day, the base was delicious, it tasted just like a biscuit (or is it cookie you guys say?!) in fact, I'm going to make a batch of 'ginger spice' ones soon. As long as you cook the base long enough in the oven, cool it long enough and refridgerate it long enough its really lovely. The photo with the oopsie burger was my first attempt and it looks better than it tasted - I really wanted to like them because of their versatility but they just tasted like fluffy cheesy scrambled eggs with a light crust

Awlass, have you considered parmesan cheese as breadcrumbs?

NoSunNoFun -

2 8oz. pks. philadelphia cream cheese
1/2 cup sweetener (I use spenda)
2 eggs
1/2 tsp. vanilla
Lemon juice to taste
Cinnamon to sprinkle on top

Soften cream cheese about 40 seconds in microwave. Add other ingredients. Beat with mixer till smooth. Pour into 12 mini muffin pans lined with the papers. Bake at 350 for 20 min then let them cool in there. Refridgerate overnight for best results. Not to be eaten before they've set!

Well I made Cauliflower mashed potatoes tonight....They were ok....I might have to do some other recipes...I mashed them by hand this time next time I'm gonna have to try the food processor. I just thought that would have come better.

I think making them completely smooth (like whipped potatoes) in the food processor makes all the difference in the world.

That stuffed pepper looks yummy

When I was originally trying to make that berry cake, I messed up and added extra water so I just poured the mixture into cupcakes and baked for 20mins then topped with cream cheese mixed with dessicated coconut & splenda, topped with a strawberry. They rose very well and were delicious the next day

I have some cheesecake recipes, but I'm not positive that sugar alcohols are ok for induction. In fact, since I tend to count all carbs, I'd have a hard time saying, "You should have this on induction." Consensus? Do you subtract sugar alcohols in the form of erythritol and xylitol?
