Not sure. Normally you could probably replace the pumpkin with butternut squash or sweet taters but neither of those are allowed on Atkins until a LOT later. You don't even have pumpkins in cans?????

It is the canned pumpkin like you use to make pumpkin pie. But, don't get pumpkin pie mix because that has the sugar added to it.

we don't have pumpkin in cans either LOL I live in the Philippines and pumpkin isn't big around here (no Thanksgiving or fall season)

I really need a new digital camera LOL

I only really eat breakfast on the weekends. During the week it's coffee for breakfast.

This morning I had an LC staple. Two fried eggs with bacon. I also had a mini cheesecake muffin *the last one LOL*

Nope. You could, but I don't. Takes some getting used to, having a pile of pinkish hash browns on your plate, but that's quickly overcome by the nummy-ness of them.

Smelling good in here. My pork shoulder is a bit over 4#s. I'll be eating in about an hour. Hurry...hurry....
I have the sauce all made up. I used a small can of T-sauce and then added this and that.
I should make some oopsies...but, too lazy.:blush:

So, that marinade that is cooking up in my Crock...am I supposed to drain it out and then mix in that BBQ sauce?
I usually likey all the marinade/drippings from cooking a roast.
I guess I'll container it?

Nevermind...I just tasted the marinade and it's Way Salty and Yucko w/all that Liquid Smoke!
Will be draining it and then add that BBQ sauce to it.

For dinner tonight I wasn't really hungry. Eating some more of that "Just Like Stuffed Baked Potatoes" I made earlier in the week. Made it again and tweaked down the cream cheese a bit and added more veggies.

They're really good. I never liked radishes and I actually liked them cooked. They are not spicy at all and it ends up having a very mild flavor. I just put butter in a pan and throw in a few shredded radishes with salt/pepper. I eat it w/eggs, sausage and some sf ketchup. Yum.

I haven't had any in a long time! I think i'll have some for breakfast tomorrow.

Does anyone have any photos of the "after" cooked raddishes?
Do they crisp up like a hashbrown?

Sounds soo good! Our local farmers market always has these, I might like to try them.

dollkey - what is that a pic of it looks really good, can you post the recipe...???
Also I am new to the LC WOE so I have only tried to faux mashed potatoes once, but when I see pics of them up here they look whipped and really good.
I put my in the mircowave with a little water and then drained the water and added the heavy cream, salt and pepper and used my mixer...but they still had little pieces in them, is this normal or does someone have a good recipe for them.
Also has anyone made salmon patties - i use to make them with crackers in them but now I want them and don't know what to use to hold them together

Use your food processor with a blade or your blender.

Thank you all! I stalked the page all weekend. Even linked a couple of friends to you guys on Facebook.
I just tried the boiling radishes & could not believe it! It worked! I am having roasted radish tonight! Can not wait to see how they go w/ my roast. Next try will be the cream cheese clouds for dessert.
I am in love w/ this site & The lighter side of low carb. Cleo Rocks!
Thanks for keeping me on track & not making me eat the same thing over & over again.
I also tried the Flax meal bread on here! It was like having an english muffin & I am so full!

It's Linda Sue's Korean Chicken EXCEPT I didn't have any sesame oil. I marinated the chicken for half an hour. I heated up oil in a skillet and flash fried the chicken nuggets and when everything was fried, I put them back in the skillet and poured the remaining marinade in and cooked it for another minute or two in high heat. It turned out really well!

ETA
I used 2 pounds of skinless chicken breasts for the same amount of marinade. Lots of leftovers!
