I know I posted this just a couple minutes ago, but I wanted to add again. Putting the ice cubes over the eggs after cooks seems to seal the shell where it comes off very easier from the egg. Bring to boil, bring down to medium heat, cook for 20 minutes, drain water, put ice cubes to cover, then let sit from anywhere from 15 minutes to 30 minutes, then start peeling. This has worked for me many, many times and when I buy eggs from the grocery store, I have no idea how old the eggs are. I'm thinking about 98% of the time, they peel so good. I hope you guys will benefit from the ice idea.

Yep, did all that ... and still had to fight the eggs to get the shells off em!!

All i did was use the basic recipe and add a couple Tbsp. of Key lime juice. I just added it til the flavor was intense enough for me. Key Lime pie is one of my all time favorites and these satisfied my craving wonderfully.

I don't see why they wouldn't work with lemon as well, I am not sure how much juice to add cause I always just add to taste. Probably just an excuse to stick my finger in the bowl

I get tired of using celery sticks as my spoon LOL.

Putting it on top of tomato would be a nice change.

That cheesy broccoli looks delicious. For some reason mine never looks like that or gets as melted. What type of cheese did you use?
I just use shredded cheddar from the bag. I always roast my broccoli in the oven ( i think its best that way), so i put the cheese on right at the end and let it melt well in the oven.

for boiled eggs, add vinegar to the boiling water. works EVERY time for me. I've never measured how much I pour though, maybe less than a 1/4 cup. It doesn't smell all that lovely, but it works! I boil the eggs with the vinegar, then at the end of 20 minutes or so, i just turn the stove off, move the pan, and let them set till i'm ready for them.

Just baked up another pumpkin bake. I wanted something sweet this morning. But, after eating a Chicken Toastada w/o Tortilla for Brunch, I'm too full to eat a piece and coffee is all gone.

Sausage Spinach Balls

1 package of ground sausage [1 lb]
1 cup
Spinach [5 c] [I used a small box of the frozen spinach]
3 Tbsp onions, chopped [5.7 c]]
1/2 cup shredded sharp cheddar cheese [I used a taco blend]
1/2 cup [4oz] cream cheese [4 c]
20 pepperoni rounds chopped [optional]

Mix and make 1" balls

Place on lightly oiled tin foil in baking pan (for ease of clean up)

Preheat oven to 350

Bake for 20-22 minutes or until sausage is thoroughly cooked.

NOTE: Mine were kind of bigger than 1 inch so I just cooked them for 30 minutes. There were EXCELLENT. I also tried dipping them in a bit of LC pizza sauce … also excellent.

Carb count came to 18 and I got 18 balls so 1 carb per ball! SWEET!!!

I just add about 1 to 2 tablespoons of cocoa to the recipe.

Gonna make those instead of Scotch eggs that I was thinking of baking up. I used my cream cheese this am baking my pumpkin bake. Need buy more CC.

Today's Lunch and Dinner!

Lunch was a Nathan's beef frank with sauerkraut, cheddar sauce and leftover Big Mac sauce:

Dinner is slow-roasted pulled pork from the Crockpot, where I put in about half of a bottle of Liquid Smoke and approximately a cup of a brisket marinade that I picked up from the store, worth 2g of carbs per tbsp:

Sure he does...he knows lettuce is green and I guess he thinks it's lettuce of some form.

He is the same kid who HATES cabbage and coleslaw and sauerkraut but loves HOTSALAD

Hotsalad
1 bag Cole Slaw shredded cabbage and carrots
1 lb polish kelbalsa sliced
1 bottle zesty italian salad dressing
maybe some diced redbell pepper for color

throw all into skillet and cook until cooked through

Strain some of liquid out of skillet - dump Hotsalad into large bowl hand to 13 yr old with fork and napkin and Cajun seasoning and get out of way...

He doesn't have the food around long enough to ask what it is most of the time so I get away with a lot!

I haven't told him our 'mashed loaded potatoes' are actually cauliflower yet either...

Dang this kid is gonna need therapy when he discovers his momma is a liar liar pants on fire...

Umm when he was 4 I read the preschool class a story about kids that visited a Turkey farm right before Thanksgiving...He refused to eat Turkey for years so we gave him "Special ordered White Ham" that Grammy kept hidden in the kitchen just for him...he never noticed it looked like the Turkey we were having...

sigh...I'm going to hell...
