Genius! Never thought to use chicken breast w/pizza toppings. I am going to have to go pick up some chicken breast.

All the food posted today looks delicious!
I love cheesy food. It's a shame that it doesn't love me.

I think I can live off of cheese.

HOW did I miss the chicken pizza??? If you guys only KNEW how much chicken youngest DS goes through a week! (about 18 lbs by HIMSELF!) I'm always looking for chicken recipes! Thanks Cryssi!!

Makes 8 servings. Whole dish: 31 carbs; 1/8, 4 c*

* does not include optional toppings, save for a pinch of shredded cheese on top (1/8 cup)


[This is MY tweak. I also added black olives into the casserole rather than topping with them. I used a dollop of sour cream on the finished serving. I think next time I'll put most of the cheese IN the casserole rather than on top.]

Dinner tonight, which was DELISH:

Chicken Florentine with Cabbage Jicama Slaw



I topped it off with feta cheese.

The slaw is just half a small red cabbage, half a small green cabbage, shredded. Chopped up jicama, about 1/2 cup. Dressing is 1 cup mayo, 1 tbls white vinegar, salt, pepper, celery seed, 1/4-1/2 cup splenda.

I wish I could find Jicama down here. :-(
I used to make Jicama home fries. I miss them!
(ignore the fruit in this picture, not induction friendly)
Eggs, sausage, jicama and flaxbun are though!

I LOVE chicken dishes and both of those look like they'll be in my future meals soon!!!

Went to Kroger on Sunday and they had the biggest jicamas I've ever seen!! The size of giant softballs at least. Was so excited I bought two of them! I'll take a pix and post it here tomorrow.

Are jicama fries just jicama cut in strips and deep fried or oven baked or what? I bet they'd make great chips too!

Are those jicama hash browns, er, 'home fries' in the pix with the delightful eggs and sausage??? Those eggs look perfect! Jicama is just better than potatoes anyhow!! Jicama home fries tomorrow!!!

Dang, is that my stomach growling????

I have to tell ya, hubby tried the Mexican Spaghetti Squash Casserole tonight, even tho he's certainly NOT low carbing, and he just LOVED IT!!!! Too funny. Might make him a convert yet!!

Yes we've had them forever and had a friend give us her entire set about 10 years ago so we've got tons of those lovely durable can't-find-this-pattern-anymore dishes, cups, saucers, bowls!!!

They are crispy and crunchy and slightly sweet. They don't taste like potatoes tho. But they were very tasty just the same. Jicamas seem to taste the same and crunch the same cooked or raw which can be a good thing or a bad thing! HAHA.

I think next time I'll shred them and add some seasonings and an egg and make 'hash brown' patties and see if that makes a difference.

Linda Sues meals are pretty simple to make. I just defrost whatever meat I need during the day then Mike is on sole duty for an hour or so while I make dinner.
