Man that was GOOD! My son is going to eat it all though and I'm still going to have to make breakfast!!
That was great. I never thought about chili peppers in the eggs! I used vidalia, didn't have green onion.

Oh man!! I ate a long time ago and am still full, but that makes me want to go grab another peice LOL! It looks awesome! My son did the same thing, he ate more than I did. The salsa looks really good on top as well, i'll definitely have to try that next time!

Mmmmm so do the pancakes and the fried shrimp.
Looking up the recipes for sure. Never thought to use pork rinds on shrimp. I use it for everything else. LOL.
Will have to try it.

This is originally Jody's Pumpkin Bake from here I think, but I tweaked it, doubled it and put it in five half pint mason jars and baked it. VERY good, like pumpkin pie with a cake texture, hence the name!

Jody's Pumpkin Bake

1 15 oz. can pumpkin [1/4 cup (2 oz), 2.4 c; 152=7.5 c per can]
1 8oz block cream cheese [1 oz=0.8 c=8x0.8=6.4 c]
5 eggs
1/2 c. Splenda
1 1/2 t. p.pie spice
1 t. cinnamon

I soften the cream cheese then mix well.

Add pumpkin, mix well.

Add eggs, splenda and spices, mix well.

Spray a pie dish and dust with splenda (if you like-not necessary) Pour in batter and bake @ 350 for 30 minutes.

I got 5 1-cup individual servings, it comes to 2.8 carbs each.

I think this is the recipe I initially re-posted and I think it's supposed to be 40 minutes. :-)

Barb, that looks like something my husband would love. Will have to surprise him with something like that soon.

LC Monkey, I could pick all of that avocado out of your salad through my screen. Looks SO good.

I have not. I'm not sure if the texture/consistency would lend itself well?

I did too! The health food store called and said my erythritol was in so I picked it up and came home and baked the pumpkin bake. Yumm! My guys are eating it too, even though there is no "sugar" in it!

It is VERY good, and since I'm the only one eating it, having it in 1/2 pint mason jars with lids helps a lot. I froze three and kept two in the fridge. Next time I'm whipping up some cream to top it!!!

On another topic, I let hubby try one of my cheese crisps and he's hooked now!!! Too funny!!! I LOVE them. I'm going to experiment with them, adding different spices, herbs and such.

Still waiting on some awesome veggies dishes!!!

Meanwhile, off to Linda's!

Someone asked about keeping quiches. I like to cut them into individual serving sizes, package well and freeze them. When I want one, grab it and pop it in the micro for a few seconds, or let it thaw and eat it cold.

First you have to transfer or 'upload' your pix from your computer to a website like photobucket.com or imageshack.us then when it's successfully upload, you'll see a variety of 'codes' for your pix on their site.

Pick the code that begins with [img] and copy it and then paste that code here in the post.

It should appear!

Nice thing about freezing them is they have a longer shelf life. I can't eat the same thing for several days in a row - or two even!

wanted to post a little variation to this one if anyone wants to try it.. i get the queso fresco at walmart. there are 2 brands there and i love them both so to me it doesnt matter which one. i cut into strips (like french fries, just not too thin) and last time i had a skillet half an inch full of oil on the stove from something else i had fried... dropped them in there making sure they werent touching.. wait for them to start turning a little off white and move them around a little making sure they didnt get too dark on any one side! they were so yummy. just like cheese sticks from sonic i like to dip in ranch instead of marinara. YUMMY! i do not eat this kinda thing everyday because i dont really like to fry alot of my foods, but WOW it is a great treat!to barbDe for this idea again

I am in LOVE with this cheese! I found at our local smart n final store Queso spicey made with hot red pepers. Oh my goodness!! I fry it up till just filling my tiny little round frying pan. Flip it once dark until dark on other side. Slide it on a place on the side add 1 big mounding tablespoon of LC catsup and its the best GRILLED CHEESE SANDWICH I have honestly ever had! Tastes like its made with buttered bread. This stuff is amazing!! I could eat it three times a day but that would cause problems

Pix of Pumpkin Bake. I didn't have any cream to whip up...so, it's just a plain ole pumpkin slice sitting all by its lonesome.

Made up some more shrimp scampi w/Shirataki Noodles.
