Oh man!! I ate a long time ago and am still full, but that makes me want to go grab another peice LOL! It looks awesome! My son did the same thing, he ate more than I did. The salsa looks really good on top as well, i'll definitely have to try that next time!

Mmmmm so do the pancakes and the fried shrimp. Looking up the recipes for sure. Never thought to use pork rinds on shrimp. I use it for everything else. LOL. Will have to try it. |

This is originally Jody's Pumpkin Bake from here I think, but I tweaked it, doubled it and put it in five half pint mason jars and baked it. VERY good, like pumpkin pie with a cake texture, hence the name!
Jody's Pumpkin Bake 1 15 oz. can pumpkin [1/4 cup (2 oz), 2.4 c; 152=7.5 c per can] 1 8oz block cream cheese [1 oz=0.8 c=8x0.8=6.4 c] 5 eggs 1/2 c. Splenda 1 1/2 t. p.pie spice 1 t. cinnamon I soften the cream cheese then mix well. Add pumpkin, mix well. Add eggs, splenda and spices, mix well. Spray a pie dish and dust with splenda (if you like-not necessary) Pour in batter and bake @ 350 for 30 minutes. I got 5 1-cup individual servings, it comes to 2.8 carbs each.

It is VERY good, and since I'm the only one eating it, having it in 1/2 pint mason jars with lids helps a lot. I froze three and kept two in the fridge. Next time I'm whipping up some cream to top it!!!
On another topic, I let hubby try one of my cheese crisps and he's hooked now!!! Too funny!!! I LOVE them. I'm going to experiment with them, adding different spices, herbs and such. Still waiting on some awesome veggies dishes!!! Meanwhile, off to Linda's! Marci |

Someone asked about keeping quiches. I like to cut them into individual serving sizes, package well and freeze them. When I want one, grab it and pop it in the micro for a few seconds, or let it thaw and eat it cold.
