This was my dinner tonight...my original plans changed slightly...bacon wrapped chicken thighs with a squash bake.

Sorry about the color skew. There is summer squash in with the zucchini, and garlic in with the onions.

The bacon wrapped chicken thighs were super easy, though. Just wrap with one or two pieces and throw into a 375 degree oven for about 45 minutes. To crisp up the bacon, use the broiler for a few minutes.

I probably had too much veg for dinner...but it was awesome.

When you guys fry that Queso Fresco...do you fry it in oil or do you just plop in a telfa pan and let it fry?

I just plop it in a teflon pan and fry it like that. That's the way I first saw it done - by the demo ladies at Costco.

If your teflon is starting to wear off your pan (happens to all of them eventually), you might find that you need a little something in there to keep it from sticking - but I don't know for sure about that. It's possible it might not stick to a regular pan either.

I bought some HUGE Fresh Shrimp the other day and made Shrimp Scampi. I used Shirataki noodles on mine and reg. pasta on DH's.

What I bought came in blocks instead of a round, but yes, I sliced it.

You can slice it thick or thin.

If you slice it thick, you'll have crispy outsides and chewy insides. (the cheese I mean!

) If you slice it thin, it'll just be crispy - not quite like potato chips, but a pleasant slight crispiness.
