Decided since I was up I would go ahead and cook for the week...also made some meatballs and Angus chuck steaks and Chicken breasts.... No Excuses this week! Pictures in a little while =even if it turns out to be a disaster |

Meatball Thingys/ Scotch Mushrooms
IT WORKED!!
The mushroom one came out great, I am assuming the cheese one did too. I had to snatch the plate from the jaws of a 13 yr old jock on a feeding frenzy as you will see. My oven cooks at a lower temp in front so the cheese picture looks a little pinkish in the middle...My son didn't care nuked it in the microwave and continued to eat. |

we had these for dinner...so yummie. I think they are induction friendly ....feel free to say if they aren't. You might have to cut back on the onions. However, this makes like 30 mini burgers so each one doesn't have much onion in it at all!

Flaxmeal Muffins...
Hello Everyone...this is an awesome thread..it forced me out of hiding!
I made Spongebobsqpants Flaxmeal Bread into Muffins. I used the Bannana flavored s/f syrup...they turned out delicious. FLAXMEAL MUFFINS DRY 2c flaxmeal (I use Bob's Red Mill) 1/2c Splenda (box, not packets) 1tsp baking powder 1tsp baking soda WET 5 eggs (beaten) 8T sf syrup w/Splenda 5T vegetable oil (canola) Pre-heat oven to 350F Mix together all dry ingredients in a bowl, then in a separate bowl, Mix all wet ingredients. Fold dry ingredients into wet and mix well (don't beat like crazy, but be sure it's mixed well or the eggs do funny things!). Immediately transfer batter to Pam-sprayed muffin tin. Bake at 350F for 25min. or until it passes the knife/toothpick/etc. test. Remove from pan immediately, place on cooling rack. Store these in tupperware/rubbermaid in the refrigerator - they keep just fine for 8 days. Yield 12 muffins |

About not liking egg yolks...But, liking the whites...you can boil the eggs, slice on the side of the egg, remove the yolk and continue the rest of the scotch egg recipe.

Scotch Egg Halves...
Here an idea for your Scotch Eggs....you can make Scotch Egg Halves. That way you could toss the yolk if you don't like it an stuff with whatever you want before adding the sausage around the halves.
~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ Scotch Egg Halves 6 Eggs 1 package Jimmy Dean pork Sausage Hard boil the eggs and cool. Make sure each egg is dry not wet. Slice each egg in half, set aside. Slice the whole roll of sausage in half length wise equally. Divide each length into 6 equal parts...(you will now have 12 equal parts of sausage) Form a patty for each of the 12 egg halves Place egg half yolk side down into the patty forming the sausage around the egg evenly. Place on fold lined cookie sheet and bake at 350 for 25 to 35 minutes till done. Enjoy right out the oven or they are great cold as a quick snack! ![]() ![]() |
