I made chicken cordon bleu Saturday night that was delicious.
2 chicken breast 2 to 4 slices of swiss cheese (depending on your taste) 4 pieces of ham (luch meat works best) 1/2 package of pork rinds 1/4 cup parmesean cheese 1 egg 3 tblspn water salt pepper and garlic powder to taste. (about 1 to 2 tsp each) enough olive oil to coat the bottom of your pan Heat oven to 375 degrees. Butterfly the chicken breast but cutting through the middle of the width wise. Once cut put between two peices of wax paper or plastic wrap and pound out to a little thicker than 1/4 in. place cheese and ham at one end of the breat and then roll the chicken breast up. (you can use toothpicks to held it toghether if u like. Not necessary) Crush up the pork rinds in a bowl to make a breading. Add the parm cheese, salt, pepper, and garlic powder and mix. In a seperate bowl mix the water and egg. Dip the rolled chicken breast into the egg mixture and roll to coat. Then place in the pork rind mixture and roll to coat. Heat pan to med high and brown the rolled chicken breast on all sides. Once browned place in a backing dish and pop into the oven for 35 minutes. I had pictures but am not able to load them at work. It was to die for! |

Turkey soup! Yummy! I didn't measure anything but I used about 3 cups cooked turkey breast, 3 cans of Swanson chicken broth, Condensed chicken soup base to taste, 4 large stalks of celery, 8 baby carrots, 1 can of green beans, parsley, 3/4 can of tomato paste, salt & pepper to taste. Not sure of the carb content but you can figure your own depending on how much you eat.

This is heavenly, just as the recipe names it! Heavenly Halibut. Used this recipe before I did LC. It's good on chicken breasts too. We always double the creamy sauce on top.

I made the mashed "potatoes" (cauliflower) and this saved my low carb life today. If I ate one more hunk of cheese or piece of sausage I was going to stab myself in the hand with a fork!!! Thanks for the mouth watering pics. You have shown me how possible this is.

Hi there - just finished reading this whole thread and printing off more recipes. I lost 50 lbs with Atkins this last year and have now maintained the same weight for 3 months. I have another 30 lbs to lose so am back on induction to see if I can kick-start myself again.
Anyway, I just wanted to say, have made several batches of Oopsies over the weeks. The first ones I made were really flat, but I loved them. I got the subsequent batches right but discovered that I actually prefer them flat! When I put the spoonsful on the cookie sheet, i bash them down a bit, deliberately. New Induction Food Porn Fan!!
This is awesome. I have never seen so much wonderful food in my life! My induction will begin Monday and I can't decide what I would like to prepare first off of the Food Porn list! I do agree it makes you slobber and you can't help but to keep saying mmmmm mmmm man oh year. I agree it is porn to make me act like that! Love it! Gotta have the Queso De Frier!!! Wal mart or Sam's here I come! |
