Do you do an eggwash before the Ground Flax??? Do you add any seasoning to the flax???

I use pork rinds pulverized; almond meal and/or parmesan cheese as breading too.

I dip it in heavy cream before dredging in the flax. Yes, I usually add some seasoning to the flax. I put in cajun seasoning sometimes and just salt and pepper sometimes. One time I mixed parmesan cheese in with it. There are no net carbs so I experiment a lot.

I have trouble getting the pulverized pork rinds to stick. Do you have any suggestions?

I have used egg and/0r milk to help. Mayonnaise or yogurt might work also.

lol I discovered that tonight when I fried it...but in the end I just scraped it off the pan, drained off the oil and just put it on the chicken breast strips that I fried up till it was crunchy...the only bad thing is my body wasn't used to that much grease despite my draining it to death so I suffered for several hours in the bathroom...well aside from that it was yummy tasting lol...guess I won't be having that dish anytime soon! Greasy food never sits too well with me...it's worse then exlax!

(In Brooklyn, NY *everything* is breaded in Italian bread crumbs and fried. The thought of never having breaded chicken cutlets again was always a major hurdle. No more.

Try that home made "bread crumbs" in with your meatloaf too. I use BBQ pork rinds for that. YUMMY!!!

I have a soup for you. Forgot to take a pic before it was gone. Everyone loved it, my skinny peeps too. ;o)

Cheesy cauliflower soup - rich and creamy

1/2 lb - or 6-8 pieces up bacon, fry and crumble - set aside

1 small head cauliflower - chopped small
1/2 onion diced
3 stalks celery diced
3/4 stick butter
1 cup heavy cream
1 lg box chicken broth + 1 can or equivalent
2 cups shredded mild cheddar cheese

Sautee onion and celery in butter on medium heat until softened
Add chopped cauliflower - Sautee together - do not brown, just a few minutes
Add chicken broth - bring to boil
Reduce heat to medium, low boil, cook until cauliflower is soft

You can use hand blender at this point and blend until cauliflower falls apart or skip this step - you decide on how chunky

Add cream - continue low boil
Add cheese - stir in well until cheese melts
continue cooking on low about 10 minutes, don't forget to stir so it won't stick
Add crumbled bacon - stir in --can put aside some crumbled bacon and cheese as topping

add S&P if desired...mine didn't need it.

This is like a potato chowder. You could add broccoli, spinach or whatever your creative tastebuds come up with, but it's good without the extras.

SOUNDS SO....YUMMY! I'VE MISSED MY SOUPS! I'M MAKIN THIS THIS WEEK-END! THANKS FOR THE RECIPE!
