This is a great site! I'd post my favorite Zucchini bake, but I can't figure out how to get the pic on here.

Egg wash
1/2 pork rind crumbs (run through blender, food processor or just bang with rolling pin)
1/2 Parmesan cheese (powdered type, kind in green can)
Boneless/skinless chicken breast cut into 2-3 inch pieces

Mix Parmesan and pork rind crumbs together, add spices of choice (I added cayenne because I am a glutton for punishment).
Dip chicken breast pieces in egg wash then coat with Parmesan/pork rind crumb mixture. Chill in fridge for about 30 minutes.
Fry in oil of choice (I used half olive oil and 1/2 coconut oil because that's what I had) until crisp and golden brown. Lay out on paper towel lined plate to drain excess oil.

Meanwhile, in a small saucepan:
Melt 1/2 stick of butter then add
1 cup Frank's Hot Sauce (there's no substitute for this)
1-2 1/2 tsp cayenne pepper
1-2 1/2 tsp Tabasco sauce
salt to taste
Simmer until hot then pour over chicken and mix well to coat.

Serve with celery and blue cheese or ranch dressing.

They are delicious!

OMG you guys - these were INCREDIBLE!!! if there's ANYthing I trully honestly CRAVE - it's buffalo wild wings' BONELESS buffalo wings...I go there and have learned to like their traditional - but boneless is where it's at.

I made the above tonight and DH even loved them (course I used his asian zing sauce he bought FROM BW's...I was out of my medium, so I used the frank's hot sauce for mine...)

(just wish I'da had some celery...)

I also made some fried green beans with this - which DH LOVES!

here's my pics:

ya'll MUST try these!!!

Grilled Salad.....

I saw this on FITV last night...an old show that I think was called....Cook This...

Tried it tonight.....very surprised with the results....very good

1- whole heart of romaine
olive oil
balsamic vinegar
bacon pices
Parmesean Cheese...shredded.

1) Cut the heart of romaine into...leaving it secure at its base
2) drizzle with olive oil
3) Grill (I used my Griddler--GF would be good too)
Grill both sides for a couple of minutes until wilting
4) Remove and drizzle olive oil
5) Top with bacon bits and cheese
6) drizzle a bit more olive oil on the top

This was very very good......and quick & easy...

Back to add more!!! So I made Chleocatra's absolutely INCREDIBLE Zucchini Taco Bowl and made myself an AWESOME Taco Salad tonight...

1 Zucchini Taco Bowl
Ground Beef (used taco seasoning from LindaSue's site)
Shredded Lettuce
Shredded Cheese
Avocado, diced, around the top
Pico De Gallo
Chopped Cilantro
Sour Cream
Black Olives

The Bowl, without anything.

The final product.

Question about Dreamfields Pasta

can you eat Dreamfields Pasta on induction? I want to give my husband about a half cup with some veggies and chicken before he quits induction.

Thanks.

Zuchinni Bowl looks Awesome!

Umm...I don't think you're supposed to have any pasta of any kind on Induction.
I love Pasta.

nope sorry. but you can make zucchini pasta.

as for dreamfields - really it's only allowed (if you're doing atkins) once you are in maintenance. there's no rung truly allowing pasta - even dreamfields.
and it's also a YMMV (your mileage may vary)...some low carbers gain weight on it - some have no problems at all.

I myself (for being VERY carb sensitive) actually didn't have a problem with it.

good luck!

OMG! Sooo good!

Ingredients
[16] 4 cups cabbage (when shredded and sauteed)
[6] 1/2 onion (diced and sauteed)
[2] 2 tsp minced garlic
[0] 1 lb lean ground beef
[16] 1 cup low sugar ketchup (or sugar free tomatoe sauce if you can find it)
[2] 1 cup shredded cheese

[42] for the total recipe
[6] per serving (makes 6 servings)

Brown the lean ground beef. Season to taste. Drain.

Sautee onion and garlic in EVOO till onion starts to become transparent. Add to meat mixture.

Add cabbage to pan and extra EVOO if needed. Sautee till good and limp. Remove from heat.

In bowl with meat, onion and garlic add low sugar ketchup (or sugar free tomatoe sauce) and mix thoroughly. Add the cabbage and mix. Transfer to 9x13 pan. Top pan with shredded cheese. Put in preheated oven (300 F) and let it cook for 30 minutes.

Remove. Sprinkle the top with favorite spices (I did a little Tony Chacheres and Black Pepper), take a picture, sing a song as you serve yourself a big fat helping, move to the table and mmmmmmmmmmmmmm... get your NOMS on!
I'm going to make this soon!

1 medium-large zucchini sliced and 1/2 fried in butter
Pace Picante sauce
Mozzerella cheese shredded
Italian seasoning

Layer 1/2 fried zucchini in casserole dish
Spread a thin layer of Pace Picante sauce over zucchini
cover with mozzerella cheese
Sprinkle italian seasoning overtop

Keep layering until dish is 3/4 full. End last layer with the cheese. Bake at 375 for 35-40 minutes until cheese is golden brown. Mmmm yummy!

You can add whatever you like to the recipe. I fried up some sausage with the picante sauce and spread that over the zucchini. It wasn't bad.

First Picture Post

Hamburger Casserole.jpg

This looks really gross, but it tastes really good.

The base is the cauliflower pizza crust.
The top is just sauteed onions and ground beef with sliced cheddar on top.
