Nothing big. My first attempt at a slice of fried cheese. This weekend I'm going to make CleoChatra's Oopsie Crepes. Now to figure out what to fill them with!!!

Last nights fried cheese just a slice of american. I was just playing with it to see how it works. I need to buy some chedder or something, I think I just don't like american cheese anymore.

Tonight I'm going to make low carb margarita's (the one thing I miss pre-low carb). I was digging through the drink recipes looking for a smoothie/milkshake recipe and I found a few that are jello (jelloified) mixed with cream. I found lime and lemon jello so they are busy jelloifying in my fridge. I just need to pick up a bottle of tequila on the way home from puppy class tonight. Sounds like fun, I'll let you know how they turn out.

I made a Hazlenut Oopsie Bundt Cake today... but I didn't Pam the pan and it wouldn't come out... delicious all the same. When I make it again I'll Pam and see if it'll come out and then get a great picture for ya'll.

The Lighter Side of Low-Carb: Low-carb, Gluten-Free Crepes (of the Oopsie Variety)

I used 2 tbls Davinci's SF Hazlenut Syrup instead of vanilla. I poured the batter into a bundt pan and cooked at 300 degrees for 30 minutes. I didn't Pam so it wouldn't come out but I had oodles of fun cutting pieces out and eating them.

I want to thank all the people who posted milkshake recipes on the recipe board that are made in the blender... this has been an amazing discovery (and put a very dusty appliance to use).

This is a vanilla atkins shake mixed with a 1 1/2 cups of ice cubes and 2 tablespoons of davinci's SF Hazlenut syrup.

Can ya tell that I love the Hazlenut? hee hee hee.

If you poured the crepes recipes into a bundt pan, you made the cruller (all used the same recipe, just different forms)... Crullers are induction friendly if you only eat one and if you use cocoa instead of chocolate for the glaze.

I love induction!

Jenn I have never tried Atkins shakes. I usually get a low carb whey protein. I must try this. I have some slimfast low carb shakes and wonder will they work okay doing this. I have one for lunch but no blender here.

Cleo - the cruller is definitely prettier than what I ended up with. I haven't started playing with glazes yet. I'm not a huge fan of chocolate. I did put a touch of chocolate whip cream on it (it was great!). I think I'll get some smaller pans before I make it again.

Jan - I'm not a big fan of the vanilla shakes but I bought some more when I realized I could juice them up. Yum yum, it definitely makes them a great treat.

I played with the fried cheese again. Did much better this time. I used a handful (about 1/3 cup) of shredded cheddar. When I flipped the cheese I realized I could throw some ham in there for a nice filling snack. So when the cheese came out of the grease I put it on some paper towels to blot it up, put the ham on there and folded over the edges.

Pretty yummy.

I havent made an omelet before so I ended up making a gigantic one, lol. I used 4 eggs, a splash of heavy cream, one green onion, a tablespoon or so of green pepper, a tablespoon of salsa & dash of salt & pepper...and cheese!

HBailes - those look great! I'm definitely going to make some Buffy Wings this weekend. Maybe today if I can make myself thaw out some chicken.... they just look AWESOME!

Pati - Thank you for liking my food! I've been having a lot of fun posting them. This weekend I'm going to try making cheese tostado's and topping them with refried beans, taco meat and a dallop of sour cream. I can't wait.

When I did Atkins before I allowed myself a cheat day on every Friday... which ended up being all the vegetables I could eat (guilt free!).

I wanted to make cashew chicken but the cashew chicken I eat at restraunts doesn't have cabbage in it. So I skipped the cashews and just called it Chicken Cabbage Stir Fry.
