Never mind! They are essentially the same thing... per wikipedia, the only difference is that queso fresco has goat's milk mixed with the cow's milk... "Queso blanco is traditionally made from cow's milk, whereas queso fresco may be made from a combination of cow's and goat's milk"

For my fried cheese, I use Panela. U can get a big block from Sam's Club for $10 or less. They make PERRRFECT mozzerella sticks. Another option would be using regular String Cheese. I fry mine on one side and sprinkle the top with garlic powder. Tastes JUST like Italian cheesy bread

Hi obraxton,

As far as Im concerend there are no carbs. I used eggs and cream cheese. and a pinch of cream of tarter. They are tasty too. I think I mentioned like flaky biscuts

I am very strict, I count every carb including the .6 each egg has.
Oopsies are .5 carb each. If you have two, it's 1 carb. Both eggs and cream cheese have a bit of carbs.

My brunch today: 2 fried eggs over 2 sausage patties and 1/2 avocado with asparagus, all topped with home made hollandaise sauce! A bit of a splurge! Took about 40min to prepare, and about 5min to disappear!

You can see the avo hiding underneath.
