I didn't like the oopsies originally, but I add onion powder and garlic powder, for buns and bake them in the little cake tins from target. It makes them the perfect size and shape and kinda a cakier texture. Anyway my husband and I like them alot now. Not eggy with the savory powders.

Fast Food Dinner

I was out and about today and time got away from me. I was starving and had to go get something to eat. I haven't tried to do any fast food since starting Atkins. I went to Wendy's and ordered a double cheeseburger with lettuce only (I don't like tomatoes) and no bun. They served in their side salad dish on a bed of lettuce with a fork and knife. I think I enjoyed it more than the regular burger. At least I didn't feel guilty after I ate it.

Not exactly food porn, but it sure did taste good.

Rachel, I had trouble finding it too initially and found it at my loca Walmart that isn't a Super Walmart. Fried cheese is yummy!

I also mwave a slice of wrapped American cheese, aka Kraft single for 1 minute on high on parchment paper. It is like a gigantic cheezit. I also tried it with a slice of Colby Longhorn, the kind that is round, and it worked too.

Vicki~Yeah...I cut up slices of Am-cheese into little squares, Nuke them and they Do taste like Cheezits. Great for dips and making hors d'oeuvres.

I love the Queso Blanco. I have started using it as pizza crust. I bake it in a casserole dish, get it brown on one side and then flip it. Then I top it with pizza sauce and whatever toppings. It is delicious. I guess it is more of a pizza casserole because I still use a fork to eat it.

I found this recipe here and gave it a shot. The muffin holes are baby...probably a little smaller than a normal "piece".

I'll freeze them in case of a sweet emergency.


Ingredients: 2 tablespoons
unsweetened cocoa
powder
1/2 cup heavy cream
2 tablespoons butter
4 ounces cream cheese
1/2 teaspoon vanilla
3 tablespoons Splenda

How To Prepare: In a small saucepan, over
low heat, melt butter. Add
heavy cream and cream
cheese, and whisk until
smooth. Add Splenda, and
adjust for taste. (Add a little
more if you need too) Heat
until bubbling, stirring
constantly. Reduce heat,
and stir in cocoa and
vanilla. Blend well. Pour into
a small buttered dish. Place
in the refrigerator to set for 3
to 4 hours. Cut into 8
pieces. 17 grams/carbs total.

Ok, this thread is AWESOME. I'm totally jealous of some of the stuff that I'm seeing and I want in!

I take lots of pictures of what I cook and post them here and there, but now I've got a place to put them.

Doughboy! Awesome food pics! I remember that Prime Rib. That got me out buying one of those cool thermometers and resulted in our best Prime Rib ever last year!

Those little probe thermometers are one of those really cheap but amazingly powerful kitchen items that turn you into a rockstar when cooking things like prime rib and other roasts.

I have a question about the cheese too... what's the difference between queso fresco and queso blanco? There is another mexican cheese that is white which starts with a "C" but I don't remember what it's called. Does queso blanco go by any other name?
