Dinner was a salad made of greens, tomatoes, 1oz of cheddar, olives, turkey bacon, boiled eggs, mayo for dressing. yummy!

Here's breakfast! : 2 boiled eggs with a pinch of black pepper, fried haloumi cheese, cucumbers with a dollop of mayo.

I tried the buffalo bites this past weekend and YUMMY, kids liked them. I also tried the jalapeno poppers, not my fave, kids didn't like. Too hot believe it or not. I am used to poppers being toned down a bit. I also tried a creamed spinach recipe from Rachel Ray (spinach stuffed tomatoes off of one of her episodes this past week). I don't usually like cooked spinach but this was good. I also made a Cool Cucumber Salad (see thread in the Recipe Help Section here). I was on a roll trying new recipes.

This has been fun to look through... hope no one minds if I join in? Mine will all be very low sodium, too. (Which makes you discover a whole new way of seasoning in your cooking, if you ever have to do it.)

This is chicken tenders marinated in a mix of Annie's Roasted Garlic Vinaigrette Dressing (which is lower sodium than most) and Mrs. Dash Garlic Herb Marinade (sodium-free), browned in olive oil, and then smothered with sauteed onion, green, red and yellow peppers, and sprinkled with shredded cheese. (I use mostly swiss and just a little sharp cheddar for flavor, to cut down on sodium even further.) Very induction-friendly and healthy.

So yummy. Crab soup made with crab, heavy cream, butter, chicken bouillon, spinach, parsley, celery salt, and a little shredded cheddar for thickening. Dieting never tasted so good!

I made Pesto Baked Chicken breast and sauteed spinach for dinner:



(I always cut the chicken up in the kitchen - the picture was kind of spur of the moment).

I sauteed the spinach in butter woth garlic and added some bacon bits and a smidge of parmesan cheese.

I can't believe I've lost 15+ lbs since I started induction May 19th!!

I made a new variation of the poppers with left over taco filling and minature bellpeppers

It was 1 lb seasoned meat...I used a few teaspoons of taco seasoning and a few teaspoons of ranch dressing mix...browned it in my crockpot..drained the fat...added 1 package cream cheese and left over cheese, onion, olives whatever from taco night...and mixed it all together...stuffed it into minature bellpeppers cut in half longways..wrapped each with bacon.

Broiled upside down 5 minutes then flipped over and 5 more minutes under broiler. Then turned off heat and left in oven another 5 minutes.

I topped each one with a little bit of taco bell hot sauce from those itty bitty packets that always make their way home with us....

and served with ranch dressing as that is a requirement for all teens. (according to my son).

My 13 yr old ate 2 entire servings, said he couldn't stop...then took a 3 hour nap!

hi everyone. been hiding out here for a while and finally decided to join. (First time posting a pic so excuse me if it doesn't look good.) This is a turkey pocket. Ground turkey filled with broccoli and cheese.

Thanks on the poppers! I bought the mini bellpeppers again today and I think I will try something new in them. My son is still asking me to make more. I think they will be a good way to 'recycle' leftovers. I thought about stuffing them with leftover meatloaf and cheddar and wrapping with bacon.

OMG OMG OMG

I can't believe how good everything looks and sounds and oh geez Cleo, I want to move in, I'm a little old, but hey, how about adopt a young grandma. I was reading this before I went to the store. Lobster was on sale and they steam it for you, so that's what I bought, but I also got some cream cheese, asiago cheese, couldn't find the queso blanco, but I will and cannot wait to fry it up. I had no idea that all of this was possible on Induction. Absolutely amazing.

Now I don't have to just eat meat and more meat. I am fighting to move below 210, but I am going to make it, was down to 209 yesterday, but drank 1 liter of diet soda and today 211 again. Shucks...I keep trying tho.

Thanks for all the great recipes and ideas about how to eat stuff that will keep me busy for a while.

Thanks to all, After all, I love food, so Atkins is the only way for me.

I made lamb loin chops with dijon-herb seasoning and a zucchini salad (zuchini, oinion, & mushrooms. Sauteed, chilled and tossed with lc italian dressing and parmesan cheese).
