First preheat your oven to 350. Clean your chicken breasts, then place the meat between 2 pieces of wax paper. Using a meat mallet or a small heavy skillet, pound the meat until it is very thin. Set the chicken aside and then get a bowl and mix your stuffing. this is what i used for the one in the picture: i had 2-3 chicken breasts so i used about 1 cup of shredded mozzarella, 1/2 cup parmesan, italian seasoning, garlic powder, salt, pepper, chopped up tomatoes, and some frozen spinach that i had dethawed and then i mixed it all up and a drizzled in some ev olive oil. Sorry im not the best at exact measurements but i just eyeball it and can usually smell if it needs more seasoning etc..
Then i get each chicken breast and scoop plenty of the mixture on top of it. Then you have to roll the chicken breast up and secure it with toothpicks going straight through the chicken, there may be some stuffing oozing out - but thats ok just make sure most of the stuffing stays inside. Spray a pan or casserole dish with non-stick and place each chicken breast in it. Bake at 350 for about 25-35 minutes, depending on how hot your oven is. Just make sure that the chicken is cooked thoroughly, if you arent sure just pull one chicken out and slice through the chicken to check that its not pink at all. There are so many ways to make stuffed chicken, depending on what you like - im pretty picky so i just use plain mozzarella and parmesan but if you like ricotta that would be pretty good too. You could also use bellpeppers, bacon, onions, sour cream or any other atkins induction approved veggies or cheeses. |

Ya, I made these round 7:00 this morning and lemme tell you....I could have eaten a few more. I used quartered sea scallops so no it wasnt as many as it looks but it was definatly the kind of thing that kept me wanting more!

I have been reading through this thread for the past several days while at my son's in ND. Since I planned to go through MPLS on the way home, I stopped at Trader Joe's and Whole Foods since there aren't any in my state. I bought the Queso Blanco cheese because of the original postings here ($5.50 for 12 oz.!!!). I got home last night and fried up some of this cheese, I was NOT impressed. I think fried string cheese is much more tasty. What a disappointment. And, the cost too.

I made the buffalo chicken bites a while back and my chicken ended up a little tough. Has anyone else had this problem? I don't know if I over cooked it. I don't think so because I really just waited until they were nice golden brown. Maybe it was the kind of chicken.
I may have to try them again because I really need something like this. |

I cut up chicken breasts the other day and cooked them with some chicken broth and hotsauce in a wok until the insides were just white through and let it sit a minute or two. I had to fight my son for them, he loved it...

Sometime this weekend I am going to try the buffalo chicken bites and the jalapeno poppers. Not at the same time though LOL In one of Dana Carpender's cook books I have made hot wing bites, I think they were called Sofia Loren Chicken Wing Bites or something like that, and my kids loved, loved them.

Lunch today: grilled lamb chops dressed with a mixture of feta cheese and chopped olives, with a side of sliced cucumbers, tomatoes, radishes dressed with 1tsp mayo. |
