I know what you mean, Leila. When I lived in Pretoria SAfrica, I used to drive 1.5 hrs to Johannesburg to get limes and/or cilantro. The "fruiterer" would call me when they came in. Wish I had that kind of time on my hands now. **sigh**

Oh, sorry! Here's the recipe:

Low Carb Fried Rice (by Me!)

16 oz bag frozen cauliflower
3 tbs vegetable oil
2 eggs
2 green onions with tops, sliced small
2 cloves garlic, minced (I used garlic press)
fresh ginger to taste, grated (I used micro-plane grater)
soy sauce to taste

Microwave cauliflower (do not add water) until tender. Allow to cool to slightly warm. Run through food processor with grater blade. Can also be grated manually, chopped small with knife or put through a ricer.

Heat oil in non-stick pan. Add onions. Beat eggs in bowl then add to skillet. Scramble, breaking up into small pieces with wooden spoon or wooden spatula. When still quite moist add garlic and ginger. Add rice. Stir until hot and slightly brown. Add soy sauce to taste and stir. Take off heat and cover until ready to serve.

My dh and my 10 yo ds both love it. So do I

That faux fried rice sounds Delish. Will have to try it next time I make Chinese.

Nadi~That was a LONG DRive! Love those polish dishes. I used to get a catalog (Cook's Corner...I think?) that had them in it.

Adream~Why Thankyou!

I still haven't made those Zoodles. I want to buy one of those Zoodler thangies.

Heather~Zoodles are very thin zucchini strips made by a Zoodler.
Some Gal here (LCFs) forgot her name...makes them all the time.

Kelly's Famous Fantastic Chicken Wings

Melt together
1 stick butter
2 T. vinegar
1/2 c. hot sauce

Let this sit while you cut a family package of chicken wings into sections. Dip each of the chicken wings into the sauce and place on a roasting pan. Sprinkle dry Ranch Salad Dressing mix over the wings. Bake in a 375 degree oven for 45 minutes or until medium brown and meat is pulling away from the bone. Immediately take the wings out of the baking dish and place in another dish.

These are awesome and I hope that they are a decadent suprise for you.

I just saw that.

Add parmesan cheese to it. I also mash it a bit with my potato masher

I discovered "zoodles" right here (LC board). They were so delicious that they will be what I'll eat while the rest of my family has their pasta.

The method I used was so simple: I bought the smaller sized zucchini so the seeds would not be as developed as in the larger zucchini. I washed them well, using a vegetable brush. I peeled the skin off in thin strips using a regular vegetable/potato peeler, then set those aside. I then peeled the rest of the zucchini just a bit thicker than the peel, turning the zucchini now and then so the strips didn't become too wide. The remaining pieces of the zucchini that were too small to peel were chopped up and put into the salad. Very similar to cucumber when added to salad.

I had the pot of salted water boiling for the family's pasta, but first it was my turn. I added the outer zucchini peeling strips to the water to give them a head start. Then, after a minute I added the remaining zucchini strips. Boiled for 2 minutes, then I removed them with a slotted spoon to a bowl filled with ice water. After they cooled down a bit, I drained them in a colander, placed them in a bowl, gently tossed the zoodles with melted butter, salt and pepper. Topped with sauce and a bit of parmesan....to me, it was just like eating a bowl of pasta! That, plus a bowl of salad was very satisfying. Now I just gotta figure out how to replicate garlic bread! mmmmmmmmm
