Can I play? I have been back on plan since the 1st of this year. My contribution so far:

Shrimp Salad:


I was originally going to make it with mayo, lemon juice and old bay and just have a salad on the side, but when I made the vinaigrette, I fell in love with it so I just dressed the shrimp that way instead.

Cryssi! You always make the prettiest food!!!

I'm not a fan of shrimp but I bet that would be good with chicken.

Barbde: I used to watch this show on BBC "You Are What You Eat" and she would lay out a table with everything the person to be reformed had eaten in the last week. She would point out that it was all beige. Breads, fried foods, etc.

Then she would have a table with everything they are going to start eating and it was beautiful and colorful...

It was really interesting to visualize it like that. I watched that show for a few weeks hoping it would rub off into my subconscious... and even now when I slip and get fast food, I look at the color and I'm really disappointed.

That is so pretty I really should make the effort to concentrate on the presentation before I feed my family instead of just plopping it on the plate

I took one look at the shrimp salad and said "Oh YUM!"

I would make more effort to make a nice plate presentation but I have a large whiney boy in the other room wanting to know "IS it done YET?" so I just throw it on a plate and get the heck out of the way...LOL

I just made that jello fluff thing....sure hope it turns out as good as it looks!! I had lime jello and lemon jello in the pantry, so I chose the lime. It's been all of 15 seconds since they went into the frig.....think they are done yet????

I do my best to make it pretty every time... but then I come from a family that really likes food... we love the smell, the look, the taste... it's amazing!

I get annoyed complimenting Dad because I'll say "Wow, Dad! That smells soooo good." "Well Jenny, I have a proven theory that if it doesn't smell good, people won't eat it." is a normal response...

Seoul Chicken (thanks, Aim in FL!), Fried Rice (my own recipe) and Sauteed Asparagus. My whole family simply loved all of this ... dh and 10 yo ds ... we will be making it again!

The Seoul Chicken is from Linda Sue's site.

Low Carb Fried Rice (my own creation)
16 oz bag frozen cauliflower
3 tbs vegetable oil
2 eggs
2 green onions with tops, sliced small

fresh ginger to taste, grated (I used micro-plane grater)
soy sauce to taste

Microwave cauliflower (do not add water) until tender. Allow to cool to slightly warm. Run through food processor with grater blade. Can also be grated manually, chopped small with knife or put through a ricer. (Cleo's instructions).

Heat oil in non-stick pan. Add onions. Beat eggs in bowl then add to skillet. Scramble, breaking up into small pieces with wooden spoon or wooden spatula. When still quite moist add garlic and ginger. Add rice. Stir until hot and slightly browning. Add soy sauce to taste and stir. Take off heat and cover until ready to serve.

My husband and my son both said it tasted like real rice. It was quite yummy and smelled wonderful! I spooned a bit of the thickend sauce from the chicken over it.

Sauteed Asparagus
frozen asparagus speers
olive oil
pepper

Cut asparagus into 1-inch pieces. Heat oil. Saute asparagus. Season with pepper to taste.

Fry in oil of choice (I used half olive oil and 1/2 coconut oil because that's what I had) until crisp and golden brown. Lay out on paper towel lined plate to drain excess oil.

Meanwhile, in a small saucepan:
Melt 1/2 stick of butter then add
1 cup Frank's Hot Sauce (there's no substitute for this)
1-2 1/2 tsp cayenne pepper
1-2 1/2 tsp Tabasco sauce
salt to taste
Simmer until hot then pour over chicken and mix well to coat.

Serve with celery and blue cheese or ranch dressing.

They are delicious!

Here is my induction breakfast..

Ok..here is my first pic of many more...This is my induction breakfast...the bread is Flax Bread and for my LC induction I can have up to 2 TBS of Flax a day..this only has 0.5 carbs per slice..and really good...
