re: How much cheese per day on Induction:

In DANDR, Dr A said 3-4 oz per day, rather than a flat 4 oz.

I find I need to use it as a condiment, rather than a main ingredient or it stalls me.

Cheese messes with me also, I think it's because it's high in sodium.... I have tried to avoid it or use as little as possible.

Thank you! I was giving the info from memory and I kept thinking 3oz but couldn't remember why.

And I agree, when I ate it daily (multiple cheese sticks a day) I stalled. Not sure if it was the culprit but I actually felt better when I stopped eating them so much.

jenn and nadi -great pics-questions

great pictures, you make me hungry everyday! I was wondering what did you eat on induction and how long did you stay on induction? I'm on my 1st week and doing ok. Yesterday, I was questioning my sanity for starting this diet. (I really just wanted an oreo!) But I made it through! I guess just one day at a time, or more like one minute at a time. I guess any inspiration would help and I hope it's ok to post this here.

When I eat induction I eat a lot of whole foods. I try to cook most everything myself and I avoid processed foods.

When I have time I dig through the recipe room on LCF and other LC websites. I think when I keep variety in what I eat I don't feel so deprived for not being able to eat what everyone else does.

Meat
Beef - hamburger patties, brisket, meat stuff, etc.
Chicken - baked/fried breasts, chicken salad, etc.
Pork - baked/fried pork chops, shredded pork, pork roast, etc

Veggies
Salad with a little bit of dressing. I like romaine hearts because they are crunchy and I like the water in them.
Broccoli, Squash, Cauliflower, Zucchini --- in all their glories.

My favorite thing when getting off fast food is the Big Mac Salad... mmmmmmmm...

Question: How do you figure the carbs in a recipe...

A friend of mine made a recipe I'd made up 7 months ago but I never figured the carb count. She is raving over it and now I am craving it...but want to make sure it's not loaded with hidden carbs.


We call it

Looks Weird, Sounds Weird, tastes great! LOL

Marinade
Italian dressing, spicy brown mustard, ginger, garlic, soy....

Marinate sirloin blade steaks...

Cooked over low heat like crock pot all day until they fall apart with a fork...

Drain meat and add to skillet with sauce

Sauce:
1 can cream of chicken soup, heavy splash of cream, and 1 cup sour cream...

then add SMOKED PAPRIKA some pimento from a jar and black olives... Leftovers are even better!

I get most of my carb counts from Acceptable Foods List and Eddie On Everything How Many Carbs Are In That …

You'll have to look up the ingredients individually and tally them up. Let me know, that recipe sounds really good (aside from the olives )

The cream of chicken soup will provide a rather large chunk of the carbs in that recipe - the Campbell's site says a single 1/2 cup serving of cream of chicken has 10 carbs. It's been so long since I've used canned cream of chicken soup that I can't remember how many servings in a can though. And of course I don't know how many servings you're getting out of that recipe either. One thing you also need to consider is that canned "cream of" soups have some kind of grain (corn starch, wheat flour, etc) in them to thicken them, and most commercially made soups also have some kind of sugar (sugar, HFCS, corn syrup, fructose, etc) in the list of ingredients too, so unfortunately this may not be an induction friendly recipe.

Anyhow, when you want to figure out the carb count for a particular recipe, what you do is to add up how many carbs there are in the total amount of all the ingredients you're using, subtract any fiber, then divide the remainder by the number of servings.

Remember that a lot of foods claiming "zero carbs per serving" may have up to 1/2 g carb in the labeled serving size and still legally claim zero, so using a site like nutritiondata.com or the USDA nutrition site can help you determine exact amounts for a recipe serving.

Wow I didn't know that about the 'cream of' soups...Maybe if I just made the sauce and put a little over the meat instead of throwing all the meat in the skillet ...I'd still get the sauce I crave but not so much. Kwim...

I'll have to buy a can of cream of soup to check the ingredients...I think a can is 12 oz...

Knew there was a reason it tastes so good, it's not legal But man the smoked paprika is sooooo gooood...

I'll have to work on a lower carb version

It was a recipe that I found on I think page 17 of this thread....

JELLO FLUFF
1 small package sugar free jello, any flavor
4 ounces cream cheese, softened
About 2 cups ice cubes

In a medium bowl, dissolve the jello in 1 cup boiling water, stirring 3 minutes. Add 1 1/2-2 cups ice cubes and stir until the jello starts to thicken; about 3 minutes. Remove any unmelted ice. In a small bowl, beat the cream cheese with a mixer until smooth. Add a small amount of the jello (2 tablespoon or so) to the cream cheese. Beat until smooth and creamy. Add the cheese mixture to the rest of the jello; beat on high until foamy. Pour into servings dishes and chill until set.
