That way is delishious, Barb! I'm making them like that for a party Saturday night. Plus Herion Wings. Gotta have food I can eat, but I've learned from experience that I'd better snag wings early ![]() Tonight was ribeye steak and mashed cauliflower, and it looks like yours. I boil the cauliflower until soft then drain it well. Toss it a couple chucks of cream cheese and about 1/4 stick of butter in the food processor (this is for a little over 1/2 a head) and process until desired texture. Served with gravy made from beef broth, cream and xanthum. Oh, I should have taken a picture! I'll try to start remembering to do that. ![]()

I've seen the orange ones, but I love the purple! I was thinking that all this cauliflower I've been cooking just looks bland but the colored ones look much better...
I live in a small town that is slowly growing so maybe the grocery stores will eventually carry the 'good' stuff. I had to pitch a fit to get low carb tortillas carried in our grocery and low sugar ketchup! |

I combined a few to come up with one...
Avocado Dressing Ingredients [3.5] 1 Avocado [1.8] 3 tbls Sour Cream [1.5] 3 tbls Mayo [0] 1/4 cup Heavy Whipping Cream [1.4] 1 tbls Lemon Juice To taste: Garlic powder and Salt ----------Totals---------- [7.2] Total Recipe (approximately 1 1/2 cups, 24 tbls) [.6] Per serving, at 2 tbls per serving, 12 servings for total recipe Instructions Cut the avocado, spoon out the goods into a bowl, discard skin and giant awesome marble of a seed. Add sour cream, mayo, lemon juice and salt. Mix in blender (immersion blender... vroooooooom!). Once it's blended nicely, start adding the heavy cream in small batches and mix. Stop when it reaches the correct consistency. Top your salad... OMG! Sooooo good! ![]() I hear that home made salad dressing only lasts a few days... 3-5 I'd assume... so eat it up!

Eating it up quickly won't be a problem, I could live on salads and almost always try to have avacado on it. Recently my grocery store's avacados have been black inside, I asked the produce manager if he was allowing them to freeze in the back dock area and he denies it...Ummm I'm pretty sure they are NOT being shipped this way from CA or Guatemala...
We have a new Kroger in our town and the employees are from our little town and not very knowledgable about produce other than iceberg lettuce (yuckers) and tomatoes. So the few of us 'foodies' in town are a giant PIA to them. LOL

These are my new addiction. I get the sausage form Trader Joes but u can get other brands from other stores. Then i grill them and when done, i cut them and put them in a wood skewer. In this pic, i added tomatoes between the sausages but u can put any veggie u want for example onion or pepper. Its tasty.

Had to write. Tried queso blanco cheese tonight. Found it at Costco. Fried it in a little olive oil and it was great! If you want to see a picture there is one on page 4. Very low cal and carbs.

Fatbrat ~ where are you in TN? there is a Trader Joe's on the north side of Atlanta.... if you are in Chattanooga area it wouldnt be a million miles, just a good day trip. BUT if you stock up, you will really find it worth while.
