Cleo, you've known for a long time that I simply you. Will you come live with me? Seriously. I'll let you have run of the kitchen. Buy the groceries. I'll even make ds turn down his iPod at night, since your room would be right across the hall from his. Just come long enough to give me some really good LC cooking lessons. I'm a really good cook, but need LC cuisine to become second nature.

Question on the lamb, Cleo. Is the Tzatziki Sauce induction friendly? I've not made lamb for about 30 years, when I made some chops that were awful. I've eaten it recently, though, and simply love it, so I'm game to try again.

Oopsies are definitely allowed on induction. Induction allows up to 4 ounces of cheese, and an entire batch of oopsies nets only 3 ounces.

I guess I'll have to go to a walmart and look for the cheese. I couldn't find it at Kroger or Super Target.

Today my husband and I searched high and low for that cheese!!! We went to Wal-Mart, Kroger, Food Lion, Sloans ( local Grocery), and to an Authenic Mexican food store! We were so disappointed! Any other suggestions?

Did you ask them at the Mexican food store if they had frying cheese? Maybe it is called something else in your area?

Are you looking for the Queso Fresco? I found it at Super Wal-Mart near the cream cheese. Ours has some cold mexican goods right there.

HTH

Ohhhh, I remember.

I have not fried the Queso Fresco yet. I think I read that you don't get the crispy outside gooey inside with it.

I think I had the same problem you did, couldn't not find Queso Blanco.

After the boiling (I add some heavy cream to the water) til soft, I drain and in batches put in the food processor to "mash" them. I use about 4oz of cream cheese to a head of cauliflower.
My favorite way lately is to then put the "potatos" in a pie dish and top with bacon bits and shredded cheddar and bake til cheese is melted.
