DD: For snacks, I ditto the veggies and salads. I also cook a bag of chicken breasts on Sunday and then I have chicken to go to through the week. Great for me because I have little time to cook daily.

I make a "meat stuff" which is a pound of lean ground beef, browned with a dozen scrambled eggs. Can decorate with veggies, salsa, sour cream, cheese, etc etc etc. It's very filling and lasts quite a while.

I also make shredded pork which, like the chicken, sits in the fridge to be munched on at a moments notice. I love to warm up a bowl of pork and put some mayo on it and maybe a little cheese for a warm pork salad.

That's all I have for the moment.

Fry in oil of choice (I used half olive oil and 1/2 coconut oil because that's what I had) until crisp and golden brown. Lay out on paper towel lined plate to drain excess oil.

Meanwhile, in a small saucepan:
Melt 1/2 stick of butter then add
1 cup Frank's Hot Sauce (there's no substitute for this)
1-2 1/2 tsp cayenne pepper
1-2 1/2 tsp Tabasco sauce
salt to taste
Simmer until hot then pour over chicken and mix well to coat.

Serve with celery and blue cheese or ranch dressing.

They are delicious!





OMG! Those look awesome!!! Are they induction friendly? To good to be true!

I was wondering how about onions? I thought I remembered onions being off limits and my DS age 12 is begging for my French Onion soup...I was thinking I could make it without the croutons if I just fried up some of the Queso Blanca and floated it on top. Any thoughts on this?

Whoo hooo!! I'm running to the grocery store tonight...

I made the LC pizza for lunch but I hate pizza sauce so I made it with out the sauce and it was a yummy substitute for Cheezey Bread!! I only had a small pizza pan so I used 2 eggs/2 cups of Mozzarella Cheese and the spices with extra garlic... Awesome!!

I have a recipe for Latkes for Hannukah.



Jicama Latkes

1 pound jicama
1/2 cup finely chopped onion
1 large egg, lightly beaten
1/2 teaspoon salt
1/2 to 3/4 cup olive oil

Heat 1/4 cup poil in a pan over medium heat until heated but not smoking.

Grate jicama coarsely by hand. Squeeze excess water, either by wringing through a towel or through fists (like Chuck Norris). Mix in a bowl with egg and salt.

About 2 Tbsp of latke material makes each latke, and you can fit 3-4 in the pan at a time. Cook for about 5 minutes on each side, or until latkes are lightly browned.

Drain on paper towel. Add more salt as needed.

Keep warm until serving.

Makes about 12 latkes.

Nutritional information: Calories: 139 , Carbohydrates: 3 g, Fiber: 2 g, Net Carbohydrates:1 g, Protein: 1 g, Fat: 14 g
