Ocean - What size container do you use to get your coconut bark to come out so nice and thick? I'm obviously using far too large of a container, since mine only comes out about 1/8" thick, and yours looks to be closer to 1/2" thick.

I used my silicone bread pan. It came out nice and thick like a Kit Kat.

I used a mixture of liquid splenda and a small amount of erythritol. I use that mixture for most everything. Next time I make it, I'm just going to make the filling. I've never been a big fan of meringue and the inside tastes like a yummy creamy lemon pudding. The meringue crust was very good though, would be especially for those who enjoy meringue more than me.

3. I made this low-carb, crustless cheesecake for a potluck lunch at Church this afternoon. I hope it tastes as good as it looks!!

Do you have recipes for the cauliflower cakes and the cheesecake. Both look great.

here is my first food pic, a wonderful low carb lasagna...mmmm this is so good, I have ate a piece every day this week and haven't got sick of it yet! I used eggplant and zuchinni for noodle substitution.

Can anyone post me a picture of a spaghetti squash cut in half (raw) and another of it cooked with the meat coming out. I am trying to find one, but am not sure what I am looking for. There are several sqaush varieties here in China, but it all feels and bit potluck. It would help to have pictures to go by.

Hey Ambrosia,
With eggplant and zucchini, you have made moussaka, a traditional greek dish.

Well done, you have inspired me. I think I wil make some.

Thank Barb

I am not worried about cooking it though. I need to know what is it? What does it look like? How will I recognise it in the supermarket? What do the seeds look like? (Half squashes are often displayed). Because I live in China but don't speak Chinese and Vegetable names don't translate anyway, I need a picture in my mind find the right thing in the market. I am not even sure they are available here, but they have several different types of squash, so you never know. I live in hope.
