Scrambled Egg Muffins
I just made some scrambled egg muffins and let me tell you they are delicious. They only have 1.5 g (net carbs) 2 total carbs. Perfect for on the run breakfasts and for induction. If you love denver omelets, this is for you!

Okay here's the recipe:
1/2 lb bulk sausage 12 eggs 1/2 cup chopped onion 1/4 cup chopped green pepper 1/2 tsp salt 1/4 tsp pepper 1/4 tsp garlic powder 1/2 cup shredded cheddar cheese In a skillet, brown the sausage. Drain. In a bowl, beat the eggs. Add onion, green pepper, salt, pepper, and garlic powder. Stir in sausage and cheese. Spoon by 1/3 cupfuls into greased muffin cups. Bake at 350 degrees for 20-25 minutes or until a knife inserted near the center comes out clean. Yields: 1 dozen. Approx. 1.5 carbs per "muffin" Per Serving: 167 calories; 14 g Fat; 9g protein; 2g Carbohydrate; 0.5g Dietary Fiber; 205 mg Cholesterol; 300 mg Sodium. Oh they look good! I make a different version but oh so easy!! I also put mine in the extra lagre muffin tins.
6 eggs 1/2 c. heavy cream 6 pieces bacon some cheese Fry the bacon til crisp Scramble the eggs with the cream divide into the muffin pan ( I spray mine with pam) break up one piece bacon each top with some cheese Bake at 350 for about 15 min. Just keep your eye on them . I wrap them in plastic and grab one for breakfast on my way out the door..pop them in the microwave for 1 min and yummy breakfast!!! I wouldn't keep them around longer than 4 days though! Steph

I noticed you just quit smoking on 2/19 Good for you! I quit almost 2 years ago and while it is hard, you will soon be very glad you took this step! Keep up the good work! |

Thanks Patt!! It's hard to quit alone...Hopefully, my DH will have quit by the time he gets back from Cali like he said he would!!!
