In skillet, heat olive oil over medium-high heat sauté meat until all pink is gone (about 5-8 minutes depending on the type of meat). Move meat aside and add garlic and onion. As soon as garlic sizzles, stir together with meat. Put into crockpot on high.

Add chiles, spices, broth to crockpot. Bring to a low boil, then reduce heat and add the tomatoes, if you are using them. Puree the tomatoes if you like a very smooth sauce; peel and chop 'em if you like more texture. Simmer on very low heat, covered, for at least 1 hour (preferably all day).

(Makes 4 good-sized servings) Freezes very well. Can be easily doubled or tripled depending on the size of your crockpot.

Everyone seems a little "off" today, I blame it on the change of weather, especially in my area. But personally, I'm doing well. Still sticking to maintenance @ 120 lbs... need to buy size 2 jeans but haven't yet so the BF put new holes in my belt -- the 4s aren't too much too big...

All I can say is WOW...2 days of not eating as clean as I have been and I feel like crap. I feel drained and miserable. I am really regretting I did this to myself. I am really hoping this proves to me that there is NO reason to "just have a little bit" and eat clean from now on. I didn't want to get out of bed, I've gained a million pounds and for what? A few chips and some linguine salad. It was so not worth it. UGH.

Any whoo..had busy morning at work, finally had time to eat. Today I'm enjoying the chicken I roasted last night. Feels good to know exactly what was in it. I'm going to try to eat a lot of chicken for the rest of the week. Fingers crossed the weight I put back on is gone my the time our August thread starts.

I have a few emotional weeks coming up, my only kiddo leaves for college on the 18th. We have a few good luck/fair well parties to attend and then I'll be dropping him off.

Kimber and BMAC - You have given me such good advise and pep talks, read back through your own words!! You've come so far and you know this is just a momentary blip in a great journey!! You both are doing fabulous!!

I make my own with a dehydrator that way I know what's in it. However, if you don't want to do it Steve's all natural jerkey has 0 carbs. Though to be honest I think all jerky can good for this style of eating.

I know I don't have to portion it out but I like to watch how much I'm eating so that if/when I get to maintenance I'll have an idea of not only what but how much to eat. I I've been putting extra servings in my lunch box in case I get hungry or have a day when I'm hungrier.

As for Homeade jerky it is sincerely this easiest thing in the world to make. But you need a dehydrator. They are pretty cheap about 60 Bucks or you can get one used for a lot less. You don't need anything fancy. I did get a jerky kit so I can make it out of ground beef and turkey. (This makes it a bit cheaper). There are a whole bunch of receipes on the web but I like really simple. I buy original Jerky spickes (no surgar) and Jerky cure mix with ground meat (could be chicken, turkey, or beef 85 to 15 % fat works the best. put in dehydrator for 4 - 7 hours. Instructions come with time with the dehydrator.

It lasts a really long time so I bag it up and keep it in my desk drawer at work and in my car. Of course once my son sees it I have to make more almost immediately

day 9 on induction no weight loss

Im on day 9 of induction, no weight loss, im following to the letter tons of water, in ketosis since day 4, i do take B/P meds, and am menepausal, follwed this program years ago lost 37 LBS, tried again last year lost 6 lbs in 9 days. Thia time nothing ! any advice

A '72 is the Atkins 1972 book version. Everyone on THIS thread is HARD CORE and are doing induction still. The induction for A '72 is different than new Atkins. Which version are you doing? Post a menu and we can help!

Today's menu and a question

Thanks everyone for the warm welcome! This group is so amazing. I'm posting my menu just to give myself some accountability I hope no one minds.

B 4 oz Salmon
L- 4 oz Chicken
D - LC egg foo young (.5 cups of stredded lettuce sauted in Sesame oil and a tsp of soy sauce 2 eggs scrambled) It gives the eggs an asian flavor. I don't know why but I can eat this all the time.

S - Homemade beef jerky (see receipe above)

Ok here's my question to go with my title. My scale does not have decimals so I can't tell you what the .x is. But anyway I started at 160 three days ago. I weighed myself last night and I was happy with the 158. But weighed myself again later and it said 159. (still happy and wrote off the first pound due to normal fluctuations. Anyway this morning I weighed myself again and it said 156. Is this normal or is this mostly water weight and should I expect a gain tomarrow? Or am I totally over anazlying and should just accept it

Andie - coming from an over analyzer I can tell you the general consensus in this group will be to eat clean and not sweat what the scale says. Several of us track daily to get a feel for how frequently the scales goes up or down or to evaluate what we may have eaten to cause an increase (some people gain water weight with bacon etc) but in general if you are eating clean you will lose weight and inches. Easier said than done the scale messes with my head, I've decided not to get on it for 2 weeks.

It is Dr. Atkins original version of his woe. He published his first book in 1972. Induction can be as long as want from a few weeks to over a year. It is the purist, most restrictive as some say, and requires your carb intake to be as close to biological zero as possible. Basically just eggs, all unprocessed or pkg'd meats, animal fats, oils, 3-4 oz hard cheese max per day and UP to 1-2 loosely packed cups of leafy greens (not spinach). That's about it. This is a very determined group of people here, hence the name. We follow the rules religiously and you will find many successful folks here. Again, welcome.

Like most of us, I would say yeah!! I totally obsess over that thing but you should really only weigh once a day (if you must ) and first thing, early in the morning as soon as you get up and don't even look at it till the same time tomorrow. I personally believe mechanical scales are better than the digital but don't have decimals and you know, sometimes that's a blessing too!!

soya is a no go. Approx. 1g of carbs per Tablespoon. It's not on the approved list either.

I use it but only a tsp at a time. If my weight stalls I'll re-think it but for now I feel ok and think of it like seasoning.

I've got a serious case of OCD with my scale. It is quite ridiculous and I know it, but I still do it!

I have my "official" weigh in after I wake up in the morning...but then, when I get home from work and change out of my work clothes I weigh again...and then, again right before I shower at night. It is very OCD of me and I even take my trusty scale with me camping and I will be brining it on vacation as well. It sounds crazy I guess, and I suppose it kind of is, but it also keeps me going a bit, I think. And of course makes me nuts!!!

Aren't all types of warriors kind of nuts though? I'm going with it!

Wish everyone was feeling better today. I hope tomorrow you all wake up showing losses!

My scale is cooperating and I am down another pound! I'm at 162!
I am only one pound away from having lost my first 20 pounds. I finally went to the store to get my pork rinds. I buy them fresh at the Mexican market so they taste even better than packaged. I also bought a chuck roast to make in the crock pot. Hope it comes out delicious!

I was feeling a little hungry and too lazy to make anything so I just made myself a cup of coffee with heavy cream and a Tbl of Walden Farms sugar-free chocolate syrup. It was so good, I made another! Tastes like creamy hot cocoa-mocha. I am normally not a foo-foo coffee drinker, but I think I just changed my mind!!!
