I am roasting a chicken today
...in my crockpot, using a recipe I found here on LCF. You ball up aluminum foil and put on the bottom of the cooker, to keep the chicken elevated out of its own juices so it doesn't stew. I found a seasoning called "Rotisserie Chicken Seasoning" that has no sugar or carbs, and coated the chicken pretty well with that.
It's starting to look and smell really good, and best of all, I didn't have to heat up my kitchen with the oven. If it turns out well, I'll be doing it often during these hot months. Hope it's good!

It was delicious. Next time, I will use more balls of foil, because the bottom of my chicken sagged into the juice, and I will season it even more.
Also--mine cooked for a little over 7 hours, and it fell apart taking it out of the cooker. Next time, I won't put it on quite as early. |

Even after eating it for dinner last night, I pulled a LOT of chicken off the bones and have enough to make a nice chicken salad, or chicken enchiladas or something today! (Naturally, of course, I won't be having an enchilada on '72 induction, but I'm thinking maybe a mexican chicken lettuce roll-up?)
I sprayed the chicken all over with olive oil cooking spray before I sprinkled on the rotisserie seasoning, but I think next time I'll make a paste of olive oil and garlic and rosemary and rub the chicken with with that before I roast. |

Thanks for the tip regarding the aluminum foil. I wish racks were made for slow cookers.
Where did you find the rotesserie seasoning? In a recipe here or in a bottle at the store? (Excuse any spelling mistakes. My glasses broke and my face is inches from the screen) |

Haha, Canadian! I have constant issue with how close I have to get to the screen. In the mornings, I have on my glasses (for distance). Later in the day I put in my contacts, but then I have to put on reading glasses for close up, or else push my chair further from my desk. Doesn't it suck being blind?
The seasoning I used was a commercial one I got at the grocery store. McCormick's, I'm pretty sure. But when I looked, all it contained was salt, pepper and paprika. So you could probably save some $ and just use those! |

I have an eyetest tomorrow. My regular optometrist's office wanted me to wait until August 18 for an eyetest so I phoned around elsewhere. The newer secretary sounded nicer on the phone and was more helpful too. Quote:
If I cannot find it I will buy the spices and make it myself. |

YUMMY!!
Just wanted to say thanx
to verbqueen for the crock pot roaster tips!! I had all my crockpots going and made 4 chickens this weekend!!! Everyone loved them and to boot I have enough chicken for several dinners and chicken salads during the week and used the carcasses to make a tasty chicken broth (add an egg and had egg drop soup) all for the cost of the 4 chickens-less than $12.00! ![]() I didn't have the rotisserie seasoning so I used the following and was very pleased (but more importantly my family was pleased....... ) I only cooked my for a little over 5 hours and they were still fall off the bone!!Rotisserie Seasoning 4 teaspoons salt (I used sea salt) 2 teaspoons paprika 1 teaspoon onion powder 1 teaspoon garlic powder 1 /2 teaspoon pepper (I used coarse ground pepper) 1 rounded teaspoon dried thyme 1/ 4 cup extra virgin olive oil (the recipe called for oil to rub down the chickens with but I used verbqueen's method with the olive oil spray) So if you get a chance give it a try!!! Hope you enjoy!!!!!!
