Need good menu ideas

I am out of inspiration, and would like you to let me know some of your best menus. I need simple and inexpensive. I've got a couple really busy weeks still coming up and want to get a good menu planned. We have pork roasts and steaks, and I can get sausage and hamburger, but I will wait on the beef steaks and roasts until after we have our steer butchered. We have LOTS of good farm eggs, so give me good egg recipes, too. I'll probably just stick to salad, so if you have a good salad recipe (or salad dressing) I'm for that, too.

Linda's Low Carb Menus & Recipes - Home is a gr8 site with tons of recipes

I love scrambled eggs with cheese. Hard boiled eggs, sliced and topped with black pepper, salt and some chilli powder. Scrambled eggs with cilantro, jalapeneos, salsa & cheese. Mushroom, spinach, & feta omlette. Steak and cheese omlette.

scotch eggs, celery stuffed with egg salad (we use spicy mustard) eggs with onions, mushroom, spinach, salt, pepper and then cooked like pancakes, even the non-lowcarbers around like the pancakes. Good luck and I will be watching your post for some new ideas for us too.

A Boston Butt pork roast is really cheap, oh so yummy, and can make several meals. I slow cook mine in a 225 oven for 6-8 hours seasoned with garlic powder, cumin and caraway. The slow cooking makes for awesome flavor. Leftovers get spiced with more cumin and cayenne for a mexican flavor or turned into a goulash with paprika and peppers.
