Well, figured since I'm still up, I'd start the new Monday thread!!!

Kitty, here's that recipe I had posted awhile back for you... I found it!! I don't think it's the same buttercream you tried is it??

LOW CARB CHOCOLATE BUTTERCREAM FROSTING

2 ounces dark chocolate, melted
1/3 cup heavy cream
1 stick (8 tablespoons) unsalted butter, softened
6 packets Splenda
1 tablespoon cocoa
1 teaspoon vanilla extract

Melt the chocolate on the stovetop over low heat and pour into mixing bowl. Whisk the heavy cream into melted chocolate and mix in the butter, Splenda, cocoa powder, and vanilla extract beating until smooth.

8 Servings, 3.5 carbs, 2 net

Low Carb Powdered Sugar

Was shutting down my computer and remembered I had wanted to share these. This was actually part of another of his recipes but I just extracted the powdered sugar part because I wanted to try this.

Low Carb Powdered Sugar
From Blaine’s Low Carb Kitchen

2 cups low carb sweetener
¼ cup sifted soy flour

In food processor pulse low carb sweetener and soy flour to make powdered low carb sugar.

Zucchini Hash

Now, I watched him make these on his show with breakfast (coddled eggs maybe?? can't remember! anyway...) and they really did look like potato hash, so I want to get around to trying them! It looked really good!

Zucchini Hash
From Blaine’s Low Carb Kitchen

2 medium zucchini (approximately 3 cups cooked - 4 cups raw) - peeled and chopped in 1/2 inch pieces
1 medium onion peeled and chopped (approximately 1 cup cooked)
1 cup ham - diced
Kosher salt
Fresh cracked pepper
Paprika
4 tablespoons butter

Preheat 10" saute pan to medium high heat. Put 1 tablespoon of butter in pan and brown ham 2-3 minutes. Add zucchini and onion and rest of butter and cook for 8-10 minutes stir occasionally with wood spoon (hash should be well browned). Season hash with salt and pepper and paprika. Serve with favorite egg dish.

Yields 6 servings - approximately 3 net carbs per serving

Hey Mary...I was just about to start a new thread since it is 3am and technically monday! I was in Jacksonville, but I do believe that there was another career conference in the Mobile area....but you KNOW that if I had been in the area we would have had to gotten together!

I am going to try to turn my tv off and power down my brain for the night! Talk to you guys tomorrow!

Peanut Butter Cookie S'mores

These were from his camping show.

Peanut Butter Cookie S'mores
From Blaine’s Low Carb Kitchen

My Note: I made only the cookie portion of this recipe. Although I’m just getting used to the soy flour flavor, which is noticeable to me, I found this much less rich than the cookie recipe that is just peanut butter and egg. This recipe is very easy too! I do not even know what artificial brown sweetener is, so I just substituted Da Vinci’s vanilla syrup and still used the vanilla extract. The dough is very manageable. These were thick and soft but I may try to smash them down flatter next time and see if they crisp up a bit.

Cookie:

1 cup sifted soy flour
2 tsp. baking powder
1/2 tsp. salt
1 stick of butter
1/2 cup artificial brown sweetener
1/4 cup low-carb white sweetener
1 tsp. vanilla
4 tbsp. low carb peanut butter
2 egg whites

1/2 cup marshmallows (approx. 7 marshmallows for each s'more)
2 (store bought) low carb chocolate bars

Peanut Butter Cookie Preparationcookie recipe makes 24 cookies - 12 cookies left over - approximately 1 net carb per cookie)

Preheat oven to 400 degrees. Sift together soy flour, baking powder and salt into bowl. Cream one stick of butter with both artificial sweeteners with mixer or wire whip for 1 minute. Add vanilla and peanut butter. Mix - 1 minute. Scrape sides of bowl with rubber spatula and add egg whites. Continue mixing an additional minute. Gradually stir in the dry ingredients until mixed. Use a teaspoon to spoon dough and form into balls. Place on greased cookie sheet about 2 inches apart and flatten with fork into circles. Bake for 10 - 15 minutes until lightly brown. Remove from oven and let cool on rack.

S'more assembly:

Make a sandwich using two cookies, 7 tiny marshmallows and one piece of chocolate in center. Wrap each "cookie sandwich" in 8" x 8" piece of foil and grill over medium high heat for about 5-7 minutes or until marshmallow and chocolate get gooey.

Yields 6 servings - approximately 6.5 net carbs per serving

Low Carb Milkshake

This one sounded interesting ... if I can find a good low carb chocolate bar around town, I may just try it!

Low Carb Milkshake
From Blaine’s Low Carb Kitchen

1 cup ice
1/2 low carb chocolate bar - melted
1 can diet cream soda
2 tbsp. simple syrup (equal parts water and low carb white sweetener)

Blend all ingredients in blender and serve immediately.

Yields 1 servings - 4 net carbs per serving

Beef Patties Parmigiana

This sounded interesting... something different to do with ground beef anyway. Their carb count seems too high to me but not sure really.

Beef Patties Parmigiana

Recipe By : Woman's Day Encyclopedia of Cookery, Vol. 2 (1966)
Serving Size : 4 Preparation Time :0:00
Categories : Beef Main Dishes

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
1 1/2 pounds ground beef
1 teaspoon salt
1/2 teaspoon pepper
1 egg -- beaten
2 tablespoons milk
fine dry breadcrumbs (from low carb bread, Revolution Roll crumbs, or pork rinds)
3 tablespoons butter
8 ounces tomato sauce
4 slices mozzarella cheese
grated Parmesan cheese

Mix meat, salt, and pepper. Form into 4 patties. Mix egg and milk. Dip patties into mixture, then into crumbs. Fry in butter in broilerproof skillet over medium heat until browned on both sides. Pour tomato sauce over patties and top each with a slice of Mozzarella and a sprinkling of Parmesan. Put under broiler until Mozzarella melts and is slightly browned.

Per serving: 1005 cal., 83 g fat, 7.6 carbs (0.9 fiber), 55 g protein

Original Poster's Notes: Wow, I was surprised when I ran the numbers on this one! The original recipe called for "fine dry breadcrumbs" -- sub what you will, but I don't think pork rinds would work very well. I use a slice of LC bread, dried and whizzed in the food processor. Also, it's been my experience that most of the tomato sauce ends up in the bottom of the pan, if you're worried about carbs from that.

Machacha and Tortillas

Okay... last one! Stick a fork in me, I AM DONE!!! Catch everyone tomorrow.

Machacha

4 lb. boneless beef or pork, see note
2 cans (13 3/4 ounces each) beef broth
1 medium onion, rough cut--or less
3 Roma tomatoes, cored and coarsely chopped
2 large Anaheim chili peppers
1/2-1 poblano chili pepper
1/2 jalapeno chili pepper
1 1/2 tablespoons chili powder
2 1/2 teaspoons ground cumin
1 1/4 teaspoons black pepper
1 1/4 teaspoons garlic powder
1 teaspoon salt
1/2 teaspoon oregano
1/4 teaspoon thyme
1/4 teaspoon cayenne pepper

Place meat and broth in a large, heavy saucepot. Add onion and tomatoes.

Remove cores from all chili peppers and coarsely chop, removing the seeds for less heat if desired.

Add peppers to pot with all the seasonings. Cover and bring to a boil.

Reduce heat to a simmer and cook 2-3 hours or until meat is tender and can be shredded easily.

Remove meat from broth, let cool until warm, then shred by pulling meat apart with 2 forks. Use immediately or store in refrigerator or freezer.

If desired, cool the broth, then refrigerate until cold. Remove solidified fat from the top of the broth. Use broth to moisten shredded meat or as a base for chili. It also can be frozen.

Note: A rump, top round or chuck roast can be used for the beef; a shoulder roast works well for pork. If using a fatty piece of meat, trim exterior fat before cooking and interior fat after cooking.

If the chili peppers aren't available at your supermarket, check Latin markets or specialty stores.

Tortillas

1-1/2 cups Whey Protein Isolate
½ cup Vital Wheat Gluten
1 tsp. salt
¼ cup oil
water

Sift dry ingredients together, add oil and enough water to make a soft non-sticky dough, knead for about 5 mins (or use the dough hooks on a kitchen aid if you have one) let rest for 30 mins, it may go hard after 30 mins but if you work it in your hands it goes soft again, pinch of the size of a golf ball (I got 6 portions from this) and roll out thinly (use w.p.i. to dust your worktop, cook for 1 minute each side in a pre-heated skillet.

These are not the soft tortillas that you can wrap around your filling, but the ones that you fold in half (while still warm) and stuff the filling inside. They taste very real and at only 1.3 carbs per serving (about 8" diameter) worth it in my opinion.

I guess you can add different flavourings and deep fry these for a dorito type snack.

Mary - Thanks for that bread recipe (other thread). You're right about the orange chicken...needs a thickener. And I just sent in a netrition order! Can you get that xanthum anywhere else?

OK...So I think I broke my baby toe stubbing it on a solid wood antique hall tree on saturday. It felt a little bit better yesterday, but then during the night I got up to use the little girls's room and stubbed it again on the Dyson (which DH pointed out shouldn't have been left out)..... Now it is throbbing and all swollen and hot! I put some ice on it, but GEEZ it is painful! NOT a good time! This is going to be the week from Hell! We acquired another clinic and tomorrow is go-live day. sounds like it should be simple, but believe me it isn't! This existing clinic, all it's staff, docs and patients have been doing things one way for years and now they have to change everything over to OUR WAY! We literally hired a Project Manager in December to assist with the changeover. Just getting them on our Practice Management system was a huge deal...all that training and conversion. Plus, since we are federally funded we have many more hoops to jump thru as far as paperwork and regulations.

Sorry to bore everyone...it's just really stressing me out and well you know what happens when most of us get stressed! Gimme a bag of chips, a loaf of Artisan bread and dipping oil and a pan of brownies to relieve my stress!!!!! That's been my pattern in the past..

And now the toe thing! I am going to have to find some real wide comfortable shoes! Too bad I don't have anyway! Might have to stop at Walmart of the way to the office.

OK...all you lovely ladies (and any male lurkers out there )...you have a great day and I'll try to catch up later. And PS..thanks for letting me vent..I think of you all as my friends and who else can we vent to, if not our best friends!

Mary....weren't you gonna go to bed??? lol...I think it was around 330 when I passed out!...I took a sick day....I think it is the stress that has me "et" up! I feel so dehydrated and sore and my nerves are shot! Anybody seen the animated Anastasia? Bartok the Bat said "stess...eet's a keeler!" Oh, you have to see that part...I love the Bat he ROCKED!

Kathy, I bought mine at the local health food store so it's pretty common stuff. To be honest, I bought it years ago and it's been hanging out in my pantry. Started using it again this go round with low carb and it still works so didn't replace it!

Well good morning gals!!! Hoping for a good low carb week! I weighed in earlier than usual this morning and my scale was up a couple pounds from the added fiber and legal carbs over the weekend. BUT, I needed them... so I'll deal with it.

Theresa, I think I hit the sack probably about the same time as you last night!!! Or guess I really should say THIS MORNING!! I don't know what MY problem was LOL.... I've just always been a nightowl and lately it's been bad.

I was trying to catch up on some Tivo'd movies the last couple of nights because I really don't want to save many of them to DVD. Maybe some of them... like The Color Purple, Dreamgirls, Fried Green Tomatoes, and the three Lord of the Rings movies. Oh and Pirates, Curse of the Black Pearl. I have several others on the Tivo too (Babel, Mission Impossible, Red Violin, etc.) but those others are movies I would enjoy again and again I think. As you see I have a bunch to watch!!! And only so much room on the recorder.

I'm afraid now that the usual sitcoms and CSI shows are firing up again finally after the writers strike, I'm gonna lose some of them before I get the chance to watch them so I gotta get some of this stuff cleared off the Tivo one way or another. Well, that was probably TMI LOL.... chatty Mary this morning.... could be sleep deprivation!!! Sorry if I bored ya'll to tears!!

As far as the recipes since I have the time these days, I just look around the net for things that sound interesting. Most of those are from that low carb show on FitTV that I Tivo'd. I managed to watch a couple of them and his stuff looks pretty good on the show so thought I would try some of them.

Hey Diana, what brand is that chocolate cherry coffee and where did you find it?? I must've missed that post or my CRS kicked in and I forgot I saw it. Sometimes we DO move fast around here on these threads.

Hello Kitty, Tommie, Shala, Kim, Cathy, Jen, Onefit, Demetria, Lori, Teri, and anybody else I missed!! Christy if you're out there lurking I still think about you too!

I have no idea what to do with my diet except to keep it lower carb. With all this gardening I did discover that I can't do Stillman's right now though... it is just way TOO low carb to keep my energy level up. I literally thought I was gonna pass out a few times when I was hauling and digging and just by adding some carbs with fiber and veggies over the weekend, it made a HUGE difference yesterday in how I felt working outside. I had energy, I felt GOOD and did not have dizzy spells or tire at all.

BUT I don't lose on Atkins unless I do strict induction and I'm sick of having to do strict induction all the time to lose (Cathy I know you SO relate to this...) so I need to figure out when I do Atkins whether I need to watch protein and fats also, or count calories and watch portion sizes, or .... WHAT??!! I'm very frustrated right now and about this close to giving up!!!

Well I got to rambling this morning didn't I??? Sorry gals!

Okay ladies (and I truly do think we've lost all of our guys)... I'm off to do a few chores, probably run a couple of errands and then finish my current planting and get my veggie seeds started. My mail order plants should be here this week I think, so I'll be digging in the dirt all week long!! I'll be on and off the computer to check in ... everyone have a GREAT day!!

Morning girls, popping in for a second to say Howdy!

Mary...I have used Bare Minerals for about two years now, I get the autoship as well...and I LOVE IT! I have not had a single breakout in the whole time I have been using it and it even covers my frekles. I have really oily skin and every kind of liquid makeup I would try would just break me out...no more! I won't go without it and I won't change..it's the best! I did try some mineral make-up from Avon once, I din't like it though, it wasn't as fine of a powder as the Bare Minerals.

Ugg...This day is going to be hell!! my students have their state tests next month, and for my 8th graders if they do not pass their OCCT State Reading test then they cannot get their drivers licence when they turn 16...state law..so the pressure is always on me this time of year...and wouldn't you know it, the damn copy machine is broken!!! grrrrrrrrrr.....how are we supposed to do practice drills with no copies??? I get so pissed, they want me to do a good job, give me little pay and then don't provide me with the resources I need to make my students successful! In the three years that I have taught in this district not ONE SINGLE 8th grader has ever failed the OCCT Reading test....I will not let one fail this year either...

Theresa...I have those days when you just wanna eat everything in sight...prolly started the sugar binge with the cake and it was on from there! I am that way, if I ever get started on something I just can't stop! You will be ok though, don't give up!

I love all the recipes ....gotta go copy them down!

This existing clinic, all it's staff, docs and patients have been doing things one way for years and now they have to change everything over to OUR WAY! We literally hired a Project Manager in December to assist with the changeover. Just getting them on our Practice Management system was a huge deal...all that training and conversion. Plus, since we are federally funded we have many more hoops to jump thru as far as paperwork and regulations.

Sorry to bore everyone...it's just really stressing me out and well you know what happens when most of us get stressed! Gimme a bag of chips, a loaf of Artisan bread and dipping oil and a pan of brownies to relieve my stress!!!!! That's been my pattern in the past..

And now the toe thing! I am going to have to find some real wide comfortable shoes! Too bad I don't have anyway! Might have to stop at Walmart of the way to the office.

OK...all you lovely ladies (and any male lurkers out there )...you have a great day and I'll try to catch up later. And PS..thanks for letting me vent..I think of you all as my friends and who else can we vent to, if not our best friends!

Ewww Kathy! I bet your baby toe hurst like crazy! Can move it all? If not maybe you should have it checked out if it still hurts. Owwie!

What A fun day you'll be having. I hope everyone at the othere clinic will cooperate because nobody likes change, especially if they are set in their old ways.

Theresa, I was thinking the same with the meatballs. I know that LindaSue makes a pizza using the ground beef as the crust and puts everthing on top after the ground beef part is cooked.

Oh you know I got to get me some of that coffee!!!! Where did you say you got it from?
I hope my items come in today. I'm about out of my cleanse and moisturizer too. I'm going to try that mineral make up too, as soon as I finish my BM, Theresa, so you can count on me for that!!

Have you thought about what eating plan you're doing to do this week? I was thinking of doing Atkins induction and just eating a cup of salad and veggies. So far I only had 2 scrambled eggs cooked in a non-stick pan with a little ketchup. Thrilling!!! Seriously, I'm thankful for that!!



Remember you were talking about lemons and it was used in a recipe? I need to fine a dessert that takes lemons. I have so much cream cheese in my fridge that I need to use it up. Lemon bars or cheesecake sound good but need a low carb. I'll just have to search on the internet for that.

No losses to report, but still plugging in there. I think I'm starting to realize that the weekends are really getting to me. I'm seeing how they aren't worth the extra indulgence and I'm not doing myself any good! I need to get past the 205 once and for all so I can get into the 199.
So I think I may do an Atkins induction so I can add some salads. Just for the 2 weeks to see how it goes. I think I'm needing the veggies right now.

Thanks Diana!!!! I know you will love it! I have several teachers who have switched over from BM...and their only exclamation is that their faces feel like they have silk on them...AND combined with the fact that the product is NOTHING but vitamins A, C, and E...it is truly an amazing product! I never wear foundation and even other ladies who wear the MK products swear that my skin is amazing w/ that powder foundation on it! You WILL love it! Promise ya that girl!

I got that chocolate covered cherry coffee at Fresh Market! They have several types of chocolate coffees that I want to try...it is 9.99 a lb though!....but hey...if Im not eating I can afford the 10$ coffee right?!? lol....

Oh man...i do need some sleep, but I must keep plugging away at homework...Im gonna go to bed early tonight... at the latest 1 am!
