I rice my cauliflower in the food processor before I put it in the microwave. I save my knuckles that way. Works very well.

Thanks Cleo for the recipe. I will be trying it soon...

LOL!!! Man, you made a spankload of cauliflower, Barb. It looks fantastic-- for sure! Tell me what hubby says! My kids kept saying, "This is NOT cauliflower."

Big Red-- let me know when you try it!

Let me know what you think of it, ok?

I went to WalMart and they had only ONE bag in the entire store, so I actually had to go somewhere else, too. Cauliflower isn't in great demand, frozen-- save for when I want it.

My son said someone locally was using my recipe and bought all the cauliflower. lol

Well, Cleo as I said you have made may day/week/lent etc. Then I got to thinkin....

I am realllllllly missing cheetoes, can you make some faux cheetoes up? HAHA j/k! I just think you are amazing and had to chuckle when I thought of all the other stuff I would love decent substitutes for!

lil miss- As awful as it probably is to come up with a lot of substitutes for generally unhealthy foods, I really enjoy it! To be able to eat things we've missed in the past is such a blessing. I really enjoy trying different things, and the pay off is when my family eats it, and then says, "what was that?" and then, "will you make more?"

That's when I know this is a lifestyle my kids can continue to enjoy into adulthood!

I have an idea for faux cheetos, but I'm not sure how much you might like it. Let me look into some things.

Cleo, you are too sweet! I was just kidding about the cheetoes! Yanno, Jerry Seinfeld's wife just wrote a book about subbing in healthy stuff in mac n cheese etc. While I recognize that I am *trying* to get to "all" healthy eating I find nothing wrong with being able to put my burger on an oopsie or get to actually eat pizza with my family again! THOSE things, these inventions of yours, help me feel more "normal" and like one of the gang. Also, as you mentioned, WAY healthier for EVERYONE!

Look forward to your next experiment!

Cleo...I thought I loved you for the Oopsie rolls but I didn't know what love was until I tried the cauliflower pizza! Wow! I ate two pieces and I'm hiding the rest! I was also able to pick it up and eat it. Just added some red pepper flakes and I was good to go.

thank you!

Do you have to grate it, or can you just smash it with potatoe smasher?

Just asking?

You can use the grill - a broiler in America is equivalent to a grill in England.

I was hoping on the oopsie rolls as a 'batter/crust' of sorts, but saw that the results were extremely mixed.

Then it hit me... cauliflower. Yes. Cauliflower! I made this this afternoon... it is amazing!

Don't knock it until you try this! My husband is eating it faster than I can make it!

Recipe can be doubled.

You Won't Believe it's Cauliflower Pizza Crust

1 cup cooked, riced cauliflower**
1 egg
1 cup mozzarella cheese
1/2tsp fennel
1 tsp oregano
2 tsp parsley

pizza or alfredo sauce
toppings
mozzarella cheese

Preheat oven to 450 degrees farenheit.

Spray a cookie sheet with non-stick spray.

In a medium bowl, combine cauliflower, egg and mozzarella. Press evenly on the pan. Sprinkle evenly with fennel, oregano and parsley.

Bake at 450 degrees for 12-15 minutes (15-20 minutes if you double the recipe).

Remove the pan from the oven. To the crust, add sauce, then toppings and cheese.

Place under a broiler at high heat just until cheese is melted.

**I use frozen cauliflower prepared according to package directions. After cooked and slightly cooled, I shred cauliflower with a cheese grater, and then measure for the recipe. (Don't pack down the cup with cauliflower. Just fill it with a spoon or the cup itself.)
Cleochatra:You come up with the best ideas! It looks delicious! Instead of using a cheese grater to "rice" the cauliflower, would a food processor work? I only have a small processor but could do the cauliflower in batches. Carol

crmcdonald - I was afraid of shredding my fingers so I used my little food processor and it turned out great. I set it to shred for about 3-5 seconds as I didn't want it mushy.
