Kathleen have you tried roasted, salted almonds? or are you sick of them? They are crunchy and might help, but have to watch the quantity. How was jury duty--did you get put on a jury?

Corrisann, I, too had a not so good day after a good weighin day. I ate a couple of ribs w/BBQ sauce, and a little dessert, and a couple of tostadas for dinner, although w/o the shell. Still, it was too many calories and sugar. Uh-oh! I wonder what will come of that. I was thinking about doing the fat fast again tomorrow, but it's not very appealing. This is a big week for me socially, w/ people coming over to eat and us eating out w/others. I don't know how it's all going to go; it's much better when I can plan my daily menu and eat at home in the evenings. This week's going to be a challenge. I hope I don't blow it any more!

Polly, hope your success keeps you motivated! Nite, T.

Morning Girls, Im up early this morning on my way to Georgia on a book buying trip. The warehouse is unairconditioned and its going to be a long hot day. Lunch will probably be breakfast at a Huddle House just down the road and Ill be drinking tons of water.

I keep my flatouts in the freezer. I dont care for them raw, they have a gritty texture but I do like them toasted either in the over or on the stove for quesidillas. We use them for taco shells and sometimes I toast them and then break them up like chips to use for spinach dip.

Kathleen, I get tired of pork skins too for that crunchy snack but other than nuts I dont know of anything else to try.

Gotta get on the road...will catch up tonight!

Good Morning All,

I 'm going to have a great day whether I like it or not!! That's the power of positive thinking. I appreciate your thoughts on the chips thing and will try almonds and also toasting the flatout bread for "chips". I suppose with a little tweaking of some seasonings they would work very well.

By the way, I really like the "pita bread" I ordered. It really is good. The versatility of different foods keeps me going. I am going to try gravy tonight with the Xanthum Gum........(stock, pan drippings, cream , seasonings and the Gum) I'll let you know how it turns out.

The jury duty service was interesting. We decided the man was not guilty. The state did not prove thier case. Too many things for reasonable doubt.

Well more rain today. And tomorrow....Polly your trip sounds like work! The no A/C sounds like a bummer except that maybe it will work as a saunna!! LOL I know, not very funny......
Teresa you can do it, you can do it. If worst comes to worst just stick with the no "white thing" (breads, pasta, rice, sugar, potato) That way if you screw up it is not as bad as it could be! For the entertaining, do low carb appetizers (shrimp, veggies ,dips, cheese, hot wings) and nobody will know the difference.

Corrrisann we will get this under controll. We are doing better each week. We will make it, we will make it, we will make it............

I know I am a little silly this morning. Could be because I was up since 2:45 this morning! Just could not sleep for some reason. I will have to catch a nap sometime later.

Todays menu
B-Bacon and Eggs
Coffee w/cream
L-some type of lettuce wraps
D- Roast beef w/gravy
green beans with mushrooms and bacon
s-???cheese
Have a good day and stay on tract or you will have to tell us. Ha Ha

Wednesday

Kathleen, thanks for the pep talk; I really need one! My weight was up a lb. this a.m. from my goofs yesterday, so I am going to do the semi-fat fast that I did last time which helped me drop a lb. I don't particularly want to, but if I don't do it today, I might get discouraged and blow the whole week!

I'm interested to see how some of the things you ordered work out for your meals and snacks, and if you will still lose on them. Definitely good if they satisfy the need for carbs and keep you on program. How is your husband handling all this? Mine is actually doing pretty well; it's taken him time to learn the difference between starchy and non-starchy vegetables, and that I can't eat things with a lot of carbs, and fat is OK. He's a low-fat, high-carb grain and cereal type--just opposite! And that I can't eat dinner out as often as he wants to; he doesn't have much of a weight problem.

How's everyone's hubby w/all this?

Corrisann, did you decide to do the meat fast, or was everything OK for you today?

Polly, a book buying trip to Georgia sounds like a fun adventure, even if it is hot! How long does it take you to drive there? Once when I was in college at Purdue in Indiana (I grew up in a small town there) I hitchhiked down through Kentucky, Tennessee, Georgia, to Daytona Beach for Spring break. I remember the sand hills and the beautiful tall trees draped with moss, and the peach orchards in Georgia, the warm golden sun. And I loved Florida. At that time it wasn't so crowded. I went on some beautiful, serene white beach that had no one on it, and it was just covered with all kinds of colorful shells. Camped out at some park in Daytona Beach, and spent 3 days walking on the beach getting the worst sunburn of my life of course! But when I went back to Indiana everyone was jealous of my tan! I guess I must be longing for adventure once again!

Have a great trip, Polly, and everybody have a great day! T.

B - sausage, egg yolk, spinach, tea w/cr
L - shrimp salad w/mayo

Well my day did turn into all protein because that was what was easiest to do. Even though I way over did on the nuts. Still that's a better goof than half a pizza.

Teresa eat the "best" of whatever you have. Reason 1 is that you don't feel a bit like you are dieting & are quite satisified & 2 is that it doesn't look to folks like you are dieting & keeps their attention off your food. If you have shrimp & butter for an appetizer & than a steak an salad for your main no one is going to notice that you didn't eat bread or potato. And having folks over means you can put out lots of foods that are ok for you. I like to get the chicken breast that so many places have that is smothered in cheese & bacon with a salad--& no one has ever looked at that & said anything about me dieting....LOL!!! And when it's that rich when you pass on the starches again no one seems to ask you to have a bread stick. I did learn a lot of tricks the last time I did this, just have to remember to start using them again!! Just flow with it & don't let it dominate all that good fun you should be having with your friends!

My dh doesn't care what I eat as long as he likes the plate of food I set in front of him. He has noticed my lack of sugar a couple times, like when he was having ice cream & I said no thanks. But he's not said a word. And I don't dare start getting the Carb Smart Bars yet......

Kathleen I used to bake these cheese squares that were suppose to be subs for Cheese-It's (which I love) & they were actually pretty good. Not all that hard to make either. I will look for the recipe for you. I get the pork rinds in BBQ & Salt and Vinegar & Chile Lime--whatever flavors I can find & then measure me out some sour cream & slowly dip & crunch. I actually love celery with cream cheese & that is ok on lc. Gives me the crunch & what's not good about cream cheese???

I will play around with the flatouts this weekend. I really like quesidillas so maybe that's a good way to go. I am tempted on the pita's cause I love them full of tuna salad....but they might trigger me at this point & we're also summer taxes/son going to school poor right now so I can't be sending any big orders in. I'm not far enough into it this time to be bored with my foods yet.

Boy a book buyer day does sound good!!! Too bad we couldn't have come with you Polly & helped you select what you will be selling this next season! How do you decide which books are going to be the ones that will fly out the door anyway??

Xanthum Gum works well but there is a bit of a touch to using it so the first few times maybe won't come out the best but it works great. When you read the labels on all the store stuff most of them use it. Just need a teeny bit.

Oh Kathleen another thing just hit me--a recipe that baked the skin off your chicken into "chips". That was easy & great cause it tasted like wonderful fried chicken. So there is another salty crunchy treat. I can look that up too if you want me to.

Well I need to hussle on to the bathroom before I go sit in front of the baseball game. Snack carefully ladies & have a great day tomorrow!!

Oh boy, Corrisann, a chicken breast smothered w/cheese and bacon sounds really good right now! I hope I can get something like that when we go out tomorrow night! Baking chicken skin also sounds like a wonderful crunchy treat! You know, I have never tried pork rinds--I'm gonna have to go get some; they also sound like great snacks.

My problem is when mh gets dessert and offers me some and it's always something incredibly hard to resist, like a dark fudge brownie. I know I can get out my lc choc bar, but somehow it just doesn't measure up! I have to be strong!

Another all-protein day--you are tough! I find it so hard to buckle down like that. I wasn't able to totally do my fat fast today, but at least I stuck to low
carbs. Tomorrow will tell. Your weight will have to be down!

Hope you all are having sweet dreams......T.

Made it through another side trip!

Hi Ladies,

Well I am so proud today. Of course since my dh is home (and may be for a while) he wanted to go out for a bit last night. I said ok but I am drinking water. And I did. Paid for it with 30 trips to the rest room but, I am flushing the fat away right?

On the chip thing: crispy chicken skin sounds wonderful. I love it that way! I think the cheese would be good. I have seen several recipes where you nuke it in the microwave and supposedly it gets a little brown and crispy if left alone for a few minutes. I will try that also. My friend told me popcorn, but when I looked at the microwave kind, it was 16 carbs-so maybe she meant the old fashion kind. She lost 100 lbs on Adkins and gives me tips here and there. I don't get to talk about the diet too much when I see her because it's at the lodge and I don't want to bore people.

My dh has always had a sweet tooth, and I am ok with that. I don't really have one. Sometimes a treat here and there is great (before) but I am dying without the chips and his eating cake and ice cream does not bother me at all. He did ask me last night how long was I going to be on this diet, and I told him maybe forever. He said that's a long time........He is getting better at being more supportive as the weeks and days go on. I think this is because I am sticking with it........
Corrisann my husband also sound like yours-as long as he gets his plate he's ok. And I still make him potatos and rice. He does not need a diet!

Well Polly how was the trip. I hope it went well and you found what you needed. You said your place has a lot of books on Florida history and stories. Were you able to find some of those? I pictured you and hubby sluething around the warehouse finding all kinds of interesting things!

Teresa you are wilder than I thought! I too traveled around the country years ago. Mine traveling was done by car but my girlfiends and I packed up and left NY (born and raised there) and went on a x-country camping trip for 4 months. Ended up in CA and didn't like it at the time and eventually wound up here in TX. Can you believe people not liking CA?? Before that another friend and I packed up and moved to Puerto Rico. She stayed a week and I stayed 8 months.....good times back then

Yesterdays menu got pretty messed up. I had 1/2 pita bread with lettuce wrap (just stuffed in there). Didn't get to make roast so I threw together some ground beef with the new pasta sauce and we had leftover noodles . I made a salad and had an instant dinner. I did not go off or over on plan but I wasn't going to have too many carbs to help offset the new things on menu this week. So we will see come Monday if this is goining to help or hurt

Todays menu
B-sausage patties
coffee w/cream
L-chef salad
D-Roast beef and gravy
green beans w/mushrooms and bacon

Have a wonderful day!! Till Later,
Kathleen

My husband pretty much eats what I do. When I started in April he might of been ten pounds overweight and he's dropped that and is now slim and trim. He's fine eating low carb most of the time but he tends to eat more of the high fiber bread and more fruit than I do. I've also been cooking him rice on the weekends because a.) he loves it and b.) I could take or leave rice so its not as tempting as say...mashed potatoes or french bread. Those are the two things that I really miss.

Yesterdays trip was fun and productive. An old friend went with me and we talked nonstop so the three hour drive few by.

While book buying I pick out stuff that people have come in looking for and I didnt have and stuff that I sell a lot of...books on diabetes, dictionaries, atlases, classics and young adult books for summer reading and gardening books. I also try and pick out the unusual....stuff you dont see at Wal-Mart or the big bookstores.

Requests for books on diabetes have doubled in the past few years. I think the American diet of processed carbs has caused this and its one of my beliefs that eating like this for the rest of my life will not only keep me slim, but will ward off diabetes. My husband agrees.

Yesterdays eating was good even though I ate out three times. On the way we stopped and got coffee and two orders of bacon to-go (my friend weights 100 pounds soaking wet but is one of those very agreeable people who wanted to encourage my weight loss by joining in for the day). For lunch we had a excellent steak salad at an italian resturant. Romaine lettuce, cherry tomatoes, red onions, pepperocini, shredded parmesan, bacon and bell pepper topped with slices of medium rare sliced rib eye, a few pine nuts and a vinegrette. And it was served in a very cold bowl...that makes a salad good to me! Supper was to-go wings since I got home late. Had a coffee for a snack and didnt get around to eating my usual ice cream bar cause I was exhausted.

Teresa, sound like quite an adventure you had!

Weighed in at 199 this morning!

Polly

P.S. Popcorn-I found out according to this web site
Aip popped-1 cup = 3.5 carbs
not bad even if you had 2 cups and could stop at that. I don't think I am ready to go there yet!

Thursday

Kathleen, bravo for sticking to water when you went out for drinks! it probably did you a lot of good; I really need to up my water intake, but I am sooo addicted to iced tea.

Mh is going to roast a chicken this week and I am going to try peeling the skin off and leaving it in the oven until it gets crisp. That should make a great snack! He doesn't want to eat the skin anyway, being a low-fat person.

That's great news about the popcorn! Just imagine lowcarb popcorn slathered in pure butter....yum.

I guess we've all had some wild times; sounds like you were quite an adventurer yourself! What was it like living in Puerto Rico? What part of NY did you grow up in? I was there for Woodstock! And yes, I can believe you could not love CA. I only ended up here because my first husband wanted to come out here. I had spent the summer working in Madison, WI and really loved it there, but things happen...but I came to love the natural beauty of CA and its diversity. Just not the overcrowding!

Polly and Corrisann--any wild adventures you'd care to share? (Of course I have to remember this is a public website...)

Good going, Polly on eating out 3x and staying on the plan! Sounds like you had a really fun time. It's interesting about the increase in the subject of diabetes. Too bad most people don't know you can keep your blood sugar under control by eating lowcarb, huh? Of course drug companies have to push their drugs.

I'm with you on the rice--much easier to be around than mashed potatoes and french bread! Those are the things I miss, too! But less and less, I hope.

Well, I have not been able to lose any weight this week yet, and am having a hard time wanting to cut down on portions, but I am slowly moving in that direction. We're eating out tonight at a jazz club (love jazz!) and I'm determined to just have a small salad and a few ounces of meat and NO dessert!!! Y'all have a great day, Teresa

B - sausage, egg yolk, spinach, tea w/cr
L - salad w/a few pcs. roast beef or chicken salad
D - salad and some kind of protein, not too much
S - pecans & cr cheese

Polly, sounds like you are going to live in onederland and just not vacation there!! I'm sure that's a great feeling!! Keep up the good work.

Teresa I wanted to go to Woodstock but my parents would not let me. It could have been because I was only 12, but of course I thought I could handle it. Ha Ha I grew up on Long Island, the south shore, about 65 miles from the city. (Close enough to hop on the train and go to the big Apple and tell my parents we were going to "town" for the day.) I always loved to travel and at 18 I went to Puerto Rico, it was so cheap, around 125.00 round trip back then. I am 1/2 Puerto Rican and always was fascinated by the latin culture and the lure of the carribean. Well after a few trips I decided to move there. It is a beautiful Island. Lush and tropical. Beautiful plants everywhere...
Nice beaches....white sand, very nice. I had a great time while I was there!

I used the xanthum gum tonight to make gravy and it came out great! Only one carb for the whole batch (about 3 cups!) It is kinda weird the way it feels when you are blending it but no kind of after taste or anything. I appreciated the hint from you Corrisann. I started with a small amount and that was the trick!

Well enough for now, talk to you' guys in the morning,
Kathleen

Everyday's a challenge

Well I don't know if I did good or not. We went out for lunch yesterday ( for Chinese) and I had Egg Foo Young. Actually this is one of my favorite dishes and you can't find it many places these days around here. To me it was the best of the choices. Eggs and veggies and sauce. Now that is where the problem lays. The sauce. Don't ask me why I didn't tell them no sauce or put it on the side. Maybe I just wanted it! The rest of the days eating went well, Roast beef w/mayo on lettuce wraps and some spicy pork rinds.............
Hopefully today I can do better. I am taking care of my 6 month old grandson for the day( 7am-11pm.) This should be a challenge! He is really getting around and I am just not used to having a baby around all day. Usually it is for 2-3 hours maybe!

Toadys Menu
B-bacon and eggs
coffee w/cream
L-Turkey slices w/mayo and pico de gallo on lettuce wrap
If needed I will use pita bread. I am hoping to lay low on those today
D- BBQ Beer can chicken
some type of veggie
s-pickle, cheese ball stuff w/ celery

Well ladies I hope everyone is ready for a great weekend! Till later
Kathleen

recipes

Chicken Chips:
Preheat oven to 375. Spread out raw chicken skin as flat
as you can, this is important to them crisping.
Bake 10-15 minutes, until pieces get brown & crunchy.
Sprinkle with salt.

This came from the 1st 500 Low Carb recipe book by Dana Carpenter. Use it all the time. The 2nd on, 500 More LC
recipes by her was not good at all. She said later that the editors had really pressed her for that one & she didn't have the time to test all the recipes & it sure showed. Most of the first book are the ones she had used/tweaked
from her own weight loss. She has another one called 15 minute LC recipes that is great that I use all the time.
I had checked out many lc cookbooks from the library last time but found these 2 & recipes from this site have certainly given me lots to cook.

I cannot find the cheese cracker one & that is frustrating me!! It was a whole thread 3yrs ago & folks had tweaked it down so that it was real good. It was easy but you didn't just stick a piece of cheese in the micro & melt.

This one is for pizza & my dh & I just loved it! Makes for a very rich pizza & you have to like deep dish style more so than the thinner crusts. It saved me many time in the past.
Pizza Crust:
4oz cream cheese softened
2 eggs
1/3C cream
1/4C parmesan
1/2tsp Italian seasoning
1/2tsp garlic powder
2C shredded mozzerella cheese
Beat eggs w/cream cheese till smooth. Add cream, parmesan, & spices. Blend well. Add mozz. & blend till combined. Pour into greased 15x10 pan. Bake at 350 25minutes, till golden. Spread on sauce & toppings.
Bake 10 mintues . Let rest 5 minutes.
Total carb count for crust only: 9.6 divide by #'s of servings and of course add carb counts for any toppings
added.
Saw a new Italian shredded cheese at the store yesterday that I will use in place of the plain mozz when I make it next that is a blend of mozz, provolone, parmesan, romano & asiago.

Well the last day & a half have been bad bad bad.....have a good working plan for social settings & being tired settings & being in a hurry settings but that emotional eating was gonna be a problem at some point & I knew it cause I can't seem to find a plan for it that will work. Over eating on legal foods works the first round of kitchen searching but after that no. And the house pretty much only has ok foods in it so I ate stupid stuff trying to fill that gap. Even though this time when dh said let's stop & get ice cream I had some where the last 2 times I passed.
Hopefully I am back on track this a.m. We are heading out to do some fun stuff & I'll toss a few legal snack things in the car & eating out is not that big of a problem when one's mind is controlling me not my emotions.
Started the pattern of eating my way thru my troubles in my early 30's & here I am 20yrs later way over weight battling the same problem.....I have to come up with some legal foods that are comfort foods that I can jump into with both feet & enjoy the heck out of when stress hits.
The stress of life isn't going to go away but it does seem to have hit much less often over the past 5yrs. And I've gotten calmer as I've rolled into my 50's. So that all helps but there are always those unforseen days where everything goes wrong that put one in a tizzy!!
So today I don't feel well but that's from my poor system trying to digest the overload. A nice trip out in the sunshine with some walking will all help that along.

Any of the rest of you gal's stress eaters?? Have you found any solutions or half way decent ways of dealing with it????

Have a great Saturday!!! Hope is relaxing for all of you!!
And that food does not haunt you at each turn

Corrisann, thanks for the chicken skin and pizza recipes. They look great. I will try very soon. I was (am) a stress eater too as well as good times, bad, happy, sad.......... I just keep trying to tell myself I need to do this for me. I seem to be doing bettr this time around also. I don't know if it is because I want to succeed this time or I am more in controll. I have also found that trying new stuff and keeping some of the staples you need to do this wol on hand is helping to keep me in line. One thing that is helping is I am not really working right now. I have lots of time to look up and try different recipes. That is not to say I don't have my moments......... I have found you gals on this board have really helped. It is just good to talk to people who understand!! I am eating legal but at times I know I am eating too large of a portion, but I think if I started eating carbs again the way I was I would not be able to controll myself at all and therefore I really try to keep with salads, eggs, cheese, veggies and meat, and as long as I eat that I am not on the carb rollercoaster. Hang in there and the best thing to do is what you are doing.... getting back on track!! Hooray for you for not continuing on the other path!!

I was craving some type of bread so I made revolution rolls this morning. I have the pita and the tortillas but did not want those carbs today for what I had yesterday and these are mostly eggs. I will let you know how they work out flavor wise. They only took about 12-15 min. to put together and 1 hour to bake and are only about 3/4 of a carb each. 3 eggs make 6 "rolls". They look great but they said they are better if you wait a few hours before you eat them, so we will see.

Good luck to you for the weekend. Sounds like you have a great day planned!

Hey, all--
I am totally a stress eater, and an eat-for-any-and-all-occasions type eater. I haven't felt well the last two days and have broke the diet, overeating allowed foods and adding desserts; today was cheesecake. Yesterday was french bread and pie. I wish I was like those people who don't eat when they don't feel well but I always overeat at such times. Oh well, at least it hasn't been a full-out binge. So anyway, Corrisann, I'm in sympathy with you. It sounds like you haven't done too bad, though. The good thing is just encouraging yourself to get back on track before the damage gets worse, right? I'm glad we have each other to turn to, even if we don't have all the answers. I think just typing it in here is helpful; it helps process out the guilt and feelings, knowing we are not alone and others have the same problems.
You shouldn't feel bad about having some ice cream with your husband; that's fun! It's changing the trend that's the important thing; getting it down most of the time, to make the general lifestyle change. Maybe we're looking for too fast a weight loss, and we should just congratulate ourselves each week for eating healthier and not get too into the scale. But of course we all want to lose the weight, don't we!

Kathleen, it sounds like you're having fun with your baby grandson; that sure takes a lot of energy! Polly, hope you're having another fun weekend, too. Corrisann, you and I will get back on track, for sure, huh! Teresa

OMG- I forgot how hard it was looking after a baby all day!! He is precious but.................My daughter got in around 12:00 last night and he went to sleep around 8 then woke for a small bottle at 10:30 and I was praying he would go right back to sleep!! And he did. He is just at that stage were he can get around and is everywhere. I am glad mine are grown!! Give me a teenager any day.

Todays Menu
B-Roast beef w/gravy (leftovers)
L- Hamburger on Revolution Rolls and 1 carb ketchup. lettuce, onion
D- Shrimp and salad
S- pickle and jello w/whipped cream (not together)

The revolution rolls came out great.!! I let then sit in the fridge and had one last night w/turkey and mayo and it was wonderful!! I really thought they tasted like bread!! Could not believe it!! The whole batch was only (4) carbs and made 6 rolls. I even thought about just making (2) Hoagie style rolls next time. I still can't believe it!!

Not doing too much today. We thought about going crabbing, we'll see. If we get some I will for sure be having them instead of shrimp!! I love fresk crab.

Hope everyone is keeping with thier program, tomorrow is weigh in!! I am worried since it dosen't look like I've lost any so far. Could be all the "new" stuff or the large portions. I at least have to try and as long as I am not gaining I will be happy.

Sunday

Looks like you had a fun time with your grandson, Kahtleen, and lucked out that he slept! Are you going to be taking care of him on a regular basis?

It's great the revolution rolls worked out so well. Was that a mix you got from this website?

I'm just trying to hang in there and not go off program today like I did the last two days. It's tough because it turned hot here and I want ice cream. I think I better go get some Carbsmart. It'll stall me probably, but it's better than going and getting a hot fudge sundae which would be my normal pattern.

I'll be happy if I'm still under 160 tomorrow; there's no way I lost weight this week. But maybe that will strenthen my resolve for this week. Hope everyone is having a nice weekend. T.

Not a good Monday!

Good morning Ladies,

Well I should have stayed home and not gone anywhere and I would have been fine. We got together with friends and drank and ate.....and ate and ate...I feel awful today and gained 2 lbs!! Maybe it will fall off in the next couple of days but I dought it. Corrisan now I know how you felt when you went off plan...terrible. And the funny thing is I wasn't craving anything or feeling deprived. I think alcohol had something to do with it!!
The good news is I am back on track today(or aboard the bus) and I just need to buckle down this week like you said Teresa. I might have to do a fat fast or strict induction for the first few days.

This weeks stats

All time high (2007)- 273
Start date June 18, '07 - 273
Last Monday - 262
Today - 264
Goal - 175 to start
Height - 5'7
Age - 50

Teresa I am not watching my grandson on a regular basis. His parents went to a water park for the day and it's about 4 hours from here. So that is why I had him so long. His sister Arrianna (22 months) went to her other Grandma's house. Bless my daughters heart, she is 18 and has 2 kids under 2. Lucky for her she can stay at home and care for the kids. The kids dad is a hard worker and is always looking to earn extra for the family. He has become a good provider for them. So once in a while they need a break too!! I am lucky we really get along well and she lives so close. So we can see the grandkids often.

I am not sure what todays menu will bring. I am going to go to a new seafood market they opened in town and see what's available. I will probably have bacon and eggs with my last revolution roll They are induction friendly..
And some type of of meat at lunch and hopefully some great seafood for dinner.

Here is the recipe I used for the rolls (off this web site)

Atkins Diet Revolution Roll
3 eggs -- separated
1/4 teaspoon cream of tartar
3 tablespoons cottage cheese or ricotta cheese
1 package artificial sweetener
1 dash salt

How To Prepare: Preheat oven to 300 degrees.

Separate eggs. Beat the whites with the cream of tartar till stiff peaks form. You can check this by inverting the bowl and if the whites don't slip, it's ready.

In a small bowl stir together the rest of the ingredients. Fold carefully into the whites using a rubber spatula.

Spray Pam on a nonstick cookie sheet. Place the mixture carefully onto the cookie sheet, gently mounding one tbsp. full on top of the other until each "roll" is about 2 inches high. Repeat this until you have 6 piles.

Bake for one hour.

These are excellent to have for hamburger buns, to make into a sandwich. Just put two on top of each other. I find them especially good when having sat in a plastic bag for a couple of hours. They resemble slightly squished hambuger buns. (Store in the fridge in a plastic bag with holes so the moisture does not build up.)

They're also great as a dinner bun with butter spread on them.

(Look for a dessert version of this in the dessert section.)

Carbs per serving - include all nutritional information if known: 4g carbs total
Effort (Easy, Average, Difficult): Easy
Source: Suzanna

I used the ricotta cheese in mine because that's what I had.

If you haven't tried these give them a whirl, I think it will be a keeper for you also. The thing about these is I have found other things to add to them on the web sites such as onion on top for onion rolls, cinnamon and splenda for cinnamon rolls ect.............some people have used cream cheese instead of the cottage cheese with great results also, so this is certainly a recipe that can be adjusted to your preference.

Till later Kathleen

Monday a.m.

Good Monday, Everyone--

Well, Kathleen, I am a little up, too, from last week, but at least we've been on a downward trend. I'm going to do induction or semi-fat fast for a couple of days--I really mean it this time! Until I get down two lbs. I told mh no dinners out until I lose some weight, and he agreed to help me. So we make up for it this week. Thanks for the recipe--sounds good.

Kathleen it's so great your daughter has a responsible father to her children. My older daughter has just gone through a breakup and is now a single mom with a 7 and 4 yr old, and not enough help from their dad. She has to work very hard and is stressed and exhausted all the time and doesn't really make enough money. Of couse it's very hard to live in CA; housing is so costly. It's wonderful you get to see your grandkids often!

Corrisann and Polly, hope you had a good weekend and are doing well!
