I love to cook too rican & that has not helped with my wgt either....always enjoyed trying new recipes. My wgt loss
almost 4yrs ago was steady & truthfully I was satisfied with what I was eating. And it was the simple protetin/veggies/fruit that's allowed but then I got into
the cooking & trying all the lc recipes....and stalled and quit losing. So I think alot of that is ok for maintennace(sp?)but while we're losing it just doesn't work. Unless you are content to loose 1-2lbs a month and that is just too slow
for how much we have to loose. We will be discouraged & give up at that rate. Hate to say it but I really think you
need to leave the ice cream (& I love those carb smart
bars) & a lot of the recipes alone for awhile..... the recipes
that deal mainly with protetins didn't seem to stall me.
Any veggie that you can bake up with cheese or cream
cheese etc comes out wonderful (dh would ask sometimes ask are you sure this is legal for you cause theywere so good)& those didn't seem to stall me either. Not trying to be bossy here just don't want to see you discouraged right
off the bat!!
Now I have to say I would love to have that stuffed chicken breast recipe if you don't mind. It sounds great!
The Enchilada's don't have a wrap right? No breads of
any kind the first couple weeks, even lc ones. I roasted a
chicken last week & it was so good! It filled a lot of spots
for me too. CONGRAT's on eating it & staying strong!!!
One more step towards your freedom from food!! Good luck with today, weekends always seem to be harder!!

Hey Chick,
The stuffed chick breast is
1 chick breast pounded thin
2 tbls onion & chive cream cheese
rolled up in the middle
wrap with a piece of bacon or 2
bake in oven at 375 for 45 min then broil to finish off the bacon if it
hasn't browned to your liking
Delish!!
here is the enchilada recipe (no tortilla)
Awesome enchiladas from LCF

Ingredients: 1 pound ground beef -- (1 to 2)
1 pkg or can enchilada sauce or mix -- prepared
1 green onion
1 cup cheddar cheese
4 eggs
1/4 cup heavy cream
1 teaspoon butter

How To Prepare: Start the beef browning over medium heat. Break eggs
into mixing bowl and add cream. Beat on high speed till well blended and all
yellow. Heat up crepe pan or small skillet and add some of the butter. You will need to rebuttter the pan several times. Pour just enough egg mixture over the pan to coat. Allow to cook through, you may turn it, but dont have to. This will make approx 6 small crepes. Drain ground beef and add a small amount of sauce. Place a crepe inside a baking dish and coat with small amount of sauce. Add beef and roll. When all are rolled add remaining beef
and sauce. Sprinkle chopped green peppers and cheese. Bake 350 for
10-15 min or until cheese melted and a little bubbly.
Serve with favorite fixins like sour cream, lettuce, olives guacamole, etc.

*Now I did use more sauce but next time I could cut back a little (egg dosen't soak it up like a tortilla) also cut out green pepper, added more cheese. Great for induction!! or any time! The bigest thing is watching the sauce, but I used 1/4 c for bottom of pan, about 3/8 c. total on all (7) crepes
I thought it would be dry without, did not add to ground beef since I seasoned with onion powder, chili powder, garlic powder and comino, and 1/4c for across the top. I used 1-1/4 -1-1/2 lbs ground beef. You do not taste the eggs at all!!!

Hi ladies...welcome rican. I didn't get to post last night...was busy cooking my turkey breast and pork loin! Weighed in at 209 again this morning...we'll see if this meat fast does anything by Monday morning weigh in. I didn't have coffee this morning and although I missed it, I'm having no ill effects so far.
Today's Menu-
B - scrambled egg, sliced turkey breast
L - sliced turkey breast wrapped up in turkey skin (delicious by the way)
S- a little bit of pork loin
D - Grilled ribeyes

We'll see how the after dinner snack goes tonight. I plan to have a bit of turkey. I'm already craving something w/ splenda in it, like tea or kool aid. Might give in later with some iced tea just to make the cravings go away.

Morning, Everyone--

Re the ice cream & lc treats--I saved the ice cream for the times when I really felt like going to get a full-blown hot fudge sundae, which I was addicted to at one time--used to get 2 a week. It did help, but if I ate it every day it would stall me.

I'm a chocolate addict, so now what I use are the lc Ross dark chocolate bars, and I only eat 1/4 of a bar at a time, w/tea & cream, and no more than twice a day. It's only .5 gram carb per 1/4 bar and 45 cals and satisfies my chocolate cravings and after-meal dessert cravings.

rican, the chicken and enchilada recipes sound delish! When my feet quit hurting so much, I'm gonna start cooking more. Love to hear what everybody's eating; there are a lot of great lc dishes to be had--I'm not missing the carbs at all right now. I think it takes at least a couple of weeks to get it out of your system.

Polly, you are so motivated! Thanks for posting the meat fast--I'm so wondering what it will do for you. I was down 1/2 lb. today, so I have 2 days to get the other 1/2 lb. off. If not by tomorrow, then Sun. I will try the meat or fat fast.

B - lox, cream cheese, spinach

Rican those recipes sound wonderful!! The chicken one I can do now & save the enchiladas for a couple weeks.

We had a great day out & about! We ate lunch out & I did just fine, and partly because of the group here. Didn't even hesitate over what I chose cause I was thinking in my head how I was going to tell you all what I did. So support counts in even the smallest of ways
When you open a menu the left hand column is always salads & appetizers, so I opened the front side of the menu only, looked at the salads, chose one & closed the menu & went on talking to dh. No looking it over & giving myself the time to be tempted or start thinking I can get this & pick off the bread etc. So the moment passed quickly & my cobb salad was very good. Made sure I ate all the chicken & egg. Even ordered the half salad so that I didn't get carried away eating all the other stuff. And truthfully it was a big salad still and I didn't finish it all. Want this time around to really concentrate too on making this way of eating just a natural flow for me so that it will last me the rest of my life!! I don't want to do this again....

Teresa I wouldn't stop at a 1/4 bar. That's great will power on your part & is part of the flow I was just talking about. You eat your 1/4 very casually with your tea & get on with it. I 'm not big on sweets but of course do like chocolate. A hot fudge sundae is one of my favorite sweet things.....I can figure out what to do about that later in the game.

We took a 2 mile hike thru a nature preserve that we'd never been to before. Was very beautiful so the 2miles went by very quickly & I am very content that I had exercise & then made good food choices after that.

Polly I took your tip on the nite time bath. Just took a long one while relaxing & reading a couple chapters. So
now I really feel content!! Thanks so much to all of you for the very helpful tips!!! I am nervous about wgting myself on Mon even though I have been good all week.....am thinking about doing all protein tomorrow to make sure I've boosted my body into letting go.

Congrats on the 1/2lb off Teresa!! Slow & steady as everyone always says.

Well I've off to set up the coffee pot for morning & to get some chicken breasts out of the freezer so that I can make that yummy chicken dish tomorrow. You're right Rican that both those dishes are great for induction. Thanks again

So glad you had a great day, Chick. That's a good idea to only look at the part of the menu that contains the salads, instead of tempting yourself by considering other things that you think you can only eat parts of. We eat out a lot, so I'm developing habits like telling them not to bring bread, leave the croutons off the salad, tell them no potatoes or rice, and could I have just nonstarchy vegetables. So far, everyone's been real accommodating. But it took me awhile to get the courage to say ask for exactly what I wanted. Now it's a routine.

How great you had such a beautiful hike, and walked 2 miles! Awesome! I know MI has really beautiful woods; I grew up in northern IN. I love the woods and I go to the UCSC arboretum almost every afternoon for a short walk. There are a lot of eucalyptus trees of varying kinds, and unusual trees and bushes from Australia and New Zealand, especially protea--they blow me away. Being in Nature helps me stay sane!

So I had my arboretum 15 min. walk, and went to the gym for 1/2 hour. Stayed on the eating plan, and hoping I'll be down a little more tomorrow. It's my husband's birthday tomorrow but I don't know if we're going out. Thank goodness he doesn't want a cake!

Rican, Gramma, Polly--hope you all had a good Sat. too. Weekends have always been splurge times for me until I joined this group--yea! Polly, I can't wait to hear how the meat fast was for you. I hope it went well. Nite, Teresa

Good afternoon, All--
It's an absolutely gorgeous Sunday afternoon by the beach. Hubby & I were just down there enjoying the happy sounds of children, and the colorful beach umbrellas fluttering in the breeze. Sunny & wonderful--feel lucky to be here!
Hope you all are enjoying an equally beautiful afternoon.

I was down another 1/4 lb. this a.m. so just need to lose another 1/4 lb. to make my 1 lb. minimum tomorrow--hope I can do it! Weekends used to always be my binge days, but no more. Tonight we're going to a place for my hubby's birthday where he wants to have pork tamales--uh-oh! But they have a turkey club sand. and salad, so I'll get that and not eat the bread. I'm going for a little walk this afternoon, and will get on the bike a couple of times. How's the exercise going for you all?

L - Greek salad w/feta & meatballs
D - turkey club (no bread), sm. salad

Wow a scale that weighs in quarter pounds Teresa.....that would drive me straight to the nut bin
Am hoping we all have a good weigh in tomorrow morning!! I am nervous but it was a completely legal week so something should have happen. Got no exercise today like I wanted. Was an emotionally stressful day for me (no big issue just those little details of life) & most of my energy went into making sure that I didn't eat my way thru the day as would have been my pattern in the past. Ate more than I needed calorie wise I'm sure but at least it was all protein.
Have never been as far west as CA but have been thru IN & it is a pretty state. Would miss the trees terrible. Hope to get to the CA coast some day as we've heard so much about how beautiful it is!! Good reason to loose wgt & have good health when retirement does come--we want to get some traveling in that you can't do on a 2 week vacation each year. How you've went so long without a vacation Polly is beyond me!

Good morning ladies!

My meat fast went wonderfully Saturday...turkey breast, pork loin and a big steak. No coffee, treats or veggies. And half of Sunday went good too, had an egg and turkey (I'm gonna roast a turkey breast more often, it was delish!) for breakfast and then some roasted chicken for lunch. But with the afternoon came a WATERMELON. Between my husband and I, we at the whole thing. But I rationalized it was mostly water and this morning....I weigh 205!!! So I went from 209 on Saturday to a firm 205 this morning. don't now if it'll stay there, my weight fluctuates a lot, but a drop, not matter how temporary, will give me inspiration to do good.

I'm gonna phase the coffee and veggies back in, but I'm gonna TRY and leave out the sweet treats and low carb wraps for a while.

Glad to see everyone on track!

Monday Weigh In

Good Morning Everyone!
Sorry I didn't get to post yesterday. I cook breakfast once a month at our lodge (Moose Lodge) and yesterday was my turn. Then my Dear Husband(is that what DH stands for ?) came in from off shore, he works on oil rigs and he kept me busy running and going back to the lodge for a few drinks. I was doing so well with him off shore!! But I did not cheat food wise at all and I did drink diet pepsi with vodka(no carbs) but I've got to give that up too I think too loose. here is yesterdays menu
B-stuffed Chicken breast, coffee w/ cream
s-sausage and bacon
l-hot wings!!!!
D-Grilled shrimp.steak, portabella mushroom and a home grown tomato
water,water, water

Polly- I took a look at your book shop on line and it looks so cool and retro!
Love all the pictures. The rooster, cats and the beautiful garden!! I told my husband and kids for my birthday I want a camera so I can post some things too! I have only bought (4) of them for the kids!!!
I am so curious how the boot camp is going. May the pounds drop!!

Chick- you are going to do well this week. You have been so good, how could you not loose! What a great idea for eating out. That will be one of the first things I will put to use!! If you don't look it can't tempt you!!

Teresa you are as crazy as me, with your scale. I have a digital and it gives
.00 reading. Sounds like you guys get your exercise in pretty good. I am still a little lazy there.....00. I was out in CA a long time ago (1980) and it's beautiful there. I'm in S. TX, but I live 2 blocks from the beach also. Only difference is, it's flat,sandy,and breezy. The "Texas Gold Coast". But I do love it.

I have a ? about the avacado. It says To add variety, each day you can also eat 10 to 20 olives, half a small avocado, an ounce of sour cream or three ounces of unsweetened heavy cream, as well as two to three tablespoons of lemon juice or lime juice. Do you count these or are they Free?? I have always been confused about that.

You guys are great!! This support is what will make this work for me this time!! I so appreciate you all. Where's Gramma been?? Looking forward to another successful week for all of us!!

Ahhh....coffee! Doing without it a few days make you appreciate that mountin grown flavor!

Rican - I need to get some new pictures up, things are always changing at the store and at home. Our new sign at the store (a work in progress) is close to being finished. It's one of those old motel signs from the fifties we are re-doing, you can see a "before" pic here.

Monday a.m.

Happy weigh-in day everyone!

I'm so happy I made my minimum this week. It was really hard for me to just lose 1 lb.; that's why I have to track it by 1/4 lb. increments. It's all a numbers game. I'm such a slow loser! (ha-ha!)

Congrats and Wow! to you, Polly and rican--8lbs. in one week! Now that's motivating! The meat fast sounds fabulous; I'm keeping it in mind for stalls.

Polly, I enjoyed looking at the pics of the bookstore and your garden, too, and what cute kitties and chickens! What was the building before it became a bookstore? It's an interesting looking building; it will look really cool w/your refurbished sign.

Polly, the exercise must really be helping w/the weight loss. Rican, are you exercising? I'm going to the gym today, and going to the arboretum afterwards for my walk. I just wish I could walk more! Lat night I rode the bike after dinner; seems like a little activity after dinner always helps.

So I figure 3lbs is that fluid drop you always do the first week of any diet, but there's also 2lbs of fat gone too. So I am ok with this. Rican that 8lbs is great!! Good job to you too Polly! Only 6 more till that 2# drops off!!!! That will be soooo exciting!!!! And Teresa you are right, a lb off is pretty than a lb gained!! So I'd say we all did pretty good. Where are the rest of you gal's & your #'s???? We know you are reading posts & hiding---LOL!!! So just get in here say your "oh crap I blew it" and get back with us!! Well I literally just walked in the door from work so I have to get off here & get some other things done, but will check back in later.
I noticed while typing this that there are some ants crawling across the desk....yuck!!! Haven't had ants in the house since our first year of marriage. Oh what a pain in the behind they are to get rid of!!! Any tips on this??

Yeah girls, if ya'll fall off the wagon it's the rules ya gotta come back and confess! ;-)

Today's Menu -

B- coffee w/ cream and cocoa, 1/4 cup of special K protein cereal, handful of blackberries and 2 slices of bacon

L- rest of the pork loin and a spinach salad...then split an orange with my husband...I'm craving fruit today

S- the rest of a bag of hot and spicy pork skins...about 8 or so pieces.

D- burgers and fries...no I'm kidding ;-)...probably something simple like a salad and some fresh mozzerla and whatever else I can scrounge up, days like this I miss the sandwich option...it's SO hot and muggy today I'm not really interesting in cooking or eating.

burgers and fries!

Polly you crack me up!! Burgers and fries..we can have all the burgers we want, just no bread and I have yet to find the "mock fries" but when I do, y'all will be the first to know! I tried the mock "fried rice" and it really was good. That was at the beggining of last week.

Congrats to to you Chick!! 5 lbs!

Congrats, Teresa you made goal also!! Yea!!

That's fantastic news. I am so glad we all had a good week.
My new goal this week is to do some walking for exercise.

Good thing I got on the 'puter soon as I got home as our power was off for a couple hours. Didn't want to open the fridg so we ate what was on the pantry shelf which was warm pop(diet me) & pork rinds for me & doritos for dh. Cooked us up a hot dog when the power was back. Polly I know what you mean, in the heat a sandwich with fruit sliced up on our plates & we were good to go....will have to find something quick to replace that. Or at least for me. Had 10 blackberries with my hot dog & some bacon. Tasted good but a strange meal.....lol !! Tomorrow is my day off & I'm going to the show & out to lunch with a friend so I will have to be careful. Even though she has struggled with wgt over the years & is understanding at least. She lost lots of lbs over the last 2yrs as she is hitting the end of her 50's & was afraid she'd be obese all the rest of her life if she didn't do it now. losing it a year ago was good but to me the best thing was having kept it off this past year!!! Keeping it off is the bigger problem in my mind. She's had to stay on top of her eating to make sure she didn't start to wander back into old habits. She mainly ate along the lines of South Beach. So she's an encouragement that we can do this AND keep it off!!

Evening, Ladies--

Enjoyed hearing about everyone's day, and congratulations to you, Chick, for losing 5 lbs. your first week. A hot dog & blackberries sounds like a wonderful feast to me--I love hot dogs and haven't had one in a long time. So now I think I'll go get me some and have one for a snack or dinner, maybe even breakfast! I need a new snack cause I'm starting to get a little tired of pecans.

I had a good day today; stayed on program, and was inspired by you Polly to try to walk twice. It's hard because my feet get so sore, but I did two 20 min. walks up at the arboretum today--yea! And my feet actually aren't all that bad this evening. It was really hot and felt good on my aching bod. So thanks, Polly, and rican, I hope you can start walking soon--it's such an upper!

Chick, have fun at lunch tomorrow and stay on plan! Let us know what you saw & how you liked it. I saw Knocked Up recently and thought it was a gas! Enjoy your day off! Nighty nite, everyone....T.

It wasn't too hot to eat an ice cream bar last night! But something strange happened. As I approached the halfway point a little bell rang in my head and told me I was full. I stopped and thought about it and realized I was full and didn't want anymore ice cream. I've been on atkins almost three months. I wonder if the low carbing is fixing those faulty craving urges. Just a thought.


I passed the rest of the bar to dh and he finished it off. He is low carbing with me, but he's not overweight. It's interesting....he's eaten the same things I have (as far as I know) and he's lost five pounds over the same amount of time I've lost 35. He's very active, more so than me. I figured he'd be wasting away but he's holding firm at a perfect weight. I wonder if the same thing that's keeping him at this weight is what keeps us at plateaus or stalls. We've been overweight for so long, our body thinks it is natural and doesn't want to change. Something to ponder.

Today's Menu -
B - handful of special k and a scrambled egg
L - salad and more of the fresh mozzarella...that was delish last night
S- probably coffee
D - gonna go out...not sure where.

Congrats to everyone for your weight loss. Teresa, good going on the walking, I know your feet will continue to get better the more weight you drop. I'm gonna do my regular exercise at work and then take a walk after we get home from dinner. That's my plan anyway. I've told ya'll now I gotta do it!

Good Morning Ladies,
I was so proud of myself for not eating that Ice cream last night......Polly I am jealous!! I keep telling myself I have to wait untill I am further down the road ( unless I just crack and then it's better than pigging out!) For someone who is not crazy for sweets I can't stop thinking about it!! Anyhoo, I had the shrimp salad instead.....I ended up eating pork rinds w/ onion dip (2tbls) for 2 carbs and the shrimp salad for snacks. I find if I plan ahead I seem to be able to focus more than if I wing it for the snacks....too much looking in the fridge.

todays menu:
B-Bacon & eggs-coffee w/cream
L-hamburger pattie w/ fetta cheeese and (1) carb Ketchup
D- Pot Roast w/portabella mushrooms
S- pickle, pepper turkey w/cheese

Chick have fun at the show, Polly that sign of your is HUMONGUS! And I do think our bodies get used to ourselves and try to "protect" the fat layers from leaving. That's why we have to trick them with Adkins. Everytime I say I'm going to "diet" my husband automaticaly losses 5-8 lbs. Is it phycological or what!!!! Teresa I am so proud of you walking. I want to start today and if I get out before it rains I might have a chance.Talk to y'all later, have a superb Tuesday!!

Just a quick good morning before my friend shows up. All I've had today is 2 cups of coffee with cream. Will grab a quick straight protein in a minute. Thought if I stopped in here before we left I could ground myself to not eat popcorn or some such thing at the show....wgted this a.m. to help encourage me & I'm sitting at the 242. Was going to do the Grizelle this a.m. but it's already so hot--we're going into the 90's today YUCK!!! Glad to hear about your 2 walks yesterday Teresa! Your menu's today sound simple & good! I have a chicken in the oven (yes in this heat...)roasting cause it was so good last week & really filled up a lot of spots.
