Stacey - Hey there's a spot on the back for ME...lol. I love bikes, husband and I have been kicking it around for a very long time (since we were in our teens). Espec with the price of gas. My yuppie sister and her husband bought 2 last year.

The seat on the back is pretty comfortable. I had to find that out cuz in order to get the bike home, DH had to drive while I rode on the back. Now that he has taught me how to ride it, he is not allowed to get back on it til he rides.

You dawgs! Got bikes!!! I've always wanted my husband to get us something we could ride together. The only things we have are ATV 4wheelers. But love them just them same... just no road trips like you girls get.... Im so

I've had sniffles and a dry throat. Cough enough to wear my bladder out.. weather thing too.

I'm eating left over coleslaw from last night for dinner.. Had only lunch around 2oclock at shoneys salad & veggie bar.. I got choked up from the spice they had on some baked fish.. awesome fish until I done a few gags and coughs.. so embarrassing....

I got crazy this morning and started cleaning house and moving things around.. Mind you I get up with hubby around 4:30am. so by 5:30 I was buzzing around like crazy. I'll probably sleep tomorrow away. BTW hubby is a mechanic for a trucking company. I never get my oil changed~! LOL

Hi everyone,

Well feeling a little better this morning. Didn't eat much yesterday, stomach couldn't handle it.

L: ceaser salad w/ chicken
D: chicken wings w/ cauli.

Well that if stomach holds up...

I need to start exercise, DH says he's going to clean up basement so I can setup a workout room. I won't hold my breath.

Justine, did you have a stomach virus? Or just something not agreeing with you? Either way, I hope you get to feeling better today..

I dont know how many times Ive said I need to get out and exercise... the weather is beautiful and I have no excuses for staying in.. besides watching my Soap.
I need to mow but its got so high, I'm sure I'll be giving the yard a swirlie hair cut.

I never thought about whats in cough syrup until I took some last night..
Girls, what is sorbital? Is that an artifical sugar? I'm thinking its almost the same stuff they put in the diet candy SF. I had gas this morning.. and it had to be from that. I've not had problems while on this Woe. unless I get ahold of something like that.. sugar free candy.
I was doing so good watching what I eat, and never gave it a thought till it was already done. I guess I need to ck more around on the boards, cus if its happened, it happens to someone here.. thats why i love this board~!

Breakfast didnt happen. I slept in. Got DH sandwiches made and went back to bed. I hope he dont notice the egg salad sandwiches had SF relish in them.. He can taste the splenda everytime~
Lunch was peanuts, and pepperoni. HEHehehe. I know, peanuts are not a induction food. But I couldnt help it. I just have the munchies, TOM is getting close, I'll have to see how that goes.

I've got to run and get groceries today. Im so out of everything, besides sad looking lettuce, and other veggies that look gross. Theres nothing to eat.
I've got to come up with something different for dinner. Last night I made BBQ Chicken Egg Rolls for DD & DH, but ate the coleslaw instead of being tempted by their dinner. ( i could have ate the insides but didnt want to be tempted by the wrappers.)

I'm so tired of chicken, beef and pork, tuna.
I guess I may get things for Taco Salad. I love that.
I'll work on my menu for this weekend and next week and will post a few ideas. Girls, please do the same if you have time. I'd love to try something esle. family would too. LOL.

OH. I was wondering if you ladies would like a weigh-in day?
Like post on Sunday. Anyday would be fine with me, I usually hit the scale sunday morning. I try my best to stay away during the week cus it can make me depressed if I dont see it move everyday. Let me know what ya think..

Justine, I also hope that you are feeling better!!

I also know that I need to get outside and get some exercise and fresh air. It is beautiful here today. Maybe I will take the kinds to the nature center this evening and walk around. The last time we did that, we saw 2 dozen deer (took lots of pics), a fox, a beaver, ducks, geese, and turtles. It was a good time. I did exercise today, though. Did Callanetics. If you haven't tried it, I would suggest it. I love it! The time really goes by quickly. Not only that, but my flat, ugly butt is getting to not be quite so ugly. (secret...hubby took a pic of it last night (LONG STORY) and I saw it and for the first time EVER, I wasn't embarrassed!)

I could really use some menu ideas. I will sit down today and work on my menu and post it. I gotta keep it cheap til the first- broke beyond belief. Yuck. I hate months like this.

A weigh in day would be good. Sundays would work for me. I will just tell DH about this thread and tell him that he has to bring my scale out of hiding. Then, I will let him hide it again.

Taco Salad-tonight

Saturday
Baked Chicken Breast rolled in crushed porkrinds & seasonings (mock Shake N Bake)
Long Uncut string green beans sauteed in BUTTER~!
Cucumber/Tomato Salad (oil & vingear w/ spices)

Sunday
Steak on Grill topped with onion/chives & garlic Butter
(DH gets a Potato)
Mock Cauliflower mashed Potatoes
Steamed Broccoli with Butter & seasoning salt

Monday
Chunkie Chili (Stew meat, Hamburger & tomatoes,onions,green peppers chunked, Chili seasoning.. just no beans!)
(DH gets cornbread)
I'll use shredded cheese for a topping for mine.

Tuesday
Cabbage Stew (boiled cabbage, Hamburger, stewed tomatoes and lots of garlic!)

Wednesday
Meatloaf (use crushed porkrinds for breadcrumbs, eggs, peppers, chopped onions, and low carb ketchup for topping)
(DH gets fried potatoes)

Mmm...that is a mighty tasty looking menu. Haven't made mine out yet. I will work on that in just a few minutes! That chunkie chili looks way good!! I think that I will be adding that to my menu.

Stacy, give me an idea of what the Revolution Roll is? I've seen it listed on the boards but dont want to sound stupid and ask what it is. Carb Count, fiber, etc?

And... what does the Tilapia taste like? I love salmon, tuna, shrimp, cod, catfish, but have never tried Tilapia.

Glad you mentioned Squash, I forget about it.. I love it.. miss it being cornbreaded and fried... whahhh I get towards the veggies in the store and just stare.. I am stuck at broccoli and caulflower, green beans. I need to widen out my choices.

Never tried the turnip fries either. Girl, Im so glad you listed yours! You'll have to tell how to prepare those too... lol.

It will probably late before I get back on.. we have to mow yard, take Allison to a Bluegrass Show and run a few today.

A revolution roll is kinda like a spongy, savory (or sweet depending on how you make them) merengue that can be used in place of bread. I like them a lot. They don't have much taste to them, but they sure do work for sandwiches or as buns. I am not sure whose recipe this is, but it is the one that I use:

REVOLUTION ROLLS

5 eggs- seperated *throw 2 of the yolks away
dash each garlic and onion powder
dash of salt
3 T. sour cream


Preheat oven to 300. Separate the eggs and add spices, salt, and sour cream to the yolks. Whisk this mixture together. In a separate bowl, whip egg whites until stiff. A hand mixer works best for this. Using a spatula, gradually fold the yolk mixture into the white mixture, being careful not to break down the whites. Spray a cookie sheet with Pam and spoon the mixture onto the sheet, making 6-9 mounds. Bake 50 minutes. Refrigerate after cooling. Most people say they taste best the next day, I kinda like them when they are fresher.

For 6 rolls, there are .8 carbs each
For 9 rolls, there are .6 carbs each


Tilapia...I made that for dinner last night, it was so good! Let me just say, I do not like fish. But, this is such a light fish with mild flavor, it works. My DH and my DS13 are both fish eaters. They could eat fish (all kinds) often and they love it when I make tilapia.


My family's favorite way to eat squash is sliced then grilled on the Foreman grill for 12 minutes. If zucchini is looking good when I buy the squash, we will have that too. From there we toss it with lots of butter and greek seasoning. To die for! We also boil and mash it. Roast it in the oven. And I make a squash casserole with onion and cheese.


Turnip fries. Easy! I peel them, slice them into fries then pop them in some oil, just like I would a potato. If the turnips (rutabagas work too, BTW) are medium to large size, I sprinkle them with just a little sugar substitute to take away some of the bitter before frying. They don't taste quite like fries, but they still work to dip in LC ketchup when you are eating a burger!

As far as veggies go, we do lots of green beans. Lots of them. That is one veggie that all 3 kids will eat. If we use canned ones, we will drain most of the water and add butter, salt and pepper. Sometimes we also add garlic powder. I roast them in leftover bacon grease, with some chopped bacon, garlic slices, onion slices, salt and pepper, tossed with a little olive oil. Or, I throw them on the stove all day long with bacon and onion. We do canned spinach with butter. No one likes the real stuff around here. Brussel sprouts roasted or fried with bacon. One time we roasted some frozen brussel sprouts with some frozen caulifower. Wow! I like them boiled, but no one else does, so I have to wait til we go out to eat at a buffet to get those. One of our new favorites is to take a small bag of both frozen okra (not battered) and squash and roast those together with a little olive oil til they are browned. I will chop cabbage and fry that with lots of bacon, salt and pepper. Sometimes we turn that into a meal by adding some pork hock, hamburger, hot link, or smoked sausage to it. Also, fresh mixed greens. Turnip, mustard and collard. Chopped with some onion and ham hocks, boiled on the stove all day long. DH likes to put hot pepper vinegar on his.


Justine, how are you feeling today? Hope that it is lots better! Take it easy today, make sure you get back up to speed before pushing yourself.

I don't have too much going on. Gotta exercise. Today I do yogalates. It really works, but so boring. Gonna keep with it til I find a replacement. That and my MIL is coming to stay with us for a couple of days at the end of next month and she is always saying something about the way I look, so I gotta be as hot as I can when she gets here. I have been married for over 15 years, you think she would be over it by now. Later on I have to take DD16 to karate way across town. Her class is only an hour so I get to figure out something to do while she does that because coming home and then going to pick her up is not an option. Maybe I will use that time to read a book. I am in the middle of Hannibal Rising. Good book! After that, when I get home I am gonna make some Mock Danish Rolls. I really like those a lot, as does DS7. I think that is about it for the day.

Are we gonna weigh in tomorrow? I may not be able to post til late tomorrow evening or possibly Monday. We will be leaving the house at a quarter to 7 to meet some friends about an hour from here for breakfast, then ride the motorcycles up to WY for lunch. I am looking forward to it. Keep your fingers crossed for good weather here in Colorado for me!

Hi everyone. Well I feel 75% better. Stomach is still getting a little upset when I eat. Doc says it was a virus.

Very busy saturday both kids, DS4 and DD12, are in soccer and they both have games so it was a full morning and I just got home.

I have to go to the store I am out of all veggies and meat. I have plenty of chicken.

Your menus i have already printed they sound good. I've listed what i'll probable have this week but in no particular order

Chicken cordon blue
Porterhouse
Cheesesteak Manitcotti (yummy)
Meatballs Parma.
Spag squash (taste just like spagh w/ sauce)

Sauted squash
Broiled peppers
sauted snow pea pods
steamed broc and cauli
sauted green beans

That's all I can think of at the moment.

I'd like to try my hand at making the muffins. Have any of u tried? What's the carb count?

I dread weigh in tomorrow. I started TOM and Im sure the scales wont be kind.

I did fairly good today not munching considering... tofm

let me ask you girls this, do you eat yogurt yet?
Ive noticed a lot incorping into their meals. I picked some up the other day and thought I d made a good choice, a natural no aspertane etc.. had 13 carbs per cup. so I used 1/2 cup this morning with one big strawberry chopped and a tablespoon of fiber one. It was good, but Im sure that took most of my carbs for the day. THEN, I found tonight at Krogers, the Carb Master kroger brand. 4 carbs per cup. So now I have a huge thing of reg yogurt that I cant eat.. yocheese? never made it but wondering if i can use it for that.

I had a tuna albacore salad today for lunch, snack was cheese and pepperoni. I Know theres something esle but cant think. ITs been a long day.
I did at least get the saturday menu done. Grilled out the chicken instead of baking.. all was good.

I was gonna ask something else. but its left my mind.

anyhoo.. I'll try to post weight when I get up. If not, I will by afternoon. I Hope its not depressing. I want a swoosh day~!

I eat yogurt once in awhile. It doesn't normally mess me up. As far as that goes, I am normally not real strict at times, I don't go hog wild, but if I am losing a pound a week still, then it is all good. I haven't weighed myself in almost two weeks. I am anxious to see if the scale moved any or not. Been so busy today that I am just now able to sit down and breathe.

B: Spike (no calories, no carbs, really good kick)
L: Roast beef off of an Arby's sandwich. No bread, no sauces
S: mozzarella cheese stick
D: salad and sloppy joe on Revolution Roll (kids made dinner so that I didn't have to. )

Well I forgot to weigh myself as soon as I got up so I weighed now and I'm at 225. Not bad since I'm a little bloated from TOM and have been up for several hours.

Yesterday I ate:

B egg and bacon
L Chicken Wings w/ blue cheese
D Wendy's chicken salad on top of ceasar side salad no dressing
snacks: cheese sticks

Sunday - since I have to go food shopping today...

B Big breakfast from McD - eggs/sausage rest i feed to kids
L meat&ch roll ups cucumber salad (cucu./sourcream/vinager/splenda)
D something of the list I provided yesterday

Have lots of cleaning to do today. Want to get house painted so need to get things in order and I need to get on line and apply for some WAH jobs (yuck ).

I actually gained a pound. Depressing but Im not giving up, also considering yesterday was TOM. Now I know you wont believe me when I say my period was only 2hours long. I had a procedure done earlier this month, endomentrial abulation, and this is my 1st period since. I've read either you have no more periods or they are very light. I'm only cramping but nothing else. So Im sure the water gain is still there cus the hormones are...

I'll post more later..
I hope someone has a loss...Justine, I'm in same boat as you.. Stacy have a good trip if we dont hear from you today.. enjoy!

spaghetti squash

Be aware I went out to Fitday to see how many carbs spaghetti squash has it has 6 carbs per cup....OMG. Why does Aktin say it's ok on induction. I had like a cup and a half plus lc sauce (don't drowning but to taste). I'm so upset.

It had been 12 days since I last weighed myself. I am down 4 pounds.


We had a great ride today. We went to Estes Park, then to a friends house in Loveland, then back home to Colorado Springs. 330 miles roundtrip. I was on my own bike, that is the longest ride that I have done on my own. Also, it was my first group ride (there were 8 bikes total), and up on the twisties on the mountains. It was lots of fun! Perfect weather, great friends, and a sense of accomplishment. Now we are home and I am whooped! Think that I am gonna call it a night! I will check in tomorrow.


B: omlette with bacon, sausage, and cheese
L: slice of pizza (yup, I ate the crust )
D: too tired to eat...

Js - sounds like you had a good time.

I cleaned my yard/bathroom/livingroom and did laundry not much fun if you ask me.

Menu for today:

B 2 sl of bacon (low sodium) 1 hard boiled egg
1/2 c cucumber salad
L tuna and spring mix/cheese/bacon bits/baconranch dressing
D chunky chili (need to figure out how to make this)

And goal to get more water in..not drinking enough.

Glad the trip went well... dont worry about eating the crust. you have the rest of the week, it will all come out in the end.. lol...

Justine.... surely there are fiber grams that would lower the carb count in the spag squash?

chunkie chili.. its just all chili without the beans . I just cook up stew beef/meat or cheap steak cut up, I let it cook along time or in crockpot.. best way.. and use ground hamburger also.. its a lot of meat but it makes for thick and meatie..I added about 2 pks of chili seasoning... some ppl add chopped celery, big onions, cubed tomatoes. Its all in how you like it, but with hubby, he gets it over cornbread, where as I put it in a bowl with cheese. You could probably add other veggies too.

Ive been eating since ive been up. Yogurt, bacon, left over small piece of steak, Mock Reeses cups, tossed salad with bacon.. I think I need to go for a walk and get out of the house... before I start chewing on the wood trim on the doorway.

I guess i better head out.. I have to get out while the weather is nice, may run to wallyworld and see if theyhave some cheap flowers to put out.. I've got spring fever~!!

Behave girls! and Yeah, I need the extra water too.. I forget sometimes.

Eating since you got up? I hate those days! It is noon and I am still in my pj's. I did exercise already, though. I have been busy writing out my shopping list, I still haven't gone shopping. There is no putting it off anymore, though.
I have every intention of cleaning the house up today and getting some laundry done. I am not sure yet, but I think my hubby's day off from work is tomorrow. I find that when he is home I don't get too much done. He gets one day off during the week and Sundays. I choose to use those two days a week to not do my exercises also. We do sometimes go ride bicycles in the mornings. Not always. I am so not a morning person at all! I am so surprised that my sweetie can put up with me.


B: 2 slices bacon
L: I am thinking chicken wings
D: peppercorn tenderloin and green beans w/bacon

Justine, how are you feeling? Hope that you are feeling lots better!!

I do have a question for you, how do you make your chicken cordon bleu? I love that, and would really love a new recipe for it!
