One of the things I really missed after starting LC was French dressing. I can't tell you how many bottle labels I have looked at only to find the carbs is way to high or if I did find 1 low enough it didnt taste anything like french. About a month ago I was browsing another board and found a post by sewallace2 for Low Carb Catalina Salad Dressing
this was the only post this person ever made but man am I glad he did because this has become my all time favorite. If you like french you need to try this: Low Carb Catalina Salad Dressing 2/3 Cup Low Carb Ketchup 2/3 Cup Canola Oil 1/2 Cup Splenda 1/2 Cup Red Wine Vinegar 1 tbsp Lemon Juice 2 tsp Minced Garlic (or 2 Cloves grated) 2 tsp Dried Onion Flakes (or grated Onion) 1/2 tsp Salt 1/2 tsp Dry Mustard 1/4 tsp Paprika 1/2 tsp Fresh Ground Black Pepper 1/2 tsp Celery Seeds Mix well, let set over night in refrigerate. Keep refrigerated. |

If you use heinz 1 carb Ketchup and liquid splenda for the sweetener my estimate is about 1 carb for 2 Tablespoons.
If you use reg splenda it is more like 1 carb for 1 Tablespoon. |

I'll have to give this a try Kevin, thanks! I'm really getting sick of creamy white dressings on my salads. I've made hidden valley ranch, and seem to have either that or blue cheese all the time. When shopping on Sunday, I found Newman's Own Lighten Up Light Balsamic Vinagrette. I love balsamic vinagrette's, but generally stay away because of the sugar and high carb counts. According to the label, there are 2 carbs in 2 tablespoons, and I know that when using an oil based dressing like this, it spreads throughout the salad much better and I use quite a bit less than the creamy white stuff. Not that I'm counting calories, but there are only 45 in 2 tablespoons - there are about 140 in bottled Hidden Valley Ranch. Nice bonus!

This one is really good:
Maytag Blue Cheese Dip 8 servings: 1 cup mayonnaise 1/2 cup Maytag Blue cheese, or another brand, crumbled 1/4 cup sour cream 2 tbs fresh lemon juice 1 tsp worcestershire sauce Combine all ingredients in a medium bowl and blend well. Refrigerate, covered, for several hours, or overnight. Per Serving: 1 gram carbs 246 calories 2 grams protein 26 grams fat 0 grams fiber 277 mg sodium 33 mg cholesterol |

Ginger dressing like Kobe's Steaks Restaurant
This is soooooo delicious! It tastes kind of like the ginger dressing you get at Kobe's Steaks restaurants.
Ginger Dressing 1/2 C. sesame oil (light kind) 2T toasted sesame oil (dark kind) 1 T chopped fresh ginger 1/2 T soy sauce 1/4 C rice vinegar 8 drops liquid splenda < 1 gram carbs per serving (2 grams carbs per entire recipe) Note: If you just have dark (toasted) sesame oil, and don't have the light sesame oil, you can just mix a little of the dark oil with canola or light olive oil to equal the 1/2 C + 2 TB of total oil.

This is a quickie and very good..
Put the following in a jar with a lid: 1 part vinegar (any type) 2 parts oil (any type..you can even use coconut oil.) Italian seasoning or Greek Seasoning or oregano garlic/onion powder Splenda to taste..2tsp to 1 Tbs. depending on the amount of dressing you have made.. Shake..Let sit a few minutes..and shake before you pour on to salad.. |

Charski - Off the subject but would you mind giving me your mayo recipe? I use extra-light olive oil too (Bertolli). In fact it's the only kind of cooking oil I use. I love it.

I love homemade Hidden Valley ranch. You use the mix and then add 1 c. mayo, 1/2 cup half and half, and 1/2 cup water. That's it! If you like Outback's ranch dressing, you can add a dash of ground red pepper. Mmmmmm!

I have made ranch dressing before using the Hidden Valley Ranch powdered dressing mix and the FAGE Greek yogurt... thinned with some water. It comes out really good, and I like it because I can eat more of it without being so concerned about calories.

When you use the half n half it doesnt get to thick? I made it once with heavy cream and it turned into ranch whip cream. LOL

Poppy Seed Dressing
1 cup oil (your choice, I have used olive oil, canola, etc.) 1/3 cup cider vinegar (may try a bit of balsamic in this next time) 1/2 cup Splenda (or your favorite sweeteners to equal, or liquid, my mom prefers Sweet 10, go figure) 1 teaspoon powdered mustard 1 tablespoon grated onion 1 tablespoon poppy seeds Combine and put in the blender, blend til onions are pureed. Works well on fruit salads as well. Another fave is Outback's honey mustard dressing 1 1/2 cups mayo heaping 1/4 cup grey poupon mustard 1/2 cup honey (we use the sugar free sub) Mix and chill. christyjo |

Cheri's White Dipping Sauce also makes an excellent dressing....well, sortof. I like to dip crispy lettuce leaves in it!
White Dipping Sauce for Shrimp, Veggies or Porkrinds Description: Ingredients: 1 1/2 cup mayonnaise 1/4 cup prepared horseradish 1 tablespoon lemon juice 1 tablespoon worcestershire sauce 1 teaspoon fresh parsley 1/4 teaspoon hot sauce -- or red pepper 1 clove garlic How To Prepare: Mix all ingredients until smooth. Chill for 3 hours. This is best used to dip cocktail shrimp or veggies and dare I say pork rinds (ewwww) I have been told by several people in the chat room (that I gave the recipe too), that they love it. I am not a fan of horseradish sauce, but there is something about this dip that makes it so good. It is extremely low carb also! Enjoy! Warm Lemon Thyme Vinagarette
Juice of 1 lemon
1/4 cup (ish) of white wine small palmfull of fresh de-stemmed thyme 1/4-1/2 tsp dry mustard powder (or substitute about 1 tbls brown mustard for some of the vinegar) approximately 1 stick of melted unsalted butter two pinches kosher salt (or to taste) fresh ground pepper Puree Thyme, mustard, lemon juice, and white wine in Food Processor. While blending, slowly drizzle in melted butter until emulsion forms. Add salt and pepper to taste. Serve over sauteed Green beans with sliced almonds (my personal favorite), spinach or salad. Dressing will seperate if refridgerated though, due to the butter. Actually, this is a good basic vinagarette, you can substitute another vinegar for the lemon juice and wine, switch to olive oil instead of butter, etc... The only thing I wouldn't take out is the mustard, since it will help form the emulsion that will keep it together, but I've made this with Tarragon, Marjoram, and even Basil and they all turned out great.
