Oh I would LOVE to go there and "people watch"....tip of the day: if you ever feel really down about your self, just go to the Wal Mart at 3 in the morning...all kinds of NUTS there that look a whole lot worse than yoU!!

I like the oopsies!! I like to mix Cream Cheese and Splenda until light and creamy then smear it all over them!! Yummy!!! But I make the basic recipe and use cream cheese instead of mayo or cottage cheese. I also have never made them with any protein powders or flax meal either. Or I smear PB & Sugar Free Jelly or a Egg sandwich!! YUMMMY!!!

Kathy...Have you ever made a cornbread salad??? I love it! Not low carb, but picnic friendly!!

Creole Cabbage:

Ingredients
2 Tablespoons Butter
1 small head Cabbage, shredded
1 medium Onion, sliced
1 medium Green bell pepper, seeded and sliced
1 teaspoon Oregano
1/4 teaspoon Cayenne pepper
Salt and pepper to taste
1 cup Tomatoes, diced

Directions
Melt the butter in a heavy skillet. Add the cabbage, onion, pepper and
seasonings.

Cover and cook over low heat until tender (stirring frequently). Add
the
tomatoes and cook for 10 minutes longer, uncovered. Serve 4-6

If you're tired of the same old potatoes, pasta and cheese, or veggie,
this
is a perfect accompaniment to your main dish. I have served this with
Pork
Roast, Thanksgiving Turkey, and Meat Loaf. It is very versatile and it
adapts to the meal you're making.











ONION CASSEROLE
4 Lg. White onions
1/2 stick of butter
1 can of evaporated milk
2 cups shredded Swiss Cheese
1/2 cup rice.

Pour 2 cups of water in boiler. Add rice. When water comes to a boil,
boil
rice for 5 minutes, then drain. In large skillet, melt butter on
medium to
low heat so butter will not burn. Slice onions into rings, then add to
butter. Let onions saute until translucent, not browned. Turn heat
off.
Now add rice to onions, and stir well. Add about 2/3 thirds of Swiss
cheese (about a cup and a half) and mix until blended.
Pour onion mixture into greased baking dish. Smooth out. Now top with
remaining cheese. Pour milk over mixture. Bake in preheated oven of
350
degrees for about 20 minutes. ( I cover it, and then remove lid and
bake
for another ten minutes or until milk is well absorbed and cheese
starts to
brown slightly.).




Someone e-mailed these to me....could become low carb easy enough!!! Thought I would share!!!

Cornbread Salad

2pkgs Cornbread cooked according to the package and crumbled.
1 purple onion diced
1 large tomato diced
1 can whole kernal corn drained
3 boiled eggs chopped ( I always leave these out!)
1 bell pepper chopped
1 pkg ham chopped
1 8 oz pkg grated cheese (cheddar)
1 12 oz bottle of Ranch Dressing ( don't add too much!)

Do not use Muffin cornbread mix!! Its too sweet! Mix all ingredients and add dressing...just enough to coat, but not soak. Better after refrigerated over night!!




This is the one I was talking about!! I love this as a meal not just a side dish!!

Mary...as for the peanut, under the statue is the inscription that read something to the effect of it being dedicated to the peanut farmes in the county...peanuts are big around here...lots of bottom land by the river to grow em and we even had our own peanut mill in town for a long long time.....no one grew a peanut that big...I don't really know where it came from or why it is known as the worlds largest...but it is...and it is the task of just about every college freshman to try and steal it and have it turn up somewhere unexpected...hense, the whole water fountain at the college incident...wasn't my fault..ppl shouldn't dare me to do things!!!

As for mommas day, my brother is smoking ribs, I am making tater salad, baked beans and some other stuff....we are having a big ol spread out by the pool...fun times...I got my mom the Trisha Yearwood Cookbook that Tommie got me for my BDay..she will love it!

Jen...I don't know how to stop that..you might email Cheri and ask her.

Ing...hahaha...if I had saved up all my "bottles" over the years I could prolly add a garage to that house!

Ing - I always weigh at that time and on the same scale (at work)...???? I'm trying to guzzle water today...That and we ate pretty close to 8:00 p.m. last night... Dangit...shouldn't have waited for the ole ball and chain to get home!

Shala.....Anytime girl....Im sure If you've offended someone, then I have too!!! I'm just as bad as you are!!! But Like I said in the beginning....Either people REALLY like me or REALLY don't!!! O well.....Can't please everyone!!


Kathy...I shot you several recipes...I also have an EXCELLENT potato salad recipe!! It calls for a package of POTATO TOPPERS...you find these in the produce section near the potatoes...Its the seasoning packages that most people sprinkle on their baked potatoes...Has sour cream, chives, bacon bits, etc in it. Just sprinkle it over your potatoes after they are cooked and still warm. Stir it in, then add your mayo, mustard, eggs, relish, onion, etc. Gives your salad a really good taste!! My sister in law loves this stuff and I swear she can smell it a mile away!!! She shows up everytime I cook it!! She use to live next door and she would walk into the house saying " I SMELL POTATO salad!"..

Kathy...there is a Mexican version of this I've seen. It has like drained ranch style beans and Jalepeno's I think. I've never tried it!

Tommie...An old stand by I do is a bean casserole which I throw in a crock pot...just take about 5 or 6 cans of any beans you like, green, yellow, chilli, black, white, red, baked, etc., add about a pound of fried up Italian sausage, a can of corn, some mustard, ketchup and brown sugar. You can also add onions, too! It is really good and always a big hit!

Kathy...sounds good. Imgonna try it!! Do you just drain the corn?? Just like baked beans, but you use sausage and corn??

OK...I've downed 70 ounces of water already today and peeing my brains out! If this extra poundage doesn't come off by tomorrow, I am attacking that bag of Fritos scoops with a vengeance (and a carton of french onion dip!) All I've had to eat was leftover tossed salad. I threw some smoked sausage, cabbage and a LC beer in the crock pot for dinner.

Yes...drain any cans with excess liquid, except if you use chilli beans or baked beans...put them in with the sauce.
