EGGPLANT PARMESAN (4 Point)

Kerry I was looking for some Eggplant recipes for you so far I found 2 recipes for Eggplant parmesan which I will post anyway But I'll keep looking for something else
(I am a recipe junkie)

EGGPLANT PARMESAN (4 Point)
Ingredients:

1 cup dry bread crumbs -- unseasoned
1/3 cup grated parmesan cheese
2 tsp. dried basil
4 egg whites
1/2 teaspoon salt
2 medium eggplants -- about 2 pounds, unpeeled, each cut crosswise into 8 slices
vegetable cooking spray -- orolive oil spray
3 cups low-fat spaghetti sauce
1 cup part skim milk mozzarella cheese -- shredded
2 TBLSP. fresh parsley -- chopped
Procedure


In a shallow bowl, combine bread crumbs, parmesan cheese, and basil. Mix well. In another shallow bowl, lightly beat together egg whites andsalt. Working one at a time, dip eggplant slices into egg whites, then into crumb mixture. Turn to coat both sides with crumbs.

Place slices on 1 large or 2 small baking sheets that have been sprayed with non-stick spray. Spray tops of slices lightly with olive oil cooking spray.

Bake at 400¼F for 15 minutes. Remove eggplant slices from oven, turn them over, and spray again with cooking spray. Return to oven and bake for 15 more minutes.

To assemble casserole, spoon 1 cup pasta sauce over bottom of 9 x 13 inch baking dish.
Top with 1/2 eggplant slices. Spoon another 1 cup sauce over eggplant, followed by 1/2 mozzarella. Repeat layering with remaining eggplant slices, sauce, and mozzarella.

Sprinkle parsley over top. Return to oven and bake, uncovered, for 20 minutes, until cheese is completely melted and sauce is bubbly. Serve immediately!

THIS IS ABSOLUTELY MARVELOUS.
8 SERVINGS
3 PTS PER SERVING(WORTH EVERY ONE OF THEM)

1 BOX SF LEMON JELLO (SMALL BOX)
3/4 CUP BOILING WATER
1 CUP FAT FREE OR LOW FAT COTTAGE CHEESE(GOOD WITH EITHER)
1 PKG LIGHT OR FAT FREE CREAM CHEESE(GOOD WITH EITHER)
1 TUB(8OZ) WHIPPED TOPPING LOW FAT OR FAT FREE.
1 REDUCED FAT PREPARED GRAHAM CRACKER PIE CRUST

1.DISSOLVE THE JELLO IN THE 3/4 CUP OF BOILING WATER
STIR UNTIL COMPLETLEY DISSOLVED AND LET COOL FIVE MINUTES.

2. PLACE THE DISOLVED JELLO, COTTAGE CHEESE AND CREAM CHEESE IN BLENDER AND BLEND UNTIL THOUROUGHLY COMBINED. PULSE A FEW TIMES MAKING SURE IT IS COMBINED,SCRAPING DOWN THE SIDES OF THE BLENDER.(TURN BLENDER OFF AS NOT TO GET SPOON OR SPATULA CAUGHT IN THE BLADES.)

3. PUT INTO A MEDIUM TO LARGE BOWL AND FOLD IN THE WHIPPED
TOPPING MAKING SURE IT IS COMBINED THOUROUGHLY. THEN PUT INTO THE PREPARED GRAHAM CRACKER CRUST AND REFRIGERATE UNITL SET. THIS IS REALLY, REALLY GREAT!!!

4. CUT INTO EIGHT EQUAL SERVINGS AND ENJOY. COULD ADD STRAWBERRIES OR CHERRIES TO TOP BUT YOU WOULD HAVE TO FIGURE THE EXTRA PTS. WE LIKE IT JUST AS IT IS!

Chocolate Banana Flaxmeal Muffins - 12 Muffins

1 1/2 cups all purpose flour
1 tsp baking powder
1 tsp baking soda
4 tbls cooking cocoa
2 tbls flaxmeal
1/2 tsp salt
3 large bananas, mashed
3/4 cup white sugar
1 egg
1/3 cup butter, melted

1. Preheat oven to 350 degrees. Coat muffin pans w/ non stick spray or use paper liners. Sift together the first six (6) ingredients; set aside.

2. Combine the last four (4) ingredients in a large bowl. Fold into the flour mixture and mix until smooth. Divide equally amongst muffin pans.

3. Bake for 25 - 30 minutes. Muffins will spring back when lighted tapped.


POINTS PER MUFFIN: 3.75

Deep-Dish Pizza Casserole 6 pts
From WW 5-ingredient 15-minute Cookbook~

1 lb ground round
1 15-oz can Italian-Style Tomato Sauce (I use spaghetti sauce in a jar)
Cooking Spray
1 10-oz can refrigerated pizza crust dough
1-1/2 c. (6 oz) preshredded part-skim mozzarella cheese

1) Preheat Oven to 425.
2) Cook meat in nonstick skillet over medium-high heat until browned, stirring until it crumbls. Drain, if necessary, and return to skillet. Add tomato sauce, and cook until heated.
3) While meat cooks, coat a 13x9 baking dish with cooking spray. Unroll pizza crust dough and press into bottom and halfway up sides of baking dish. Top bottom of pizza crust with meat mixture
4) Bake uncovered at 425 for 12 minutes. Top with cheese, and bake 5 minutes longer or until crust is browned and cheese melts. Cool 5 minutes before serving. Yield 6 servings

DOES ANYONE HAVE...?

Would anyone happen to have a WW recipe for a sausage roll? My leader handed it out during a meeting long ago and it was delicious. You could have (2) 1" slices for very few points and it was great for breakfast. I think it used refrigerated dough, turkey sausage, mozzarella, provolone, garlic powder and margarine. You would roll out the dough, brush the margarine and garlic powder on, crumble the sausage, sprinkle with the cheeses, then roll up and pinch the ends and bake. It was a long roll and then you would cut it into 1" slices. It was so good.

Slow Cooker Chicken Taco Stew


Ingredients

1 onion, chopped
1 16-oz can black beans
1 16-oz can kidney beans
1 16-oz can corn (drained)
1 8-oz can tomato sauce
2 14.5-oz cans diced tomatoes w/chilies
1 1.25-oz packet taco seasoning
1-2 boneless skinless chicken breasts

Nutritional Info


Fat: 0.8g Carbohydrates: 17.9g Calories:115.8 Protein: 7.8g


Mix everything together in a slow cooker except chicken. Lay chicken on top
and cover. Cook on low for 6-8 hours or on high for 3-4 hours. 30 minutes
before serving, remove chicken and shred. Return chicken to slow cooker and stir
in. This is good eaten with cheese, sour cream, or tortilla chips.

Number of Servings: 14

Ingredients

* 1 can Campbells French onion soup - 1 can
* 1 1/2 pounds raw extra lean ground beef
* 1/2 cup dried bread crumbs
* 1 egg
* 1/4 cup ketchup
* 2 tsp Worcestershire sauce
* 1 Tbsp all-purpose flour
* 1/8 tsp black pepper
* 1/2 teaspoon mustard powder
* 1/4 cup water
* 1 cup mushroom(s)

Instructions

In a large bowl, mix together 1/3 cup condensed French onion soup with ground beef, bread crumbs, egg, salt and black pepper.

Shape into 6 oval patties.

In a large skillet over medium-high heat, brown both sides of patties. Cook mushrooms at the same time.

Pour off excess fat.

In a small bowl, blend flour and remaining soup until smooth.
Mix in ketchup, water, Worcestershire sauce and mustard powder.

Pour over meat in skillet.

Cover, and cook for 20 minutes, stirring occasionally.

Ingredients

* 1 large head cauliflower
* 1 Tbsp Filippo Berio Extra virgin olive oil
* 1 small onion(s)
* 1/4 tsp table salt
* 2 cup broth, any type
* 2 cup water
* 1/4 cup reduced-fat sour cream
* 1/4 tsp ground nutmeg

Instructions

SOUR CREAM IS 1/4 POINT PER SERVING REMAINDER OF RECIPE IS CORE
no points if you use fat free sour cream Cut Cauliflower into florets and slice stems into 1/4 inch pieces.
Heat oil in a heavy-bottomed saucepan over medium-high heat.
Add sliced onion and cook until sofened, stirring occasionally, about 5 minutes.
Add cauliflower and 1/2 teaspoon of salt; cover and cook for 5 minutes
Add liquid, cover, bring to a simmer, and cook until cauliflower is tender, about 15 minutes.
Puree vegetables and cooking liquid in a blender or food processer until smooth.
Return to saucepan and whisk in sour cream and nutmeg.
Season with salt and pepper to taste.

INSTRUCTIONS

10 oz spinach, baby leaves
2 medium carrot(s), chopped
2 medium stalk celery, chopped
1 large onion(s), chopped
1 medium garlic clove(s), minced
4 cup vegetable broth
28 oz canned diced tomatoes
2 piece bay leaf
1 Tbsp dried basil
1 tsp dried oregano
1/2 tsp red pepper flakes, crushed


Place all ingredients in a slow cooker; cover and cook on high power for 5 hours. Remove bay leaves, stir and serve. Yields about 1 cup per serving.

Turkey Enchilada Pie
POINTS: 4


1 sprays cooking spray
3/4 pound lean ground turkey
1 medium onion(s), chopped
1 tsp chili powder
3 Tbsp all-purpose flour
1 cup fat-free skim milk
4 oz canned jalapeno peppers, drained and chopped
1/2 tsp ground cumin
3 large burrito-size wheat flour tortilla(s)
3 cup tomato(es), chopped
10 Tbsp low-fat shredded cheddar cheese


Preheat oven to 350°F. Coat a large skillet with cooking spray. Heat skillet over medium heat. Place turkey, onion and chili powder in skillet and cook until turkey is browned, stirring occasionally to break up meat, about 8 minutes. Remove turkey mixture from skillet and set aside.


Place skillet over medium-high heat and add flour. Gradually add milk, stirring with a whisk until blended. Bring to a boil and then reduce heat to medium; simmer until thickened, about 2 minutes.


Remove skillet from heat; stir in turkey mixture, jalapenos and cumin.


Wrap tortillas in damp paper towels and microwave on HIGH until softened, about 15 seconds. Place 1 tortilla in bottom of a 9-inch pie plate. Spread 1/3 of turkey mixture over tortilla. Spoon 1 cup of tomato on top and sprinkle with 4 tablespoons (1/4 cup) of cheese. Repeat layers with remaining ingredients ending up with 2 tablespoons of cheese.


Cover pie plate with aluminum foil and cook until cheese melts and filling is warmed through, about 15 minutes. Let stand, covered, 2 minutes before cutting into 6 wedges.

wow, just stopped by to see what this thread was all about and I saw A LOT of my WW friends here. hi guys. Enjoyed looking at the recipes and I will try some of them. IF any of you like salmon patties (canned) let me know and I will post a great salmon patty recipe that I tried from one of the WW cookbooks that I got at the meeting 2 weeks ago. It's called Wasabi Salmon Pattie's.

Looking for an old WW recipe....

This recipe was probably from the mid 80's. I know it used cottage cheese, chopped green pepper, onion, maybe bread crumbs and tuna? Not sure, but it was made into patties and baked. They were soooooo good! I have searched all over the internet and can't find it. I'm not even sure what WW plan it was in - Flex, Quick Start, etc. etc.

Does anybody know what I'm talking about?

Hi! And Help

Wow! Is this place ever a great source of recipes! I just tried the Meatloaf Muffins from the first page and they're fantastic! I'm taking the plunge and doing WW with a friend and our respective moms. Time to slim down--again.

I have absolutely no idea if any of you will have this recipe but I'm hoping someone might know it or know where I can look. It's a meatloaf recipe that uses cauliflower in place of the oatmeal or rice normally used. My mom used to make it way back when she was on WW in the 80s. You could have 1/4 of one loaf as a serving but mom used to make two loafs and you'd have half a loaf as a serving. I can't imagine the points would be too high now.

I'll gather up some of the recipes I used the last time I did this and put them up. I had a meat crust pizza that was really yummy.
