Didn't weigh today cause I had a breakfast meeting first thing. Did good...only had eggs and bacon and that was good, cause the hash browns at this place are to-die-for! No time for lunch, so I am starving...gotta get some dinner going...I think fish and asparagus. SAM's had ribeye steaks on sale...they were grilling it outside for the samples...OMG...was it good. We got some, but it is too cold and rainy to grill...for a wuss like me at least.

Diana - Oh maker of gorgeous cakes...Where are you!

I think I may grill fish tonight!! My mom picked me up a case of catfish fillets and I really like it grilled with some lemon!! Not like Its gonna do me any good!! I ate bad again today!! I wonder if tootsie rolls count if you chew and spit???

Tommie-hope you didn't get into any trouble at that "toy" party (did you know those parties are illegal in some places!!! I saw a news story about that last year...they have to call the "educational marital aids" or something like that to have the parties! Can all you teachers out there imagine that "class"

Mary-sooooo glad your new deal is working...seems like you will soon be announcing Onederland....

Myamara & Kim--WTG on the losses. And those who had a "bad" weekend, oh well, that's what Mondays are for...back to work, and back to watching what you eat (which is why we don't particularly like Mondays, right?)

Kathy-so sorry you had cold & drizzly...I just talked to my brother in Minnesota--just north of Minneapolis--he said they had like 12 inches of cold wet snow over the weekend Hope that missed you...sending you some virtual Spring!

Shala-Kathy's right, OceanSpray makes a sugar-free cranberry juice--I used it last year when I had a similar problem (then I used the leftovers to make some loverly adult beverages with some vodka I just happened to have around)

My weigh in was Saturday, down another couple of pounds, so now just have 3 lbs to make my May vacation goal (course I have a whole lot more to lose after that, but at least I'll be more comfortable on vacation!)

Hope everyone has a great week...I will be very busy the next couple of weeks (the weddings & graduation invites have been coming in, plus getting ready for vacation, and moving daughter back home from college for the summer...so may not have much time to post! Why does everything happen in the Spring!

Holy SNAP!!! I coulda went to jail for more than my Drinking??? CRAP!! I can just see me explaining that one!!! hehehe...I did get educated!!! She showed me more potions and notions then I even knew they made!!! My sis'nlaws nipples are still on fire!!!

Okay ladies... I ran across this recipe and it sounded so good I just had to pass it on. Comments are the author's.

Hearty Artisan Bread (Focaccia/Ciabatta/Pizza Crust)

I can't say enough good things about this bread which is so easy to make! It truly is a low carb taste miracle compared to any other bread recipe out there. This recipe requires no yeast and tastes like a focaccia or a ciabatta or a hearty artisan style bread. It tastes and smells fabulous straight out of the oven and it reheats well for great deli sandwiches. It makes great pizza. It is great with soups. It is great toasted and nuked.

This is a recipe developed by Sherrie, but I tweaked two minor things. Low carbers are falling all over themselves about this recipe. You can make it in a smaller pan for a thicker interior type slice. I used the jelly roll pan (a cookie type sheet with a one inch rim all the way around) measuring 12 x 18, because I wanted to get my mouth around the slices in a big sandwich. I also wanted to use part of it for pizza. You can also make this in a 9 x 13 cake pan; cut it into 6 sections, then slice each section in half to reveal two slices of bread - one side of each will have a soft interior. This is great for sopping up mayonnaise and spreads. Store this bread in a bag in the refrigerator.

You can alter this bread by sprinkling yummy things on top before you bake (cheeses, artichoke hearts, etc.) You can make the base and then apply pizza toppings on it and broil it for delicious great pizza.

Artisan Flat Bread (Ciabatta/Foccacia)
Preheat oven to 350

8 oz cream cheese
4 eggs
1/2 C almond flour
1/4 C Parmesan cheese
3/4 C Atkins bake mix (I use the home made mix)
1 tsp. fresh minced garlic
Salt and pepper (this can get salty, so watch it - 1 tsp. may be too much in the salt area)
1 tsp. baking powder

1 C shredded Italian cheeses (I use pre-shredded from the store)

2 tsp. assorted herbs (I used basil, oregano, and garlic)
1 TBS olive oil

Mix everything except the last 3 ingredients in the food processor until smooth. If you don't have a food processor, make sure all ingredients are at room temperature and mix with a hand blender or an electric mixer. Once batter is smooth, add the Italian cheeses and stir by hand.

Pour the mixture onto a jelly roll pan lined with parchment and spread from edge to edge evenly with a spatula - it is sticky and this will take some time.
Sprinkle with the herbs.

Bake until nicely browned on top (my oven is about 30 minutes, but watch it from 20 minutes on.) Remove from oven and brush with the olive oil. Pop out of pan and cool on a wire racks.

12 servings. Per serving: Cals 192, Fat: 16, Carbs: 3, Fiber: 1, Net Carbs 2, Protein: 9

Hi Lovely Losing Ladies!!!!!!

OK sooooooo my son's bday rocked!!! We had so much fun at Disneyland.......he is sucha daredevil we rode all the big rides. The park was not crowded, so we were walking off the ride and right back on to it. All 3 of my boys went and my youngest (b-day boy) said it was the greatest day of his life. Seeing him in that environment, so happy and bright....I almost forgot the autism. He was just so "on his game" that day.........he has come so far!!

Saturday was his big party and the pinata was great and the moonbounce was fun, but it was the cotton candy machine that was the big hit!

As for me, my eating is a mess, I am back up tp 198..........Can you freakin believe that? I was 190 and now 198. Its true, I have been eating everything..... a party in my mouth the last two weeks........STOPS today!!

I am very clean today

Big ole steak for dinner!

I pigged out on Tilapia fried in butter, tossed salad and roasted aparagus last night! Then I finished it off with some SF chocolate! Can you believe a serving of asparagus is 5 spears?! WTH...I can eat the whole pound myself!

Tonight is the last night for our bowling league, kind of a fun night. The owner always sets out about a gazillion pizzas! Not making any promises here...pizza and beer...my favorite combo...

Hey all y'all! I haven't read up on the posts and just want to take a minute to say hi. Welcome to any noobs and Congrats to any losers!

I was SO TIRED most of the weekend..all the driving and walking around at the Rolex. Had absolutely GORGEOUS weather down in Lexington and my face, neck, and chest are GLOWING red I got some sort of sun poisoning (might be the glaucoma meds interacting...have to read on that) and I have a bumpy rash on all of my exposed skin But it was fun.

The good weather left when we did. It was cold in Kentucky yesterday as we drove home and it is colder back at home...only in the 30's!

Anywho, as far as diet...well...I didn't GAIN anything. I think I may have lost 1/2 a pound but am not going to claim it yet. My carb intake was probably 2-4 times what it usually is and I had worse blood sugars and needed more insulin I drank too much beer...my food choices were great, except for a couple croutons and some pretzels (with the beer). There is a microbrew that sets up at Rolex and I just LOVE their drafts...Kentucky Ale and their Kentucky Bourbon Ale....mmmmhmmmm. It's the only place and time I can get it so you gotta do what you gotta do. I have discovered that I am an embarrassingly cheap drunk now, though! We toured the Wild Turkey distillery and that was cool...a tiny taste of Racehorse pie and a jigger of moonshine they let us try (another not-so-good outing for LC!). On the way home we stopped by the Ohio-Michigan line and visited my Dad at the cemetary, then had a early supper with my aunt and uncle. Which was a lot of fun and involved more beer (I could have LC'd but Killian's was coming by the pitcher...so wham-bam, 35 carbs like THAT).

My great start in losing weight has slowed to like a pound a week! Waaah! I started the WOE on March 30, so.....I guess 16 and maybe 1/2 pounds isn't so bad for the month. Maybe I can get it a little better (17 or dare I say, 18???) in the next couple days.

Soooooo....today, back on the wagon. Lousy blood sugar numbers and time to go make the damn eggs and bacon My little dogs were so happy when we got home, and little Zeke (the blond pom) is just clinging to me. He says he wants me to cook breakfast. So gotta boogie!

I have to read and catch up on everyone's news later...dogs and horses to cook for here! Have a great day, all you guys!

Good morning ladies! It's so cold here this morning and of course rainy. I couldn't get back on to post yesterday, got busy w/customers and had employees coming in & out! Okay- I'm not going to have nuts or diet pop today. I didn't realize nuts could be stallers.

Tommie- I read your posts from yesterday thanks for the great laugh Just keep em comin'!!

Jen- I am so glad you had a great time at disneyland, that brightend my morning! You know how to throw a B-day Party Sorry to hear on your gain Don't worry, you can take it right back off. Don't give up!!

OKAY LADIES I HAVE UNTIL MAY 23RD TO BUY A FREAKIN' BATHING SUIT. I WOULD LIKE MY WAIST TO BE AT LEAST A 28 AND DOWN 13 POUNDS. I NEED YOU GUYS TO KICK MY BUTT AND GET ME BACK ON TRACK! I did exercise this morning at 5:30 could only do about 10 min. of aerobics, thought I was going to run out of breath! But I can build that up every morning, right? 41 more days to MAUI!!!


Well so far I am having a good morning, gonna get off here and work for a while - when was ING coming back? Diana don't you forget about us today

Good Morning Ladies!!!

Nothing to report today!! Well nothing to brag about unless you count that dang home made coconut pie that I ate half of last night!!! Yep...I'm not real happy with myself today!! That dang coconut pie thing is killing me!!! I can't believe I'm so dang hooked on those things!! That use to be my least favorite pie!! WTH??

I'm really thinking I'm gonna change my way of eating!!! I'm thinking of buying me a small notebook and calorie counter and trying to count calories for a few months!! I really need to add in some Fruits and grains!! I'm thinking of keeping my calories between 1000 and 1200. I done that before and lost weight, I think this might be what I need to get outta this funk!!

I won't be leaving the boards though!! I couldn't live without you guys!! And who knows....I may be back on Atkins tomorrow!! I wake up in a NEW world everyday!!!
