Cleo,
My sisters used to say I have Bob Hope ski slope nose...now I show it off every chance I get. They both had their day in high school.

Anyway, Cleo you are so sweet..that picture was taken last year in Hawaii..after losing some weight on dare I say it...so...I am loving this lowcarb life. My energy is very high and I am actively trying to convert everyone to it. There is a lot of resistence. People loves them some carbs, eh? Besides Cleo you look great and inspire me every time I read your blog. I turned my sisters on to your caulipizzas.
Lauren
Great! We can smoke the tortillas and the pizza (referred to as low carb crack) on Low Carb! LOL

Maybe I was going about this all wrong on the meat and martini diet.....

BTW, I just restarted again..(kicking and screaming)

Today was day one, no sugar, starches or breads. Wish me luck.

12. LOW-CARB ITALIAN FOOD MADE FROM CAULIFLOWER?

One of my favorite low-carb bloggers is Cleochatra--aka Jamie VanEaton--because she always comes at life from a slightly "tilted" perspective (kinda like me!) and this group of Italian recipes using cauliflower as the basis for pizza, bread sticks, and even lasagna shows just how creative she can be in the kitchen, too. Hey, don't knock it until you try it and Cleo gives you some pretty amazing instructions about how to do this up right! So grab you some cauliflower and get to cooking up some delicious low-carb Italian foods. And leave a comment at the bottom of the page to cheer her on as she has been chosen as a finalist in the YourHub.com Hit Parade contest. Click here to add to her "hit" totals!

Do be sure to visit Cleo's site to get the great recipes:

Pizza, bread sticks and lasagna from CAULIFLOWER!
Wow these recipes look delicious.... but my question is how do you shred cooked cauliflower? Wouldn't it crumble being so soft?

BTW, Thank you for the clarification. I'm a dork and I don't post off of LCF and ALC (I have enough trouble walking on the treadmill without falling off).

I am humble and appreciative.

7 slices of Pizza?

Hey Cleo...made two big thin pizzas, a pepperoni & cheese and a veggie the other night (I shredded fresh cauliflower and then steamed it). My husband & I loved them, there were 7 pieces left over.

I always make left overs so he can take his lunch to work. I told him to take some pizza this morning. He took the 7 pieces. I figured two lunches worth for him. He ate each and every one of them for lunch today and he said they were even better heated back up....of course I wouldn't know....
Gonna have to make a cauli. run tomorrow.

jos-- I am glad you like the pizza! I need to buy more cauli as well. I don't have it for the normal stuff--like plain cauliflower.

I cook it in the microwave for 8 minutes (a 16 ounce bag) (with 2 Tbsp water) and then let it rest (lid off) for about 10 minutes so I don't scald my toopid fingers when I go to grate it.

I use a cheese grater. I measure the cauliflower after it's been cooked and grated.

I hope that helps... and for some weird reason, the cauliflower isn't too soft. I wonder why... O supple, supple vegetable...

2big-- you're so cheeky today. You guys should see her in email, being all cheeky.

use your grater and shred it like cheese and no it doesn't crumble.
Dana Carpender has a fried Cauliflower rice in her first cookbook 500 low carb recipes. if you use frozen you can do it beofre defrosting or even after cooking.

and if you are reall lazy you can dump the cooked cauliflower measured using the water displacement method to 1 cup amount and other crust ingredients in your food processer and mix. then spread the blob thin with a spatula and reduce the heat a little and cook longer to get a nice crust you can pick up.

The veggies cook totally different in the microwave. I used to steam veggies in the microwave, and realized they stay a bit firmer then in some boiling water on the stove.

I like to cook up the frozen stuff and put on a butt load of butter and parm cheese.

I like the mush of the veggies sometimes (broccoli, califlower, and brussel sprouts) so I'll cook them on the stove when I can.
