Finally made this last night... YUMMO!
It is the best pizza substitution I have ever tried (and I've been lo-carbing for years).... It's a keeper!!!! I'll make a bunch of mini's this weekend to pop in the freezer for pizza anytime!!! Better yet - finally cold pizza for breakfast that I could eat with my hands!!!!!! Breakfast doen't get any better than with COLD PIZZA!!! |

Chick peas would make it a falafel-style crust. YUM!!!!!
You could make a tahini-based sauce and put diced tomatoes and feta cheese on it... (I'm gonna faint!) PS - Just had 2 small pieces of "pizza" for breakfast. I'm full and happy! |

I used a scientific scale to weigh the foods while I cooked, but I am willing to stand corrected if someone else has other numerical values. I don't pack food down, so that could account for differences in weights?

I've been just guesstimating it since The bag has 2 cups I just use about half. Oh man, if it comes out good with only half of that I have enough to make another one!!!!!! Thanks emeraldskye!

Usually the 8 oz bags of shredded mozzerella say there are 2 cups in them. I know the old adage is a pint to a pound, but I think the bag measurements are more accurate in this case. 1 cup is 4 oz of shredded cheese.

lol no I told my wife I could only try it once a day cause if it didn't turn out the carbs dont go away and she said " If you think I am eating cauliflour crust your nuts " lol I am in canada so when I go to detroit things are so cheap I buy a lot of everything lol

Cool! I know I had a hard time finding three bags of cauliflower in one store. I brought them all home and then was too tired to cook! LOL The pizza keeps well, so it's just as good the next day!
My kids said the same thing, and then they ate all of my pizza. The good thing is it's pretty quick to make more. Making a real dough with yeast is a lot more time and effort. This is just nuking cauli in the microwave, shredding it (or processing it) and then mixing it with the egg and cheese. It has to be easy, or I couldn't make it. I'm not technical. LOL

I've made many, many LC pizza crusts/dishes. I made this tonight and it was sensational. Very, very good and I could easily pick it up with my hands. This is a keeper.
